Week 2 Pre Challenge Fitness test

Well, my walking didn't go so well the last couple days, why? I"M LAZY! Plain and simple, no excuse except laziness, but I will get back on the treadmill today and continue my walk!

This weeks challenge is:

Week 2 Pre-challenge ITC---FITNESS TEST

Lets begin the challenge with a Fitness test and we will end Week 10 with the same test to see if you have improved your numbers.......
SUGGESTION:

20 crunches
20 wall pushups
3 minutes of step ups
1 mile walk

We all have different fitness levels so leaders please work this out with your members if you need alternates. But please post what you do and make it something that works you a little bit. We don't necessarily expect you to be able to do them now. Post what you do.... minutes and reps. We will ask you to repeat this in Week 10 and see if your fitness level has improve. This can be journaled or you leader can set up a thread to record it and you will come back to the thread week 10 and take the same Fitness test.

I KNOW I can't do crunches, too much fat belly in the way, 1 mile walk, I can do that on the treadmill, I CAN do the wall pushups, and pretty sure I can do the step ups.

First HAPPY BIRTHDAY TO MY MOM!!! She is 88 today and this is her first birthday since Dad died. Sadly she has to give up driving. Her Dr. told her it is no longer safe for her to drive and my sister and Niece have said her driving is terrible. She said she feels like a prisoner now.

Have you ever had Kamut? What is Kamut you ask? KAMUT® is a brand name for an ancient, recently revived strain of wheat known as khorasan wheat. KAMUT® is always grown organically. I had a salad when my daughter and i went to the King Arthur Flour cafe and shop back in June and it had Kamut. It was good so I went on the hunt for it. Cooked it today and it is good. It is crunchy and sort of chewey but has a nutty flavour. I mixed it with chopped lettuce, mint, cilantro and a tuna salad. I forgot to take a picture of it before I ate it. Try it!     I just cooked Kamut tonight for the first time. My kids really liked the texture, because it's more chewy than brown rice and didn't get starchy/sticky. I mixed it with lentils, zucchini and mushrooms in a coconut curry simmer sauce (from a jar). It was not very pretty, as you can imagine, but it was very tasty and filling.

I found it in a bag from the Bob's Red Mill brand. I use a lot of their products. Though I suppose it could be cheaper if you found it in the bulk bins.

    emoticon to YOUR MOM! Today would have been MY MOTHER'S 98 b'day! She died 3 yrs ago. I'm toasting her with coffee (she didn't drink alcohol) & I got jelly donuts (her favorite).

Hope your mother has a WONDERFUL B'DAY. She shouldn't mind NOT DRIVING anymore. The way the NUTS drive around here, I really wish I could AFFORD to hire my own PERSONAL DRIVER! emoticon

I did get on the treadmill on Thursday but not for long, about 15 minutes which was about 1/2 mile, not really worth mentioning.

This is my favourite breakfast, it's a recipe from Richard Simmons that I always modify somehow. It's called Apple Pancake but i added cranberries with the sliced apples and add cardamom, nutmeg and allspice to the cinnamon. This makes 2 servings so I can have the other 1/2 tomorrow.

Yummy dinner

Since I am here by myself, I make strange things for food. This is a picture of my dinner this evening. Grilled eggplant,tomato, onion and feta "stackers" with a lemon,basil, garlic and olive oil glaze, then there is the watermelon red onion, mint and feta salad with a key lime balsamic dressing. The watermelon salad was amazingly refreshing, I will post thr recipes later
