Woke up in a super duper mood this morning! Bursting with the joys of Spring so I was. For me, being a Bi-polar sufferer, I have to take days like this by the horns and make the most of them.
I ventured to the Supermarket BY MYSELF!!
And managed to buy a few bits and bobs and pay at the checkout, call in on a friend and get home ALL IN ONE PIECE AND NOTHING BAD HAPPENED!!

You'd be forgiven for thinking I've gone a bit loopy but let me explain. I am prone to bouts of agoraphobia. Some days are OK and some days are just bleeding terrible. Today was a GREAT day for me and me going out by myself is such a HUGE thing for. I am very proud of myself.

Well my whole mission to the supermarket was to buy ingredients to bake a cake so this is then what I set about doing.
I've just recently turned Vegan (in my second month) and baking is something I've always loved, enjoyed and prided myself on. I am a baking Queen!
I have my mum to thank for that - she taught me everything I know!
However, baking vegan styley is proving to be somewhat of a challenge for me ( I like challenges). I have tried 2 Vegan Carrot cakes - the first was disgusting and got fed to the birds (I hope they were alright!) The second one was OK - I'd tweak it a little different next time but at least my OH and son gobbled it all up and enjoyed it. And today I baked a Chocolate Cake.
The taste is divine and out of this world it just looked like a sloppy mess.
So, in true thrifty style I slathered on some chocolate frosting and it almost looked good enough to eat!!

I'm gonna persevere with this Vegan cake malarky though, managed to get a recipe off Spark which had a lot of ratings so that's always a good start.

I'll be sure to keep you posted.
And don't worry about me eating all these baked goodies - I bake for pleasure (I find it extremely theraputic) and apart from the wee taste from a professional point of view - my family eat everything - I don't get a look in.

    What a huge accomplishment and a totally fun time! Isn't it great having those days where you feel like you can can do anything?
