The past few months have been a struggle for me health wise. Ive felt as if I had the flu almost constantly throughout winter and a stressful job didnt help things either. My rheumatologist thinks I may have fibromyalgia which would explain the fluish pains, waking up constantly during the night and exhaustion Ive felt lately. This is in addition to joint hypermobility syndrome which causes me back and joint pain. Im sick of being sick and Im ready to fight back and get myself back to full health. The mediation the pain clinic put me on made me gain weight rapidly so I feel like Im back to square one. However, Ive lost the weight before and I can do it again!

My contract in work has come to an end so I have more time to focus on me, time to cook and take walks. While I was working it was very difficult to get exercise. In the morning Id wake up stiff and just know I would do myself an injury if I attempted anything. By evening my knees would throb, my back would ache and I just felt like flopping onto the bed. Losing my job is a blessing in disguise as I can concentrate on my health.
My starting point daily plan:

Eat between 1,200 & 1,500 cals
Physio exercises every day
Eat home cooked meals no ready meals
5 portions of fruit and veggies
8 glasses of water

Simple and very achievable!

    Oh my!! I have been going through the same thing. I went to a rheumatologist and after many X-rays, loads of bood work and two MRI....he diagnosed it as fibro. I only take occasional Motrin, use moist heating pad and need a sleep aide t night. Just want to cry because I feel so physically limited. My friends tell me to eat better and exercise more...duh!
I used to run up stairs for exercise and now my legs are so weak I feel like they will collapse. Pain keeps moving Around my body. Luckily I am retired because I could not work like this. Shortness of breath sometimes. Went for an echocardiogram yesterday.
My apologies to those who only want to hear about food, calories, etc.
I eat 85% clean but just went gluten free and am limiting sugar to fruit. I have found really good recipes on Spark People and love the fruit smoothies. They curb my sweet tooth.

This past week or so hasn't gone very well for me. My routine is shot, I'm feeling very unwell with a cold, I've sinus and haven't been sleeping well at night. Seem to be waking up every hour. Anyway, I'm going to try and recuperate this weekend and get back into the swing of things on Monday. Even though I've been way off track food wise I've still tracked everything. It's good to know the tracking habit is deeply ingrained in me now!

Busy in the Kitchen

This week could have gone better for me food wise. I've managed to stick to my healthy eating goals but went over my maximum calories four days out of seven. Even though I've gone over my calories I'm going to take a look at the positives this week;

* I've made several new healthy recipes that I really enjoyed and now have a couple of frozen dinners on stand by for days I'm in a hurry.

* I reacquainted myself with aqua aerobics this week and really enjoyed it.

* Most of my meals have been healthy and home cooked.

Now, I've been really busy in the kitchen today! I've come up with a couple of recipes to suit the autumn evenings and introduce food that's in season. I don't usually eat traditional Irish recipes so beef stew with colcannon was a change from the norm for me. I've added the recipes to SparkRecipes so check them out if you'd like to try something different. For dinner I had a couple of scoops of colcannon with the stew poured over it. Delish! Really rich and full of flavour.

As I type my oatmeal cookies are baking away in the oven. The recipe is not my own, I got it from SparkRecipes and tweaked it a bit to suit my tastes. I left out the raisins and added dried cranberries and some shopped walnuts. Yum! The smell is wafting through the house.

    Your food looks great! Way to go with the water aerobics and healthy home cooked meals! Smart idea to cook ahead and freeze. It's so nice just to be able to grab something healthy and heat it up when you're hungry now. Thanks for sharing!

Ahead of the Healthy Cooking Challenge

This evenings dinner was Healthy Chicken Vegetable Casserole compliments of Chef Meg. Really delicious and didn't seem low cal at all. I made a couple of tweaks like increasing the sauce and adding a little extra cheese.

So far this week I'm doing really good. More calories than I would like but I've been eating mostly healthy food and getting all the nutrients I need. Last night I even went to aqua aerobics after almost talking myself out of it. Yesterday evening really was a battle - with myself! All the excuses were coming out; it's raining, it's cold, my back is sore, but I didn't accept them. Instead I logged on and read some motivational articles to push myself through it. In the end it was such a laugh, really good fun and I got chatting to a few girls there. I'd really like to make a weekly habit of it. There's another class on tomorrow night which I'll definitely make. Looking forward to it already.

Thanks to SparkRecipes I made Skillet Lasagne for dinner this evening. It's way too good to keep to myself so had to share. Clean plates all round!

    It's the best recipe I've made in a long time - and that includes high cal ones! I had add some extra mozzarella cheese and added it to my tracker. Can't wait to eat the leftovers this evening!
