Awesome weigh in

I weighed in Saturday and was down over 5 pounds putting me at a total of 87.5 pounds since March 2009. I am so excited and I hope that I continue this streak of releases! I am feeling good.

We had our Thanksgiving yesterday-- 20 people in my little double wide mobile home... quite close.. Turkey, Ham, sweetpotato pie topped with marshmallows, jiffy corn pudding, mashed potatoes, stuffing, collard greens, rolls(so unnecessary), cauliflower.. OH and macaroni and cheese-- we had a vegetarian there.. Appetizers were cheeses and meats with crackers, dip made with cream cheese, salsa and cheddar cheese served with pita chips, baked brie with nuts , honey and rosemary served with strawberry preserves, spinach dip in a pumpernickel round, deviled eggs and pumpkin fluff with graham crackers. Dessert was pumpkin pie, apple pie , baklava (all home made), ice cream and spiced cider..

All were fed and happy when they left... it was a nice time!

My Thanksgiving Meal at work

Since my daughter and I both work Thanksgiving, We will do it Saturday with friends and family.. so for tonight I cooked and made my 40 clove garlic chicken and shareed with coworkers~ Even though we are given free dinner tonight , I wanted to cook.

Tracy's 40 clove garlic chicken

8 pieces of chicken (either a whole one sectioned or I like to use legs and thighs)
40 cloves peeled garlic
fresh thyme
lemon juice
wine
fresh lemons
adobo
lemon pepper

Season chicken with lemon pepper and adobe brown in a skillet with olive oil move to baking dish.. Toss in garlic cloves (You can smash them a little with a knife to open them) sauté them a bit until they get a little color.. add about a cup or so of wine to deglaze the pan and add 1/4 - 1/2 cup lemon.. then toss in a few sprigs of thyme *(I also like to throw in celery tops if I have them and I sauté some sliced onions) Put a piece of lemon on each piece of chicken then top with garlic mixture.. cover and bake at 350 for 45 minutes.. uncover and bake an additional 15 minutes.

You can use the garlic to make garlic bread by spreading it on a piece of italian bread **DELICIOUS** Or as we did tonight mash them and add to rice....

What a CRAZY Week

SO far it has been nuts but else is new-- it is holiday time so everything is bound to be a little crazy...I got my fridge from my friend today -- it is bigger and the doors open the other way so it will take some getting used to. My cousin's kid Todd (my godson) is living with us. He actually helped to move it in and refilled it for me . He is always asking what he can do.. he wanted to cook for me. He is sweet. I think he and Tanya will be good for each other-- she always wanted a "brother" and hopefully he will calm down a bit.

My cousin has 5 children ranging in age from 25 to 8.. 4 boys and 1 girl.. all have mental illness of some kind.. her husband kicked out the 24 and 21 yr olds over the summer for being disrespectful and fighting.. the 24 yr old got a place with his gf and the 21 yr old was living out of his car parked in his aunts driveway.. well it is cold out and he needs a roof over his head.. so he will come stay with us and pay a little rent and help out taking trash out and shoveling snow I guess. He is a good kid just needs the right home to straighten him out. His name is TOdd and I am also his godmother. The bad thing is he and his brother were both paying rent at their home and now my cousin has to work harder to pay the bills since that is so much money out of their pocket. Hopefully he can get his head on straight and see what a real family is.
