Meatless Monday

Monday, March 19, 2012

One of the teams I am on is having a Meatless Monday challenge so today I am participating. We have been eating some form of corned beef since last Thursday so it will be a nice break.
I am making Diabetic Lasagne Primavera a recipe I found on a diabetes web site. It is pretty good too.

Today's interesting Lifehacker- Hard Cooked Eggs in the Oven (Baked Eggs)

Friday, March 16, 2012

Naturally most of us think hard-boiled eggs should be boiled, but a better way to get that perfect hard-"boiled" egg may be to actually bake it, according to Alton Brown. You can bake dozens of creamier eggs at once.

Tanya at the Greetings from the Asylum blog says that the baked eggs are also less sulfurous or smelly, and reproduces Alton Brown's recipe posted on Food.com.

Corned beef today

Thursday, March 15, 2012

Since Thursday and Friday are our weekend, I cooked corned beef, cabbage, carrots, potatoes and Irish Soda bread. The corned beef is home brined since they don't sell corned beef here. (I do NOT live in the USA right now) It turned out pretty good, we've been doing that for several years now. We have plenty of leftover meat to make sandwiches, hash and several other meals. The home made saurkraut is still brining.

Sounds good. I saw Rachael Ray the other day and she showed how to brine your own beef. She has a cooking show every afternoon during the week. I just printed out the Irish Soda Bread recipe. I thought I had the recipe in my mom's old cookbook but only found a Scone recipe.
Enjoy your weekend.
