Made the Garden Sloppy Joes from SP for dinner yesterday. Delicious, even my picky pants hubby ate it. Thanks SP for such great, healthy recipes. We will NEVER eat Manwich again.

Dr said...tendonitis and simple sprain, stay off of it for a week (meaning doing absolutely nothing - which is going to kill me by the way), anti-inflamatory and ice, if not better in a week, MRI to see if cartilage is floating around in there. - SHEESH, not as bad as it could have been, but still gonna have to sit thi...s one out, wait and see. If I follow orders hopefully will be back at it in no time. This is going to kill my cardio points for a week, but still can work upper body. I have the worst luck sometimes.

Ok, so my knee has been hurting but silly me tried to exercise last night, that didn't go well and my knee said "nope". So I made a doctor's appt for tomorrow to see exactly what's going on. I don't have time for issues, but will have to slow it down quite a bit, not really happy about that since I just started a regular cardio routine. We shall see.

  


Raw Potatoes - A Horror Story

Yesterday I tried new SP recipe for ham and scalloped potatoes in crock pot. I set crock pot on low because I knew I would be gone from home for at least 12 hours and didn't want to burn. My sister invited a new friend over for dinner and was bragging about all the new, healthy recipes I cook and we couldn't wait to try this one. We got home from a great workout at the gym, went to set the table only to discover that cooking potatoes on low all day was not enough, they were still raw and hard. HORRIFIC. Oh heavens, I had to improvise really quick and put potatoes in microwave for 15 minutes to finish cooking. The outsome.. rubbery potatoes, not a dish you want to serve to company. How embarassing is that? Well we all ate it and laughed about it later. We agreed that it would have been great if the potatoes had been cooked properly. So we are going to have a "RE-DO" in the near future. Not a good first impression for a dinner guest.
