Giving Thanks

For the hay and the corn and the wheat that is reaped,

    emoticonI'm always thankful for having been born an American. My mother's mother was a full blooded Cherokee Indian who lived free in Illinois where the tribe ran a sawmill business. She was born in 1890 and got married at 14 and had my mother in 1908 when she was 18. My grandfather was an Englishman from Wales. I always think about how lucky I was to have my Grandmothers hardy genes as I know she was young and healthy.
I know how it is to have a difficult year. Last year I dealt with my son's Testicular Cancer & his surgery and Chemotherapy, and then my horrible gallbladder mess that caused me to regain 33#. So this year, I spent most of the time just getting that back off. This morning I was 165.2# on the scale and last year in July when I had the gallbladder attack, I was 169# so that is pretty awful that I've gotten no further than that, but regaining is bad. So, I'm just determined in 2011 to get the rest of it off. And I know I will. emoticon

for a little while :) I'm leaving tomorrow morning to travel from upstate NY to GA for my son's wedding on Oct. 30th. Such exciting times! His birthday is Oct. 31 (a trick and treat!), and our 30th wedding anniversary is Nov. 30th. So much happening in such a short time!

I won't be around Sparks much, but will try to check in a few times while gone. See ya when I return home Nov. 6 or 7th.

Double Apple Muffins (80 calories)

Here's a favorite of mine!

DOUBLE APPLE MUFFINS

1 1/2 cups flour
1/4 cup sugar (I use Splenda)
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 egg
3/4 cup skim milk
1/4 cup unsweetened applesauce
3/4 cup shredded apple

In a mixing bowl, beat egg, milk and applesauce. Stir in shredded apple. Add flour, sugar, baking powder and salt all at once. Stir until just moistened. Fill muffin liners/greased muffin tins 3/4 full of batter. Bake at 400 degrees for 20-25 minutes. Makes 12 muffins.

Carbohydrates: 19 grams
Protein: 3 grams
Fat: 1 gram
Saturated fat: trace
Cholesterol: 16mg
Fiber: 1 gram
Sodium: 159 mg
Potassium: 61 mg

Nobby Apple Cake

I had a request for recipes that use some of those apples I picked ;) Here's my son's favorite!

Nobby Apple Cake

3/4 c. sugar (I use Splenda)
1 c. flour
2 T. shortening
1/4 c. molasses
1/2 t. nutmeg
1/2 t. cinnamon
1/2 t. salt
1 t. vanilla
1 t. baking soda
3 c. diced apples
1 egg, beaten
1/4 c. chopped walnuts (optional)

Cream sugar and shortening, add molasses, beaten egg and mix well. Add apples, nuts and vanilla. Combine dry ingredients and add to apple mixture. Spread into a greased 8 or 9 inch pan. Bake at 350 for 35-40 minutes. Serve hot or cold.

    YIPPEE!!! Glad you saw my blog title and gave me a "heads up!" It is indeed a delicious dessert! I have two pear trees that just didn't want to stop bearing, so I've been substituting them in apple recipes (i.e., pear crisp, pear cobbler...and NOW nobby pear cake, thanks to YOU!!!)

I use tart apples..i dont much care for overly sweet--and the tart is a great compliment to the sweet cake!!

Johnny Appleseed (September 26, 1774 March 18, 1845), born John Chapman, was an American pioneer nurseryman who introduced apple trees to large parts of Ohio, Indiana, and Illinois. He became an American legend while still alive, largely because of his kind and generous ways, his great leadership in conservation, and the symbolic importance he attributed to apples.

    Have you ever tried "Apple Smiles?" Take a red apple, cut into quarters. Take two quarters spreading peanut butter on flesh side of each piece. Line up miniature marshmallow onto peanut butter of one slice. Put slices together and you have a red mouth showing white teeth. It is a good way to get kids to eat their fruit but also a lot of fun. emoticon

    What memories this brings back - I always did an apple theme at this time of year when I taught first and second grade! We'd visit an orchard, pick apples, make applesauce and applebutter, read about Johnny, write about our experiences, taste and graph our favorite apples, measure and weigh apples - just about anything I could think of to do with apples! It was always a fun week and was enjoyed by all.
These memories make me miss teaching - but not enough to go back! 35 years was long enough!

    Lovely information about one of my favorite fruits!! My favorite as of late is the honeycrisp apple. It's sweet, crunchy, juicy, and flavorful - just incredible! I like to cut one up and sprinkle on some cinnamon for a sweet treat :) - Sandi emoticon

    Thanks for reminding us that today was Johnny Appleseed's day.
We just refilled our apple drawer in the fridge and I love those Mac's. Being from WA state and growing up around apples made Johnny special to us as children.
