I only have two weeks left of school! Yippee! Unfortunately, I have finals to deal with. :( I have to take a couple of days off before I get started in finals mode, I just finished taking 4 tests!
So, yesterday, I spent the day with my boyfriend. I ate wayyyy too much. First we went to an Indian buffet that we both love. I splurged and had like 2 plates and dessert! Its so good though. We went on a walk afterwards to try and help. Then for dinner, we went with his sister and her boyfriend to On the Border, which is a Mexican place. I ordered off their light menu, but ate lots of the chips. Oh well-- it was a free day!
I did gain a bit, but I'm not sure how much of that was water weight. Actually though, I was 4 pounds under the range I like to stick in (I like to stay between 125 and 130, and before all the eating, I was 121). Today i was at 123.5, so eh, oh well. I'm still under! Haha.
I did some cooking today. I made cookies for a silent auction, and the leftovers are going to my friend. These are not really diet friendly, and I didn't even try one! I got the recipe from kraftfoods.com.
1 pkg. (2-layer size) devil's food cake mix 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened 1/2 cup peanut butter 2 eggs
PREHEAT oven to 375ºF. Place ingredients in large bowl. Beat with electric mixer on low speed 1 min., then beat on medium speed 1 min. or until mixture pulls away from side of bowl and forms soft dough.
SHAPE into 44 (1-inch) balls. Place, 2 inches apart, on baking sheets. Flatten each ball, in criss-cross pattern, with tines of fork dipped in sugar.
BAKE 7 to 8 min. or just until edges of cookies are set. (Do not overbake.) Cool on baking sheet 2 min. Remove to wire racks; cool completely.

For lunch, I made salsa chicken.
12 oz chicken breast
5 tablespoons salsa
0.25 cup shredded cheese
Preheat oven to 375. Put each chicken part on a piece on tinfoil, and spoon a tablespoon of salsa on top. Close the tinfoil, and bake for 20 minutes. Add cheese to each part, bake until cheese is done.

I don't think I'll be trying any new recipes soon. I have a bunch of tests and presentations coming up, and then I have to start studying for finals. Aaaaah! 3 tests, 2 presentations and 3 finals alllllll in April. :( I'm going to go crazy!
I've been good at staying in my range though, even with eating out twice this week with my boyfriend. We just went to Dairy Queen on Friday, and I got their Grilled Chicken salad. It was pretty good, but hard to eat in the car. Then we went to a bar after the concert, and I just had a baked potato. Haha. I don't really drink anymore- too many calories and not worth it at all. I would much rather eat cake. I've pretty much decided that I'm not going to drink unless its a special occasion. It's just not worth it to me.

So tonight, I wanted to watch my sodium. I decided to make a stuffed pepper! I kind of borrowed a recipe from Kraft, but changed it to my liking.
I cooked 1/2 cup of uncooked brown rice and 3 ounces of Tyson grilled chicken breast strips. I mixed those with 2 tbsp of salsa, then spooned the mixture into two green pepper halves.
Hopefully it'll be good!

I was able to resist having a cream puff last night! I went over to my boyfriend's apartment, and we decided to make dessert. We got the recipe from his cookbook, and made them. They were really good- I had a bite of his. Haha, my bedtime snack was an apple and peanut butter, and his was the cream puff!
We went to dinner at Spicy Pickle. I think I made a good choice- I had their spinach salad (dressing on the side) and vegetable soup. They didn't have their nutrition information on their website, so I just guessed.
Today my professor is bringing in pizza for our class. I think I'm definitely going to have to have a slice! Hopefully I can control myself, and keep it to just one, but we'll see. I 'm going to have a healthy lunch beforehand, so I won't be starving.

So, for dinner tonight, I was going to make a stir fry (I needed to have stuff low in sodium, so my leftovers wouldn't work). But then I realized that my lettuce was about to expire. And since I hate throwing stuff away, I decided to try and copy the Fresco Chicken Bowl thing at Taco Bell.
Here's my version:
1/4 cup brown rice (uncooked)
3 ounces of chicken
all of my lettuce (I guess 3 cups, but I'm not sure)
some carrots and celery chopped up
salsa on top.
I cooked the chicken and rice, chopped up the vegetables, put it all on the lettuce, then topped with salsa! Delicious! And it's low calorie. I think the Taco Bell thing had beans or something in it, but I don't have those on hand. I liked mine the way it is though! :)
