I had one of the best weekends I've ever had. Friday I got home from work and took a nap. My bf came home around 8PM. We went to chili's and I had their Margarita Grilled Chicken. It comes with black beans and citrus rice. It was outstanding! I got the ingredients to make it at home this week. This was my first time ever trying black beans. We also don't go to Chili's often, so it was nice having him suggest a different place.
On Saturday he was going to help his friend with his friend's racecar later in the afternoon/evening, so he suggested that we walk on the trail that I've been walking on. He's never gone with me, so this was a really exciting suggestion! He broke his ankle playing football in high school, so he has plates and screws in his ankle. Walking long distances is difficult for him, so I was excited that he was willing to give it a try. I never thought he would go with me! I've gone 7.5 miles when I've gone on the trail and I know he walks slower than I do, so I was willing to just go at his pace and walk for as long as he wanted. He said he wanted to walk as long as I had or longer, so I followed along. He found out quickly that it was a longer distance than he thought, but he sticked with it and we did the complete 7.5 miles. After I got in the car he took a lap around the car so he could say that he walked farther than I had. HAHAHA! It was really nice to be outside and to walk for 2 hrs and 45 mins. It was a great way to spend the afternoon.
We were going to get lunch together, but we had started the walk later than expected so it was time for him to leave to help his friend. A little while later he called and said that his friend didn't need his help that evening and asked if I wanted to go to this Thai Restaurant he had been to years ago. It's about an hr and a half away near DC. He really liked it when he went a while ago and had always talked about it, but we had just never been. Again, another new restaurant to try as suggested by my bf:) We went to dinner and it was fantastic! I tried a dish that had mixed veggies, mushrooms, and tofu in a light garlic sauce. It was served over jasmine rice. It was quite tasty and it was really nice going to a completely new restaurant.
After that he wanted to get icecream. I still had calories left, so I decided to get some. We went to Ben and Jerry's. I got one scoop (.5 c.) of Triple Caramel. It was very good and nice to have some variety. I haven't really had a dessert like this since February. I went on Ben and Jerry's website and the icecream was 230 cal for that serving. We sat outside and ate our icecream. It was tasty, but not a huge serving that ruined my day or made me feel ill. The Ben and Jerrys was in the same city as the Thai restaurant, but we had never been to this part of that city. I'm not sure if it was considered downtown or what it was. It kind of reminded me of the boardwalk area of Ocean City or Rehoboth Beach, DE... but it wasn't near water. There was a center road and a lot of little stores, shops, restaurants, and a movie theater along the way (kind of like a Main Street). It was very cool and, again, neat to do something completely new.
My bf had to get up kind of early today to go to the track to help that friend with racing his racecar. I got up shortly after he left, went to the grocery store, went to target, and came back to my apartment. I've been staying here during the beginning of the week since it is 5 minutes from my school (vs 45 mins). He is able to get work done in the evening on his own cars when I'm at the apt because he isn't distracted and wanting to snuggle lol. It is also saving me some gas and I am more productive and exercise more when I'm at the apt. I restocked all of my food for the week and am very excited about trying to make the margarita chicken and some kind of thai tofu dish. I also tried Coach Meg's White Chicken Chili. It was out of this world!!!! It's nice when I'm at the apartment to cook whatever I want to make and not worry about my bf's food allergies or making something that him and granddad will like. I just finished cleaning up the chili dishes and I'm going to do some Wii Fit. I just started the Wii Fit Challenge group, so I'm excited to give that a try. I got a yoga mat at Target, so I'm going to do some yoga too. That's been fun and relaxing... I just started trying some poses through the Wii last week. After that I think I am going to take a nap and then I tutor at 5. This weekend was fantastic. It was really nice to have my bf make a huge effort to make me a priority and to make sure we spent some time together since he knew he would be busy helping his friend. It was also nice that he came up with some new suggestions. After 8 yrs it's hard sometimes to come up with new things, but I really felt special that he put that much thought into our hangout time. I can't wait for the rest of this week and see what next weekend brings. Only 3 more weeks than I am done for the summer. Woohoo!
Update: For dinner tonight I made a thai restaurant inspired dish. I made tofu with mixed veggies (see the recipe on my pg). It turned out great!
