I've noticed this in the produce section of my grocery store for a while now. I added it to my list this morning because I was feeling curious. I love most vegetables, so I figured the probability was high I would like it. Well, they had 3 or 4 this morning and they looked a little lame so I didn't buy it. But I stopped by the indoor grower's market and found a beautiful head (that's why I had to take a picture of it)!
I cut the bottom leaves/stem away and washed it, then blanched it (put in boiling water, then into ice water). I read online blanching helps to maintain the pretty color (it otherwise turns a olive green color when you cook it). Then I cut it into pieces -- really cute, they actually look like little Christmas trees) and I steamed it in the microwave for 4 mins/15 secs. I drizzled a little EVOO and measured a cup and YUM-O! And it's only 5g carb for a cup! This is a Diabetic's dream!
It's kind of a cross between broccoli and cauliflower, but definitely more like cauliflower. It originated in Italy around the 16th century so that makes me wonder if maybe it's more popular in Europe.
It was a nice alternative ... and I'll definitely buy it again!
After struggling with a sore throat and congestion the past few days, I think I'm over it (never did really get a full blown cold). I've been off work the past 5 days and decided to get my Monday rolling in the right direction. I left before 5 a.m. for the gym this morning.

I feel great. I'm actually awake, on my second cup of coffee and ready to hit the shower and return to work with a spark smile!
I feel blessed for so many reasons. I choose to think of the positives, when it reality it would be easy to focus on the fact I've lost 3 family members between this holiday and Christmas.
First stop this morning is 8:00 Mass with my 82-year-old mom. It's a tradition. We make it a point to count our blessings and thank God.
Next stop is Planet Fitness. I was so thrilled to learn they would be open from 7 a.m. until Noon today (although I do feel bad for whoever gets stuck working). I had a HUGE workout yesterday, so today will be 30-40 mins or so of cardio and some upper body strength training. Since my mom is cooking today, I have the flexibility to be able to go -- and although I have no plan to overindulge at the dinner table, I want to stay motivated and on track with working out at a time of year when it's so easy to get caught up in the crazy.
Third item on my agenda -- a wonderful meal with my mom, my daughter and her boyfriend. We've lost a few people we love who normally joined us around the table and my brother is out of town celebrating with his grown children. Our table may be small, but it promises to be filled with a wonderful meal and many blessings.
Wishing you a very blessed Thanksgiving! I encourage you to join me in counting our blessings!
