2 month vacation concerns and ideas for continuing to eat healthfully

Im hoping to take a train tour out West next month. Also will be eating with others a lot. So, obviously my main concern is how to maintain my healthy diet.
Im thinking that At others homes, I can eat more of their veggies, and less of their grains and animal products, and see if they want me to cook also.
Other possibilities are that I can just eat smaller portions, taking time to really savor the flavor, and-and this is a difficult and for me- I can not accept offers to have my favorite American foods bought for me to enjoy. (pizza, rich ice creams, all you can eat restarants, etc)
On the train. Im thinking that I can bring my own protein source...example jerkey and canned tuna, and fruits and veggies that dont need cooking.
Any other suggestions?

P.S. Ill let you know how I did un December. emoticon

    Nuts is a good protein source to take along too, plus dried fruit. Thing is, you MUST enjoy yourself, AND do your best not to OVERDO the eating side. Drinking loads of water will stop you being hungry and keep you hydrated too. We just recently had the ROVOS train come through our town. I got to chat to some of the folks doing that train tour.....sounds like a fantastic and relaxed way to holiday.

    That sounds like an amazing journey!

You have great ideas. Personally, I'm all about portion control so I don't feel deprived of my favorite foods. If others are eating a huge pizza, I'm totally comfortable having ONE slice and a big ol' salad to go with it. Bringing healthy foods is also a great idea -- dried fruit is healthy in small amounts, bars, kale chips, etc. Have an amazing trip!!

ideas for quick, easy meals

Im finding that frzen, pre-packaged chicken and fish are helping me a lot when I dont want to cook, combined with veggies, of course.
Also, since Im trying to limit my consumption of animal products, I make up a lb of beans at the begginning of the week, and change up the taste with veggies, salsas y whole grains.
Its been working so far for me, and I love eating this way.

pedometer happiness

Am beginning to use a pedometer...a cheapy one, but somewhat accurate. So far today Im up to 4000 steps. I had no idea.
Ive been more off the wagon than on it the past few months because of health issues in the family, but amd absolutely determined to get in my 15,000 steps ever day. (To not stress eat also would be nice, but then thats another issue.)

    I LOVE my pedometer! I am upset all day if I forget to put it on. It also helps motivate me to get more walking in.

vacation woes, life goes on

Well with the several days I was on vacation, I did fairly well with excercise and not that badly with diet. But I gained 8 lbs water weight which came off within 3 days. My husbands been laid up with a back problem for the last week, many drs visits and much personal attention needed.

But Im now back with excercise, and determined to be healthy.And with not much harm done. In the past this would have thrown me for a loop and I would have been completely sidetracked.

10 KM here I come.

I was soo excited at walking a 5 KM that I am beginning to train for a 10 KM in February. Not only is it longer, but I think it will be even more uphills. So well see about that in December when the route comes out. Im looking forward to it, for the challenge as well as the motivation to keep up with treadmill training. emoticon emoticon

    I got sidetracked due to family responsibilities. Will do another 5 KM this weekend and plan for the 11 KM in October
