One goal met Ė One goal not!

How can this be? Easy in my multi challenge world.

I had my final weigh in with one of my 10 week challenges today. At the beginning of the challenge I had set a goal weight that was very reasonable, or so I thought. Then I hit a plateau for a few weeks and had a foot injury. I struggled to change my fitness routine, finally found my groove again and the pounds started coming off again.

At the beginning of this week I was very close to goal weight for the 10 week challenge, hit goal weight on Tuesday, was up .2 from goal weight on Wednesday and today was my official weigh in day. You are probably thinking I shouldnít weigh myself so often, but I donít record any of them but Thursdays. So this morning I got on the scale and didnít believe my eyes. I had lost a pound from yesterday to beat the goal weight by .8 pounds! emoticon emoticon

I stuck this in my tracker and went to look at my total lost so far since joining SP. Now I am .2 pounds away from my halfway mark. This is the goal I didnít make. The good news is I didnít think I would make it this week anyway because I had a much better overall weight loss today than expected! I now am hoping to beat that next week, but my first plateau started just .2 pounds away from the 40 pound mark so I wonít worry if I donít.

There is something about those .2 pound marks that like to mess with me.

    Before I answered you're blog I decided to do my daily weigh! I am also STUCK on 71.3,Kg have been there for ages! It will move as I am doing all the right things! Soooo frustrating. emoticon I want to be down to 70Kg/ 155lbs by the 20 of this month! So I can completly empathise with you. So nice to see it go down. emoticon

I have to weigh in i loose focus when I dont so yes it can make me crazy at time but I see the increases and it will JOLT me back

    Oh don't even get me started about the scale, I like to torture myself daily, LOL. I was at my half way goal 2 days ago now it's back up cause of some bad food but I'm still trying to enjoy it cause one way or another it's gonna come off.

Irony and recipe ingredients

I decided to try and do most of my sparking this morning as my husband and I are contemplating how to spend our day off from work. The weather is very hot and humid for the next two days so we need some air conditioned activities since we are both asthmatic and the weather is not our friend. Thankfully Friday and the weekend look like good days for us to spend outside.

So I ate my fruit salad for breakfast since I have no idea where we will be for lunch or dinner and I need to get that salad meal in for my challenge. Then I decided to read a Spark article. What pops up but a nutrition one on Salad! I found this so ironic since that is my August Challenge.

For those that wanted to know what my friendís recipe is for her Corn and Black Bean Salsa the best I can give you is her ingredients. She kind of wings some of the liquid parts and so must we I guess. Here is her list:
2 cans black beans (drained and rinsed)
2 cans corn
White vinegar (your preference)
Sriracha Sauce
Cilantro
Red Onion
Lemon or Lime Juice
Garlic
I like to use on packet of sweet n low
Tomatoes

I have also looked some recipes up on SP and have made one with my left over grilled corn on the cob Ė I prefer corn on the cob over canned.

    Thank you. I will have to google sriracha too, but intend to try this before the weekend is done. With the exception of the sriracha and cilantro I have all the other indredients in the house. Have fun today.

    Oh cilantro, mmm mmm mmm. I have no idea what Sriracha is but I'm sure I can find it, sounds like a chinese soy sauce? I have a bunch of corn on the cob that's gonna hit the grill. Thanks for the recipe.

The Corn and Black Bean Salsa

One night when I went out to eat with friends I wasnít thrilled with the salad dressing choices so my friend suggested salsa as the dressing. I thought what the heck and tired it. So yesterday when a friend from work mentioned bringing in her homemade corn and black bean salsa I thought I would try that on my salad today.

I put together a standard salad with romaine, baby spinach, carrots, cucumbers and a grilled chicken breast. I topped it with her salsa and it was so delicious I canít wait to have another.

I too make a corn and black bean salsa, but I use corn on the cob that Iíve grilled. After todayís tasty meal I will be making my salsa soon so I can try that on a salad. You know, I could use salmon on the salad in place of the chicken. That would also taste great with the salsa.

    Droooling over here. I do add beans to my salad and I have added salmon and salsa. I have never put it all together. Could you write down your recipe for the salsa.?

    Yum! Love that thought! Have tried salsa in addition to other goodies on salad, but hey, no reason not to go salsa all the way, baby! I can NEVER get enough salsa of ALL varieties, but yes, DO love it with corn & black beans too!

Salad Challenge

So one of my challengeís for the month of August is to replace one meal with a salad. Now I love salads and I can think out side the box and mix things up, but August is a long month and I wonder how I will be doing by the end of the month.

I started out the month with greens, raw onion, jalapeno cheese, and topped it with my turkey chili. This has been one of my favorite ways to eat my leftover chili for years. Tonight I grilled chicken breast for my lunch salad tomorrow. I have cucumber and tomato from our garden and will add some baby carrots. A friend from work is bringing in some corn and black bean salsa that she makes and that will be my topping.

Iím thinking fruit salad for breakfast one day and I have light Caesar salad that I will probably also add chicken to. Then I have another of my favorite salads which is just baby spinach, carrots, feta and a light Italian dressing with some grilled shrimp. And avocado on a salad will be scrumptious too!

So many choices and this is just day 2!

Oh yeah, blogging is also one of my challenges - I hope I don't run out of things to blog about....

    Yum! Love jalapeno cheese and most of those veggies...!

It's now beyond a shadow of a doubt...the same critter that has gnawed our red pepper plants to nubs has been trimming our tomato plants as well...we'll not likely see anything beyond a couple of cherry tomatoes from the inner part of the plant...sigh! I think deer must feel that raised gardens are made just for them!

    I try to have salads for lunch most days. We always have salads made with several chopped veggies for supper, and I set aside enough for a lunch. For protein, I add canned tuna, canned salmon, or leftover grilled chicken and a tablespoon of feta or blue cheese. I also try to have the lunch meal not include any kind of starch (bread, pasta, potato, etc. This becomes quite a full feeling without too many calories or fats.

Starting August off Right

As is typical in my journey, I have joined a couple of challenges. I have set goals for weight loss, inches loss, and fitness minutes for our Class Team. I had posted a thread for fitness minutes and other members asked for weight and inches threads. I also would love to get their feedback on their journey at the six month mark, which is in the middle of this month. Taking on leadership of this team has been challenging and fun. If anyone wants to jump in with me, please let me know.

For my Positive Vibes Team I have a month of blogging, tracking, poems, salad, sacrifices, smiles and other fun stuff. This will keep my busy! emoticon emoticon

This weekend was just what I needed and today is ending with a little rain, some soft music, and me creating the newsletter I have to get off to the printers this week. Iím feeling relaxed and enjoying the end of my weekend.

I hope you all set some goals for August and kick the month off right!
