Well, it's been over 2 months now and I am eating mainly vegetarian dishes. Vegan is a little to strict for me, so my daughter and I decided to go Vegetarian.
One thing I recently noticed is my blood pressure has really dropped. In the past it was around 130/72. The last few readings have been 116/64. I'm not sure if it mostly based on eating vegetarian or if it has anything to do with me working out twice a day a few times a week. I starting using Billy Blanks, Jr. dance videos on the days I can't make it to the gym. I put in the dance video in the morning, early around 5:30am, workout for at least 30 -40 minutes before getting ready for work. In the evening, I do the same, but I dance for at least 60 minutes. I love dancing, it makes me feel Good! In any event, I am glad to see my blood pressure come down. I'm sure the vegetarian eating has something to do with it. I still eat fish and egg whites and a little cheese every now and than.
Regarding my weight, I have lost 7 pounds; but, I expected more of a weight loss. Have I gained muscle? Perhaps, however, I will keep pushing, I'm sure those last 20 pounds will eventually come off.
