Isn't it funny how some people don't realize they're special at all? They're thoughtful without even thinking about it. They're always right there when you call. They share not expecting anything in return and always seem richer for what they give. Isn't it great how those people can teach us so much about living?!

Here it is! (Crunchy Chicken Salad)

Here's my recipe for chicken salad. Hope those who asked for it will give it a try!

Crunchy Chicken Salad

1 cup cooked, cubed chicken breast
2 stalks celery, chopped
2 Granny Smith apples, peeled & cubed
1/4 cup fat free sour cream
1/4 cup fat free mayonnaise
2 Tbsp. chopped fresh parsley
1 Tbsp. honey (optional)
1 Tbsp. mustard
black pepper to taste

In a large bowl, combine the chicken, celery, and apples.
In a small bowl, mix together sour cream, mayonnaise, lemon juice, mustard & honey. Pour over chicken mixture and toss together. Refrigerate until chilled.

Grapenut Pudding

I've had several requests for my Grapenut Pudding recipe. I actually have 2 that I'll share. One is quick & easy and great for summer. The other is very good, too, but takes more time.

If you try them, give me some feedback, please :)


QUICK GRAPENUT PUDDING
1 pkg. instant sugar free vanilla pudding
1 sm. Cool Whip
1 c. Grapenuts

Mix pudding as directed on package. Stir in Cool Whip and Grapenuts.
Serves 6-8.
(Grapenuts will soften; the longer it sits, the softer they get. Let set at least overnight...good luck with that! lol)


GRAPENUT CUSTARD

3 c. skim milk (scalded)
4 eggs
4 pkgs. Sweet and Low (or what ever sweetener you prefer)
2 tsp. vanilla
1/2 c. Grapenuts
1 tsp. nutmeg

Beat eggs. Add scalded milk slowly. Add sweet and low, vanilla, and grapenut cereal. Mix together. Pour into greased loaf pan. Top with nutmeg. Bake in oven at 350 degrees for 45 minutes. Chill and serve

    I am not good in cooking, never try to make pudding. So I will try second one. I just do not have instant sugar free vanilla pudding and do not know what is Cool Whip . LOL, I wish that PUDDING . Can someone e-mail it to me, please?

    Sounds good. Reminds me of a chocolate pie I like to make with instant chocolate pudding, cool whip and oreo pie crust.

    Made the quick one 2X in 2 weeks and added the recipe to my tracker (used Fat Free Cool Whip and sprinkled a little nutmeg in) which I counted as 6 (1 cup) servings:

Calories - 126
Fat - .05
Carbs - 37
Sodium - 0
Cholesterol - 0
Protein - 2

I love my new breakfast treat! Thanks Willow49!

    wow willow, i make a "pudding" similar to this using canned pumpkin, but NEVER thought to add grapenuts...i know what we're having for dessert this sunday..thanx for sharing...theresa.

I arose this morning to another very warm and humid day. Ugh. I really didn't want to do any exercises today. It's too hot, it's too humid, I can't breathe well...excuses, excuses.

I gave myself a good talking to and just started in on those exercises, saying I would just do a few. Ha! Once I started I just couldn't stop. I have finished all of my cardio and strength training today. I feel so much better knowing that I accomplished more than I ever imagined I could or would.

I can do it, I did do it! emoticon
