Okay, I'm ready. I've got my vegan meal plan for the next week. I'm going to get up early each day by 1 hour to complete the cardio portion of this challenge. Each day after work between supper and bed time, I'm going to do the ten minute video segment. If that doesn't work out, I may have to do the ten minute bit in the morning either before or after my 30 minutes of cardio. I actually plan to do my favourite Jane Fonda workout tape Fonda's Favourite Fat Burners five times each week. On weekends I'll go for a walk with my boys or with my girlfriend.

I guess I should post starting stats even though I'm not impressed with making them public.

    I did it! I got up and did the 50 minute aerobics tape with Jane Fonda and then I did the 10 minute cardio challenge for Day 1 of the New You Boot Camp challenge.

We had a family meeting tonight and my kids are on board for one full month of a vegan diet. After that the children will decide what they miss most, what they're willing to forgo indefinitely and what they just can't live without. I am sure they will miss the usual childhood favourites: ice cream, yogurt and cheese, but I'm sure that they will embrace rice, almond or soy milk to drink and eventually we will find other ways to enjoy summer with fruit sorbets and other vegan treats.

Also, I just want to announce that I am the new team leader for the Skinny Bitch sparkteam! I'm very excited and I hope to rev up the team's spirits and get all 386 members back to business!

LOL, jk! But seriously, two days in a row? I guess I'm here to stay. Here is current status for today:

Calories: 1300 - 1650 1242
Carbohydrates: 174 - 252 238
Protein: 30 - 60 44
Sodium, Na: 0 - 1500 998
Fiber, total dietary: 25 - 35 34
Fat: 30 - 50 23

On top of that I managed to get in 2.25 liters of water and I did 50 minutes of aerobics.

If I can keep this up, I will reach my goal of 145 lbs by my 40th birthday in May 2009.

  


Beginning a new chapter in my life

Well, obviously I don't blog much. I just read my two previous entries and I see that not much has changed about me. Still a partial vegetarian and still struggling to lose weight.

I am reading Skinny Bitch and I'm transitioning from vegetarian to vegan over the course of one month. I have given up milk and yogurt and now I'm trying to give up cheese. Have I mentioned how much I love cheese? This will be hard! I am also getting ready to give up eggs and I think this will be hard too. I do buy and eat free range eggs to minimize suffering to animals, but I don't have a clear conscience about it. I would like to be completely animal free.

So I made up a meal plan to minimize unhealthy choices using processed foods and I'm cooking from two great cookbooks this week: How it all vegan and The vegetarian family cookbook. Oh, it's also my goal to eat only whole foods, nothing processed beyond my soy ground round, my cereals and my breads. No crackers, no cookies, no frozen dinners. I try to keep my sodium under 1500 mg per day.

My biggest problem is getting enough protein so I've invested in a big bag of hemp seed and I will endeavour to eat my 2-4 tbsp per day. I might have to look for other healthy sources of lean protein in the coming weeks, maybe protein shakes? I'll keep an eye on things here through logging my food.

Okay, let the games begin!!!

    Another way to add protein is with tofu, seitien and tempura. All are really really good when cooked correctly. I also use alot of different spices to add unique flavor to foods. I went veggie in May and cook a lot of veggie and vegan foods. Two books that I LOVE are Vegimicon and Being Vegetarian. Both have really good recipes. The veggie book has both vegan and veggie recipes and the veggie ones can easily be turned vegan.

Veggie for life?

Effective Tuesday, July 11th, my family and I are vegetarians. So far we have managed to eat as before with beans in place of meat at the table. Since we only ate meat 2-3 times per week in the form of chicken or fish, it really hasn't been much of a transition. We have also decided to buy as much organic food as we can afford. Today I found organic free range eggs at the Atlantic Superstore and I'm quite happy about that.

I bought a family cooking vegetarian cookbook that I'm very excited to try recipes from. I've also signed up for the vegetarian daily menu from SP. Hopefully I will stay within my ranges and finally lose these last eight pounds to see me to my goal of 160 lbs by the middle of September.

    Good for you! I've been a vegetarian since '84... but a junk-food veggie for most of that time (ethical reasons vs health... but NOW I'm finally in the right place with BOTH reasons). It's a process and you have to be forgiving of yourself if you "slip up". Really, the journey is the prize... not necessarily the label (though I am very proud to be veggie). Don't beat yourself up for having a weak moment here and there... it's very human. We all have to make mistakes to learn how to do things better for ourselves.

Organic is great! Have you looked into locally-grown food like CSA's? If not, take a look at localharvest.org... often you can subscribe for a share of a farm's produce (at a less expensive rate than buying at the farmer's market).

Any cookbook by Nava Atlas is wonderful. There are other authors too, but she's the best in my opinion. Also, of all the meat substitutes out there I think that Quorn is the best. The flavor and texture are great. It's got the most digestible protein and it just comes in a paperboard box (no plastic).

Sorry, I usually don't offer much advice like this! I don't know why, but your story just inspired me today to take it this step further. I hope you don't mind my two-cents about vegetarianism... it's just been a love of mine for so many years. I think that it actually probably saved my life on more than one occasion... so I'm really happy to share what has worked well for me.
