I keep thinking it's time to start following the menus on this site. A lot of the recipes and food combinations look really good. The problem I have is that it's not easy to cook for one. I can make smaller portions of some recipes but still - if I make the vegetarian chili that is recommended for one of my meals this week I'll have lots of leftovers. Not a problem to freeze some but if I keep following the recommended menus my freezer will be overflowing in no time!
Also, eating 1 cup of cauliflower or 2 spears of broccoli or 5 stalks of asparagus or isn't hard but you can't buy those vegetables in those quantities. Fruit is a little easier although my week's menu says 2 wedges of cantaloupe and 2 slices of pineapple. What do I do with the rest of the fruit? How about the rest of the sour cream after I use 4 tbsp? Or the corn chex cereal after I eat 1 cup?
I guess I just need to pick one and then use it as a substitute for the other vegetables/fruit so I'm not wasting a lot of food.
This is one of the few things I do not like about being single - figuring out meals!! I'm not a big eater, so what I often do (which I know is not a good habit) is eat just one part of a healthy meal. For example, dinner might be just spaghetti or just a salad or just a chicken breast or just a baked potato. Making meals with all the recommended components and portions is very difficult when you are doing it for one...
