Brown Bananas, No Eggs...What to Make? Strawberry Banana Pancakes!

I had 2 brown bananas sitting on my counter and the thought crossed my mind...I wonder if I could make Banana Pancakes for One? But, I didn't have any eggs. Actually if I just went out to our hen house, I could find a fresh egg or two...but wanted to make lunch now as I need to leave soon for work.

Off to the internet for ideas, ingredients, proportions of dry ingredients to wet.
Looking for a recipe WITHOUT eggs.

I found one and modified it to create:

Strawberry Banana Pancakes for One

1/3 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp pure vanilla extract
1 mashed banana
1/4 cup low fat milk
dash salt

Mix the dry ingredients together. In a separate bowl, mash the banana and then add the other liquid ingredients. Stir the dry into the wet.
Fry pancakes in skillet/griddle with no-stick spray.

I got 6 little pancakes out of this batter.

I topped them with 2 Tablespoons of Polaner All Fruit with Fiber Strawberry Spreadable Fruit @ 35 calories a Tablespoon.

* I logged each ingredient into my nutrition tracker and it was 356 calories including the fruit spread.

They were a good way to satisfy a pancake craving with built-in portion control.

New Recipe: Persian Tomato & Cucumber Salad

I had some green pepper, cucumber and tomatoes that I wanted to use up tonight in a salad of some sort. I went searching for a recipe and found this one: Persian Tomato & Cucmber Salad. The recipe didn't include green bell pepper, but I added that. I have seen Egyptian Salad recipes similar to this that include peppers - so that is why I added them.

    I will try this tomorrow: I have my own garden tomatoes and cucumbers and I will add green pepper as you did. I like the idea of red onion to give more color perhaps. Sounds sooooo good Maria. Thanks for sharing.

    Love this stuff. In the mideast it is considered a breakfast food often served with labneh (drain yogurt over night and it forms a soft cheese).

Interesting twists are additions of fresh figs, tangerines (in winter) and mint/sorrel.

Leftovers mix well with quinoa.

New Recipe: Tuna Artichoke Melts

Today I tried a new tuna melt recipe.
I got it from the Taste of Home website.
Here is a link to the original recipe:

According to Taste of Home ~ there is 335 calories in a serving of 2 English Muffin halves.

I however, made mine own version:

I used:

2 – 5 ounce cans of albacore tuna

2/3 cup chopped canned artichokes (that were drained)

¼ cup olive oil mayonnaise

½ cup shredded white Mexican cheese

A sprinkle of Tajin Mexican seasoning (which has lime & seasonings in it - the original recipe called for lemon pepper & oregano)

Mixed that all together – measured out ½ cup and spread that on 2 English Muffin halves and topped each with 1 Tablespoon of the shredded white Mexican cheese. I then sprinkled some paprika on top of the cheese.

Broiled with racks left as is for 5-7 minutes.

The remaining 1-½ cups of tuna salad is equal to 3 more servings. I refrigerated that for use later.

I haven't calculated the calories in my version yet.

They were very good! If you like artichoke dip and are a tuna melt eater, you might enjoy these.

And now, I have 3 more lunches ready to go for this week.

    Boy, did this come along at the right time! I am so far off track, between the work with the books and my sore knees!! I have gained back so much of what I had lost and just can't seem to find the time, energy or will power to get back to the plan!! Valentine's Day = Food? Food=Love???

Why is it that I associate every 'holiday' or 'special event' with food?
Food = Love.
Somewhere I got that message.
So tonight I am making a nice dinner for my husband and myself to have at home.
I will be making "Spicy Sauteed Shrimp with Garlic" on Jasmine Rice.
I make it with mixed stir-fry vegetables. I have shared the recipe here before. It's very good and very low in calories and fat.

I also mixed up a quick salad recipe that I got years ago from my mother-in-law. She always called it the '4-H Salad' as she would make it for 4-H events.

It's very easy to make and can be made healthier by what you choose to put into it.

Here's the recipe:

Famous 4-H Salad
8 ounces of Cottage Cheese (pick the % of fat: fat free, 1%, 2% or 4% milk fat)
8 ounces of Cool Whip or Whipped Topping, thawed (again you pick fat free, low fat or regular)
1 small box of orange Jello or gelatin (or any other flavor - can use sugar-free version)
1 can of mandarin oranges, drained (or any other canned fruit, drained)
I am using drained, canned, pineapple tidbits.
Mix all of these ingredients together and chill for several hours before serving.

I also made a simple Chocolate Mousse for dessert. No recipe ~ just the mix made with low fat milk.

Food can still mean Love - I just need to make healthier choices and watch my portion size.
