Since Thursday and Friday are our weekend, I cooked corned beef, cabbage, carrots, potatoes and Irish Soda bread. The corned beef is home brined since they don't sell corned beef here. (I do NOT live in the USA right now) It turned out pretty good, we've been doing that for several years now. We have plenty of leftover meat to make sandwiches, hash and several other meals. The home made saurkraut is still brining.
