Apple Cranberry Skillet Pancake

Friday, December 03, 2010

I threw this together today and entered it into my Spark recipes but it didn't "share" on my friend feed. It's in my recipe file. I had a couple apples and cranberries left over so i threw them together and poured pancake batter over it and baked it in the oven. It was pretty good.

My Cranberry Biggest Loser team challenge started today. This week we are supposed to track all our food and meet our calorie level. I know I can meet the tracking thing but I have trouble meeting my calorie levels.

My goal is to keep up with the challenge, log in with the team and do the best I can to try and lose 5 lbs.

Today we moved some furniture, re arranged other furniture, vacuumed, did laundry, cleaned, went up and downstairs several times so I did get in some exercise.

A new week begins tomorrow!

November 29

Monday, November 29, 2010

It was a good day today. I got up early for a change and went for a walk. The temp was 73F at 6:45Am but I went back to bed for another hour. When I went out it was 76F. I did 45 minutes walk for 2.06 miles. It wasn't a record but it was pretty good for me. Then this afternoon, I did another 25 minutes of Walk Away the pounds, a SparkPeople Desk workout video and another few dumbbell workouts.
I now set my alarm clock for 7:35AM so I can get up and enjoy more walks.

Made another good turkey salad recipe for dinner that I got from Kraft foods website. It was pretty good!

Back to exercise today

Saturday, November 27, 2010

Finally today after 4 days of no exercise, i got back upstairs to get moving again. I got in 45 minutes of walk awayu the Pounds video and 20 minutes dumbbell exercises.

I only gained 1 lb since Wednesay so I gave myself a pat on the back for that, it's no excuse to say "ok, have the extra piece of pie" either so I passed on that.
Tomorrow night I'm looking forward to our favourite Turkey salad burritos.

Getting ready for Thanksgiving

Tuesday, November 23, 2010

Such as it is here. Got the Butterball Turkey thawing, went to the grocery store again today to get the rest of the meal. I panicked a bit because I couldn't find my gravy recipe that I used last year that we liked. Despite living in Saudi Arabia we will have a traditional American Thanksgiving BUT made healthier and using portion control for me at least.
Butterball Turkey roasted
Stuffing/dressing made with whole wheat bread and vegetables
Herbed Turkey gravy that is diabetic friendly
baked plain sweet potatoes
carrots with orange sauce
Peas and pearl onions
home made from scratch cranberry sauce
Ginger Peaches in sugar free jello
Pecan pie
Pumpkin pie
Whatever dishes our friend brings.

I didn't get much exercise time in today, I had to go sit at our friends house and wait for maineinence to come to fix the broken a/c. I gave up waiting after an hour and went home. Called back in the afternoon and had to go back over there while it was fixed. Then cleaned up here a bit and got dishes out, food prep lined up, table cloth on, decorations arranged then went and zoomed through the grocery store again.

Wednesday we also have to go to another friends house and clean it out. He left on emergency in August and won't be back. so go through and get his personal stuff to ship back and sell what is left. I looked through a few odds and ends he had which wasn't much, brought home a knife, 2 cup coffee pot, a couple of pans and a cat toy that our boy kitty now loves.

i will get in plenty of exercise on Wednesday running back and forth baking and rockin' to my tunes while I cook.

I"ve gotten in a lot of exercise the past couple of days just trying to dig out my house before the houseguests arrive. I've got the basics of the Turkey day menu...turkey, squash, stuffing, gravy and pumpkin pie. My son in law is responsible for every thing else, so lord knows what he'll come up with...but I'm sure we'll end up with enough food to feed 20, haha!
Have a great holiday.
