Spinning the Spark Wheel BEFORE I Go to BED ... ugh!!!

Okay, this is the second time in a week that I've been up late enough to spin the spark wheel for the next day. Not cool.

I couldn't go to bed without scrubbing my floor. I am not a fanatic when it comes to housework, not by a long shot. It's pretty rare when I'm not behind with something and I've noticed since I've become a dedicated exercise person, I've become an even worse housekeeper. There are only so many hours in a day ...

I had to stock the fridge with healthy food today. I had to get some laundry done. I had to pack my gym bag for tomorrow morning. And I had to clean the kitchen because well, it was just GROSS!

I didn't do well with tracking my food or drinking my water this weekend, but I did make two trips to the gym and eat decently (except for the red velvet cake). Okay, I've confessed and now I don't feel quite as guilty (at least I'm not hung over ... ahem). The next few days I'll be fighting to get my routine back. I know I can do it. It was a once in a lifetime event and now it's behind me. Now the reality of DD searching for jobs out of town is starting to set in. That's going to be a tough one ... but I just keep telling myself that I did a good job. She's ready to tackle the world and very soon, she'll be embarking on a new life. I'm excited for her and want her to be happy. The coming weeks will be full of adjustments for me. I need to keep my head on, stay focused, and keeping doing what warriors do ... FIGHT my way through this!

I ditched boot camp and took my daughter to lunch!

Today was my daughter's last day of college. She had her capstone presentation and her 4 years (the last two of which have been year round) have come to a close. She showed up in my office after she finished and she looked exhausted. I know I was all set to go to boot camp for beginners today during lunch ... but the truth is, I can go to the gym after work and I can do the 28-Day Bootcamp DVD at home tonight.

I can't ever have another chance to celebrate such a special moment in our lives.

I have no regrets. I'm so proud of her and am looking forward to our dinner party Friday evening and commencement on Saturday. I know she's worked so hard for this and I am one proud mama.

I didn't use this as an opportunity to go off track. I ordered the grilled chicken salad and drank water.

And of course I come back to work and there are cookies and donuts ... ugh! But I'm not eating those either ... BAD FUEL!

    Absolutely the right choice, Bella. I know you are committed to fully embracing the lifestyle. In this case, I think most would make the same choice! But that's fine because you've already tweaked your schedule. You also did good in your nutrition. And it's great that you are looking out for "good fuel!" Very cool! Stay strong...

August Goals

Weight & Measurements: It's official. I have stored my scale in the bathroom closet. I will be weighing myself on the 1st and 15th of the month and at doctor appointments (little choice there)! I will also take measurements on the 1st of every other month.

Tracking: I've done a decent job of tracking my food and exercise but will focus great attention here, finishing out my evening meal & evening snack (when applicable) and running my daily nutrition report each day. Knowledge is power and if I'm not completing my tracking 100%, then I don't have an accurate picture. That will make analysis difficult when I'm trying to figure out when I hit a plateau (seriously, I feel like I LIVE on a plateau).

Exercise: I will continue to strive for cardio (minimum of 30 minutes) 5-6 times per week and strength training 2-3 times per week. In addition, I will make every effort to get extra steps in every day and take the stairs whenever possible. I'll also park further. Every extra steps helps! I will also continue looking for ways to monitor my workouts so I'm working at 80-85% during my workouts and will continue to add variety (for example, I'm taking a "Bootcamp for Beginners" class tomorrow on my lunch hour and will be starting Tai Chi later this month.

Glycemic Index: I enjoyed my class this week and try to incorporate at least one low GI food to each meal (at the suggestion of my dietician). I believe I'm already doing this, but I'll pay particular attention. This will help with controlling my blood glucose in addition to helping to make sure I'm feeling satisfied.

Variety: I will work to incorporate one new food or recipe each week. It's easy to fall into a rut and eat the same foods over and over and over. That's boring and monotonous!

SP: I will continue to be active with SP and supportive to my team members and SparkFriends.

Fitness: My fitness goal for August is 1,300 minutes.

July Goal

I was impressed with my 871 exercise minutes for June. Afterall, it was a great improvement over the month of May (next to nothing). When I sent my sights on July, I thought I would shoot for a higher number ... maybe 1,000 ... no, 1,250! That surely would be a longshot, but maybe, just maybe if I worked hard I would be able to reach it.

Well, I need 50 minutes today to hit my goal. I take a 90 min lunch so I can get my exercise in and still have enough time for a quick shower and to get back to my office. I will have to be super organized and efficient today, but I think I can squeeze that 50 mins in at lunch time.

Otherwise, I'll be going again after work ... because there's no way I'm going to shortchange myself. I can't describe how good it feels to be able to declare -- I exercise REGULARLY!!!!!

Sparkabella's Zucchini Stew

Okay, let me just say I didn't measure anything ... but wow, this certainly is amazing!!!

I started out with 2 cartons of Swanson's 50% less sodium beef broth
28 oz can of crushed tomatoes
14.5 oz can of diced tomatoes (no salt added)
2 bay leaves
3 cloves of minced garlic
chopped onion (2 small), celery (1 stalk), green pepper (about 1/3 of a pepper) and cabbage (maybe a cup and a half, chopped)
fresh parsley, oregano & basil
crushed red pepper

1 cup of cooked small soup pasta (I used whole wheat)
1/2 cup cannelloni beans

I added about half a pound of extra lean ground chuck (rinsed & drained) --I'm going to try Morningstar Farms or Boca crumbles next time

and finally at the end I added my zucchini (I used 3 small, with skin left on)

I simmered it for a long time to make sure all of the veggies were cooked, then added the meat, pasta and zucchini at the end (so as not to overcook the zucchini)

I'm going to "count" this like I would beef vegetable soup, but it's far less "carby"

    It's EXCELLENT! It's a combination of two different recipes and whatever I thought sounded good ... haha!

Debby, I used lean ground chuck (beef) and I rinsed and drained it well. Only about half of a pound because of adding the beans too.

I seasoned it to taste ... the crushed red pepper really gave it a little kick. Then I sprinkled just a little grated locatelli cheese on top. It's kind of like an Italian vegetable soup!
