Naturally most of us think hard-boiled eggs should be boiled, but a better way to get that perfect hard-"boiled" egg may be to actually bake it, according to Alton Brown. You can bake dozens of creamier eggs at once.

Tanya at the Greetings from the Asylum blog says that the baked eggs are also less sulfurous or smelly, and reproduces Alton Brown's recipe posted on Food.com.

Corned beef today

Since Thursday and Friday are our weekend, I cooked corned beef, cabbage, carrots, potatoes and Irish Soda bread. The corned beef is home brined since they don't sell corned beef here. (I do NOT live in the USA right now) It turned out pretty good, we've been doing that for several years now. We have plenty of leftover meat to make sandwiches, hash and several other meals. The home made saurkraut is still brining.

    Sounds good. I saw Rachael Ray the other day and she showed how to brine your own beef. She has a cooking show every afternoon during the week. I just printed out the Irish Soda Bread recipe. I thought I had the recipe in my mom's old cookbook but only found a Scone recipe.
