I never did summarize my Paleo Diet experience and give my final opinion.
For the entire month of May I ate a fully Paleo diet. I never did feel very hungry, so I liked that part of it. I did feel healthy, but my energy never did return. I never could run over 4 miles at a time.
I had a TON of stressful stuff happen in May, so I'm not sure what effect that had on the whole thing.
At the end of the month, I decided that Paleo eating just isn't for me.
I'm sure that for those folks who have allergy problems with gluten or dairy, it's just fabulous. But my body apparently cannot function properly without CARBS!
I will carry over the lessons about adding more veggies to my diet, but I will also be adding dairy and grains back in as well.
I totally love the part about eating WHOLE foods and cutting out all the processed crap. That part I totally bought into. But I cannot deny my body those carbs. I want to get back into my running program and I just couldn't do it on Paleo.

Wooooey, I still have NO energy.
Tried to go for a 6 mile run last night and had to throw in the towel at 4.
I'm constantly exhausted. I've been trying to stay around 100 grams of carbs per day, but usually land around 130ish.
How long does it really take for a body to go into ketosis??
Anybody have any good tips or encouragement for me? How long did it take YOU to feel better after cutting back on carbs?

It hasn't been as hard as I thought. I haven't had any bad cravings for pastas or breads. My energy is really low, that's really the only thing I have noticed.
I have been taking it easy on my running program. I am supposed to run a 15K in three weeks, so I am really hoping my energy level improves before then! I may just have to settle for 5K.
I have been grilling a bunch of different meats on Sundays and cutting all my vegetables and then just grabbing what I need for my lunches through the week. It's working out so far and I have tried a few new recipes.
Oh, and I lost a pound at this week's weigh-in!

Yes, I finally caved and decided to give it a try. I'm going FULL Paleo for the month of May and then after the 30 day "cleanse" I will decide if I want to continue on with full Paleo, or if I want to allow dairy and beans back into my diet. I have been eating MOSTLY Paleo for several weeks now and am starting to feel much better. I think I'm getting over the carb-withdrawl. Paleo isn't necessarily a low-carb diet but it ends up being LOWER carb than a traditional diet just because you are cutting out all the JUNK.
So far I FEEL leaner and my energy levels are coming back.
Here are my May goals:
1. Full Paleo diet all month!
2. Run 50 miles (this is my standard goal, shoot for the stars, right?)
3. 250 Exercise Minutes per week
4. In bed before 10:30 PM every night! (trying to get more sleep!)
We'll see how it goes!
