my first tofu dinner

I don't mind tofu and on some occasions I actually order it. I bought my first container of tofu and made some crispy tofu and veggies. My youngest son loved it, he is more willing to eat healthy and try new foods, he also likes veggies. My husband and oldest tried some and couldn't swallow it fast enough. (kudos to them for trying) I ate it with some white rice, my family doesn't like brown, I would really love to make the switch I like brown rice.
I will be buying more tofu, and trying some of the recipes I'm collecting. I'm really trying to make my meals more plant based and trying to eat less animal based. I'd love to hear from any fellow Spark friends that have some ideas how to do this. I already use lots of beans and legumes to make many non meat meals, and my husband and youngest son don't mind at all.

  I like eating plant based foods. I have not made the swich completely but I leaning more and more that way. One dish I like for breakfast is making polenta and putting stry fried (in water) mushrooms and chopped onions on it and sometimes top it with beans and 1 or 2 teaspoons of extra virgin olive oil.

    I have never actually ate tofu, I am from the Midwest , steak and potatoes country. I think if is vegtable based I would like it. Good luck with your recipes.

A super fun Saturday

My weekend started Friday going to a concert with a very old friend of mine, we had a blast and I had a shot of tequila and I counted it 60 calories. I really enjoyed savoring it and didn't just shoot it down, needless to say we danced a lot!! Then Saturday I took my mom to the Dr. and ran some errands for her. I then went with sister to a hip hop celebration, lots of music and dancing, I ate a green chile and bean burrito, (homemade by my sister friends Abuela) I counted that too, it was sure good ( I didn't have the homemade cupcakes that was oh so gently calling my name).
Finished the night by going to the movies, (this is where I got in a little trouble) movie theater popcorn, Oh the love affair we have her buttery, salty goodness makes me drool and gets me all gaga gaga with love! I ate it carefully and yes counted it. (I didn't eat the milky way that my sister bought me) In the end I had a super time and although I went over my calories I still feel successful. I also made some sassy water to detox my body today!!
I'm planning on going on a hike with a friend, but the Phoenix Rock n Roll marathon has me blocked in.
Did I mention a few people commented on how I look like I've lost weight, woo hoo!!!

The excuse game

My Dr. called with the results of my lab work, everything good except my totally Cholesterol 223 so she said I can choose to try to control with diet or go on meds, I'm opting for the diet. I believe I can do it I have to for my health, my blood pressure is high and i'm already on meds for that. I don't want to start taking meds for everything thats wrong with me. Today I came home from work with a bad headache, the old me would of used this excuse to eat some comfort food. I'm proud to say I drank some water and laid down for a few minutes, I was a bit hungry so I made some hummus and at it with some baby carrots (I would usually eat it with some pita) then did a belly dancing video for 28 minutes of cardio. In the end I felt good about myself and my headache went away. I know the road ahead is a long one, but I can see the light at the end!

Dr's appt

I had an appt with my Dr. this morning for several reasons, for the first time ever I was excited to be weighed I usually dread this part of checking in! I'm not sure if I've lost anything in the last week, cause I didn't weigh myself last week, but I feel like I have. I have the best Dr. and she was so glad that I was serious about my health and getting healthy by losing the weight and exercising. She recommended that I watch a movie called "forks over knives" she said she had learned so much and what she thought was healthy and good for you, was not. Its on netflix if anyone is interested. I'm hoping to watch and although I'm not ready to go vegan I want to start including more veggie meals in my diet.

I also did a great hip hop cardio workout this evening for 30 minutes, lots of fun and got me warmed up, we haven't had these low temps in Phoenix in over 20 years, and needless to say I'm freezing!!! :O I also walked with my sis for at least 20 minutes outside in this cold weather!

    I have heard about that movie too but I'm not trying to go vegan either...I think there is a balance that can be had that will give the results that we are looking for/needing in our lives...I am trying to incorporate more veggies/fruits in my diet as well....baby steps!

  I have been reading the book they have Forks Over Knives. I am not ready to go vegan either but I am trying hard to eat more veggies also. Vegetables are very healthly for us.

week 1 done

so tomorrow makes it a full week I started eating healthy and exercising. I got a Dr.s appt in the morning so I will see how much I weigh. (I didn't weigh myself last Monday I just guessed my weight) I continue to feel good about my progress, I'm taking it one day and some times 1 hour at a time. I did another Belly dancing cardio work out for 30 minutes today, so I only missed yesterday. I had a craving for a tootsie roll pops I bought a bag and was happy to see, only 50 calories lots of flavor for minimum calories! emoticon emoticon
