Thank you for believing in me
when I found it difficult

Homemade applesauce...a different recipe.

Friday afternoon I picked apples. I haven't been apple picking in over 15 years. It was time! I filled my bag in no time; apples are plentiful this year after so much summer rain.

This recipe only takes 45 min. to make. The lemon juice brings out the flavor of the apples and balances the sweetness.

Homemade Applesauce

3-4 bls. of peeled, cored, and quartered apples. (Use a good cooking apple.)
4 strips of lemon peel
Juice of 1 lemon (3-4 Tbsp.)
3 inches of cinnamon stick
1/4 c. Splenda brown sugar
1/4 c. Splenda (I use less as I like it less sweet)
1 c. water

Put all ingredients into a lart pot. Cover. Bring to a boil. Lower heat and simmer for 20-30 min.

Remove from heat. Remove cinnamon sticks and lemon peels.

Mash with potato masher. (I like chunky applesauce so omit this step.)

    This sounds delicous! I made similar apple sauce or cooked apples last winter in the crockpot for 3 hours on low. When cooled I put it in freezer containers for later desserts. Yummm I'm glad i learned of this and it makes the house smell heavenly when it is cooking.

A Small Request

A small request. Just one line...

Dear God, I pray for the cure of cancer. Amen


My grandfather, uncle, and 2 aunts died from cancer. My mom was a cancer survivor for 10 years. This is near and dear to my heart. I hope you will be one of the 7% who passes this along.

    I pray for the cure to all cancer. A dear friend lost her daughter to breast cancer. My mom survived breast cancer. Another friend's mother has breast cancer. It is a devastating disease.

    I'll join you in that prayer. I lost my mother almost three years ago (in Oct.) to pancreatic cancer. She had survived breast cancer for three years before that. He father died of cancer as well (same month, ironically).

    Amen! My husband has just been diagnosed with lung cancer and I have had 3 aunts, 2 uncles, a cousin's husband and my mother and mother-in-law and grandmother and my best friend from school all stricken with different cancers. Some survived, some did not. It is such an awful disease. It is such a helpless feeling to have someone you love have to go through that and not be able to do anything to help them get better. I will pass this along to my "survivors" and we will all send up prayers for the cure!

    I have prayed this for many years. Lost my grandpa and his sister, and my best friend's father. Even my cat died of lung cancer last year (in a non smoking house).
I am part of an astrology group and they are actually trying to chart cancer. If you have the birth times and dates of your loved ones, it would help the study greatly. You don't have to give their names if you don't want, just what sex they are and what kind of cancer they had.

At Last...

I've been dealing with a kidney infection for the past 18 months. My nephrologist is wonderful and has been trying to get to the bottom of this. After months of medicine changes, numerous blood tests, etc., I finally had a kidney biopsy last December. It showed that I did indeed had a different type of kidney infection. There is no apparent cause for it, but for 30% of people who have these infections, the infection just disappear after 12 months. If they don't clear up, then a patient has to take mega doses of steroids, etc. I've been stressed just thinking about that possibility as 30% wasn't very high.

My 12 months were up this past March. Tests results showed some improvement, but not nearly enough. My meds were changed again, more testing. This has been an on-going process for me for the past 6 months. My doctor and I worked diligently, hoping that this infection would disappear.

It's now 18 months later........and........at last this infection has cleared up! All of my tests were very good. Thank you God for answered prayers!

Now I am able to focus even more on my weight loss. I know some of the meds make it impossible for me to lose more than a few pounds a month, but as long as I continue to see those numbers drop, I'll be happy :)

    Humm - funny it cleared up after eating numerous servings of "The Breakfast of Champions"! Seriously, I am happy all is well. The lbs will come off in time especially now that a big weight has been lifted.

    How wonderful to be infection-free at last!! It is so difficult dealing not only with the infection but all the uncertainty that goes along with it. My mother had nephritis for years during my childhood so know how hard it is dealing with kidney problems. Sounds like you have a thorough and caring doctor. Thanks for the happy goodie on my spark page. It was so neat to hear from you!!

    I am so glad you are doing better....We have a wonderful kidney doctor here at my hospital he travels all over doing lectures and I have seen him save so many people. I am so glad you found a good doctor. emoticon

    Infection free, how marvelous. Sometimes time is all a cure needs. It's not easy living with something like that, but I truly admire your upbeat attitude and the motivation and kind words of help you give to your spark friends.

    I am so happy for you!!!! I am glad the infection is gone and hopefully you will be able to get off the steriods. I took steriods for 4 years so know how terribly difficult it is to lose ANY weight while on them. So for you to lose and not gain is fabulous!! You can drop the steriods now??? emoticon emoticon
