My Danish Heritage

Hi Spark friends! I know it's been a while, but I've been in Denmark for a while (with my sister and first cousin also) to not only see the sights, but to also visit 3 of my dad's living cousins and their families. I didn't have much access to any computer. It was great meeting everyone for the first time! And not only did we do a lot of walking around but we ate more healthy such as fresh meats and produce. Well.....okay, maybe some decadent Danish pastries and desserts here and there and truth be told.....yum! But I still managed to lose 10 pounds while over there.
Here are some of very many pictures I took:





















These are some of the 270 plus pictures I took! Denmark is broken up into islands off the mainland of the Jutland Peninsula; we stayed at the summer home of a family member on Zealand Island a few blocks from the North Sea in a town called Liseleje and also stayed in Roskilde near the Roskilde Fjord. Then a few days before returning, we visited the City of Copenhagen. Fun, fun, fun!! Oh! before I forget! Besides walking, driving, and the public transit, one of the main modes of transits among the Danes is cycling! There are specific bike paths that are between the sidewalks and roadways. We didn't get the chance to rent bikes this go-round, but next time we visit, that will be the first on my list!

My son is heading to Denmark in January and can't wait to see it. Of course he and I have been talking a LOT about how cyclo-centric Denmark is. Someday I'd love to do both Denmark and Netherlands for that reason! :-)

Kudos to having such a special time AND dropping some pounds too!

ps...my grandmother immigrated from Denmark so there's heritage there for me as well as Netherlands, Czechoslovakia and Ireland...European melting pot that I am...lol!

    Glad you got to see some of your heritage . In 1996 I got to go to Munich Germany and Belarus. I have part German on both sides of my family and some Russian. seeing part of my heritage was awesome

    Thanks so much for the pictures! I have never been there but my very best friend was Danish. She moved to the US in her early twenties so lived a long time here in the US. I loved her dearly. I miss her very much as she passed away a couple of years ago. She always trimmed her Christmas Tree with little Danish flags and spoke Danish all the time. Her mother still lives in Denmark and I felt I was a little Danish for all the stories she told me over the years. She was a wonderful person and loved her heritage.

Our Summer of 2013 in New England

Hello Spark friends! It's been quite a while since I've posted any blogs. My husband and I took time off to do some traveling up in the New England states and to visit family during the course of the summer. For the most part, we did a lot of camping and hiking, just enjoying the beautiful scenery of the outdoors! We went full circle starting in Vermont, then going to New Hampshire, Maine, Massachusetts, Rhode Island, Connecticut, and New York state. Here are some pictures I got:

We took a 30-minute hike to view it up close---breath-taking!



Vermont is known as the Green Mountain State and we saw why!







This is a few of many pictures I've taken. By the way, at the start of the summer, I weighed in at *blush* 168 and with all the walking around, hiking up and down hills, rugged trails, setting up camp, etc, I currently weigh 148! I have to start getting some new fall/winter clothes LOL!

Well......here goes......THANK YOU everyone for your support! emoticon emoticon emoticon
During my busy time I can honestly say that I stayed pretty much on track (with the exception of 3 mozzarella sticks emoticon ). When management brought in food, fortunately there was fresh fruit and veggies to choose from---that is a life-saver emoticon Then again, I think most everyone is health-conscience and I'm glad to see that.

My husband--my HERO

Well, here it is---Thursday and Friday the supervisors will be here for auditing, evaluations, and (Friday) for an 8-hour training program for updates on procedures. In the meantime, my husband has been my rock and support. Not just emotionally, but nutritionally too. He has been making my breakfasts and lunches which include oatmeal, poached eggs, multi-grain bread toasted, and coffee (truthfully, still gotta have that, just not as much half & half). Lunches he makes would include lean meats (turkey and roast beef the favorites), mustard, not mayo, fresh fruits, plain almonds, and I bring my water bottle as each stop has a water machine.
Today's Tuesday, I have OFF---YAY! I'm gonna be making home-made veggie soup for dinner. The temps dropped and that would be perfect. Besides, that would be a nice reward to my hubby as that is his one of HIS favs too emoticon

    Good for him! My wife has been very busy this week and next will be worse. I've made some dinners (I like messing around in the kitchen but unless it's the weekend she chases me out) but she doesn't eat right during the day.

Busy busy busy!!

My regional supervisor and head of human resources will be here next week and I'm scrambling to meet deadlines with reports, schedules, etc (out of breath reading this yet?). There is one thing that I'm doing when I order for our luncheons----play it smart. Fortunately there is a Subway that is less than 5 miles away. That is a healthier choice than, say, getting pizza, fast-food, you get the idea. Also, on one of those days (a week from today), I will be on the road with my supervisor to visit another of our locations and Apple Bee's is 1/4 mile from there. I went not too long ago and they have a very good selection of entrees endorsed by Weight Watchers and the under 550 calories category.
Okay, break-time's over-----now to finish my report and fax it...........
