A NEW THIN ME

emoticonhi friends, it is so terribly cold here in Illinois. The sun is gone and everything is grey outside. So i'm grounded and stuck in the house. Sooo, i've been a bad girl. You know what I mean! But i'm pleased to say I haven't gained anymore weight. Lucky huh? emoticonWell Im not going to push it, I intend to look great this summer. emoticon emoticon

    Is it just me, or is it twice as hard to lose weight in cold weather? Seems like it would be easier, what with all the shivering and such.

O.K. IT'S TIME TO GET DOWN TO BUSINESS. CHRISTMAS WAS MY BIRTHDAY, AND IT IS MY NEW BIRTH. I INTEND TO LOSE AT LEAST THREE POUNDS A MONTH. I WANT TO GOOD AND FEEL HEALTHY BY THIS SUMMER.

    Here Here! Time to definitely get back on track. I will be doing that as well - I will be taking up Yoga with my (annoyingly fit and slim) friend in the New Year. I plan to wear a bathing suit this summer and blow my fiance away.

    I agree with your comment about getting down to business. I kinda went on a 10 day vacation... Need to refocus and get back on track. I guess we all get sidetracked at time. I real goal is to get back on track. Hoping your 2011 is what you are hoping it will be. Happy New Year. emoticon

New therapy

I bought a WII game so I can exercise my arms and legs. I can swing my arms as if playing tennis and use my arms and legs as if bowling. I'll get a good sweat from doing this. However, I'll make sure I won't over do this. emoticon emoticon

  


Discharged from hospital

It's good to be home from the hospital. Now I have to start all over again watching what I eat.
The only thing is I get very tired standing in the kitchen when preparing my meals. I'm so tired of eating rabbit food. I think I will cook a pot of Black eyed peas and eat it for a a few dinners. Perhaps oatmeal for breakfast. If you have another suggestion please let me know. emoticon

    I made Chef Meg's Garden Harvest soup yesterday. Makes 8 2 cup servings and is pretty good. Can use for lunch and dinner, only 164 calories (I think) per serving. It did take a while to cut everything up, but if you do it in the order that it cooks, and place each group of veggies together, you could cut for awhile and rest for awhile. The recipe lends itself to whatever veggies you have on hand and also easy one to add chicken or turkey too.

My go to meal on days when nothing else sounds good is: a sweet potato (eat half save half for later) nuked in the microwave 5 minutes; a can of seasoned black beans heated use 1/2 cup; add 1/2 cup brown rice (I cook 6 cups at a time and freeze in 1/2 cup baggies) 2T reduced sour cream and .13c salsa...really one of my favorites. Takes 5 minutes total, other than the rice, and you have enough for two meals.

What's for breakfast?

    I know I am strange but I eat the same thing every morning - a Arnold's Whole Wheat Thin with a thin spread of peanut butter, a sliced banana and a drizzle of honey. I eat a small bowl of multigrain oatmeal with it. It is very filling and I love it.

I don't get bored easily.

Glad you are home from the hospital and that you are feeling better.

    I really like the Jimmy Dean delights. There are turkey sausage and turkey bacon bowls and sandwiches that are low cal, and low fat. Great for when you are in a hurry as they only take a few minutes in the micro.

    I would be happy as a clam eating the same thing every day. I just get tired of cooking it.

One thing I like for breakfast is a tortilla flled with scrambled eggs, black beans, salsa, and a little cheese.

For lunch my favorite is to cut chicken breasts into chunks, saute them in a little canola or olive oil along with onions and peppers. When they are cooked through I pile on toppings, cover, and heat through. Here are a couple of variations:
Mexican: top with black beans, shoepeg corn, salsa, and a little cheese. I also add a little cumin to the chicken as it cooks.
Italian: top with diced canned tomatoes, canneloni beans, and mozarella cheese. Use a little Italian seasoning.
Before serving you may want to turn the heat up and reduce the amount of liquid in the skillet - it will depend on what you added.
I love this because it is a one dish meal - just add a salad and you're done. And there are probably a thousand ways you could do it.
Life should never be boring and neither should your food!
