3- Cheese sauce for veggies recipe

I found this recipe on Web MD. I am rather picky when it comes to my veggies and this gives a cheese recipe that you can drizzle over your veggies that might be good. I haven't tried it yet and hate to post something I haven't tried, but..... I am gonna do it anyway.


3-Cheese Sauce

Drizzle this creamy sauce over steamed veggies for a tasty change of pace.

Ingredients:

2 tablespoons of flour

1 1/4 cups of low-fat milk or fat-free half-and-half

2 ounces of part-skim Jarlsberg (or reduced-fat Swiss) cheese, grated

2 1/2 ounces of reduced-fat sharp cheddar cheese, grated

2 tablespoons of grated Parmesan cheese

1/4 teaspoon of garlic powder

1/8 teaspoon of pepper

Preparation:

1. In a small saucepan, blend flour with 2 tablespoons of the milk or half-and-half to form a smooth paste. Using a wire whisk, slowly blend in remaining milk until smooth. Simmer over medium heat, stirring constantly, until thickened.
2. Reduce heat and add cheeses, garlic powder, and pepper. Stir until well blended and cheese has melted.
3. Remove from heat and use as desired.

Yield:
6 servings

Nutritional Information:
Per serving: 99 calories, 9 g protein, 5 g carbohydrate, 4.8 g fat (3 g saturated fat, 1.4 g monounsaturated fat, 0.2 g polyunsaturated fat), 15 mg cholesterol, 0.1 g fiber, 177 mg sodium. Calories from fat: 44%.

strep throat for my birthday

Well I was really on a role with the bootcamp and doing great. Getting lots of cardio in and doing all the videos. But it all came to a screeching halt this week... since Sunday I have barely gotten out of bed. My birthday was Monday, the following day. This year for my birthday for the first time in my life, I got strep throat. I am sort of discouraged. I am out of bed for a bit today and feeling much better, but still very weak and drained. I hate it when something throws a wrench in my exercise because it is so easy for me to not get back on track again. I just keep thinking..."and I was doing so well".....
Hopefully I will continue to get better. Been on antibiotics for three days now. I am going to do my best to get back in the swing of things as soon as I am able. Although I might have to start back slowly until I am 100%. I am allergic to penicillin so I am taking a dumb Z-pack. They take forever to work it seems. Anyways, keep your fingers crossed and by Monday, be riding my butt to make sure I am doing as I should. PLEEEEEAAASE. Hope everyone is staying motivated and working towards your goals. I am doing my best....

  


feeling like I am wasting my time

I admit that until about three weeks ago I wasn't exercising as I should or really watching what I was eating. I do it for a while and then I quit. Well I gained a few pounds back, but my scale is driving me crazy. One minute it says I weigh 134 then it jumps later on to like 140. That is a big difference. So, I have no idea what I truly weigh. I guess I will weigh first thing in the morning if I can remember to do it. I am doing the new YOU Bootcamp and I am doing a good job. I am not skimping except a little on the cardio. I don't do 30 minutes every single day, but at least four or five out of seven days I am. So... why aren't any pounds coming off????? I am getting discouraged. Very discouraged and feel like I am wasting my time. I went in a few minutes ago and upped my weight in the weigh in section so I can put what it is saying right now. I will update in the AM if it changes. emoticon I know I have to stick to things and not be so sporadic, but sometimes it is hard. If my routine gets interruped, I am just off for a while after that. I am trying to stay focused, but right now I feel like no matter what I do, the weight is just going to keep on coming back. emoticon

    Hi. The title of your blog caught my eye when I was browsing the new posts. I went to your Spark Page to see how many calories you were taking in, but I see you're only tracking your cardio and strength training. Make sure you know the calorie range you should be in (before I switched to maintenance - yesterday! - my range was 1250-1500). The closer I stayed to 1250/day, the better my weight loss was. The thing that was hard for me to remember in the beginning was that I had to up my calorie intake if I was working out a lot and burning calories. So - if you're burning 200 calories in your workout, you have to add 200 calories to the minimum requirement for the day. (For me that would be minimum 1450.) If you don't do this, your body goes into starvation mode and protects itself by storing fat, not losing it. There are a couple of good articles on the site here that explain it better.

I want to encourage you to keep at it. Even if you have no time for exercise (we all have days where there just isn't enough time), stay within your calorie range and aim for the low end and at least you won't gain. You can do it.

  I know how you feel. I did the boot camp workout in January and didn't loose or gain, I stayed the same all the way around. No weight loss, no inches lost, nothing, so I am doing it gain in Feburary.
Just stick with it and you can do it!

emoticon Hmmm... I must be doing something wrong on the weight thing. I have lost seven pounds, but it keeps showing only four. I have gone in and corrected my weight twice now, but .... I must be doing it in the wrong place. I dunno.... OH well, I don't guess it matters. It just sux cuz I have worked hard to lose those seven pounds and I would much rather see that number than my four that it is showing. I was having good success and having no trouble at all staying motivated until....dum..dum....dum.... THE LONG WEEKEND. That has messed me up this week so far. I can't seem to get back on track. I have done no exercises today or yesterday. I did do some Sunday just in case I didn't get around to them on Monday though so that helps a bit, but I am not liking my feelings of absolutely NO MOTIVATION right about now. I have drank only three glasses of water today and this weekend, I actually drank none one day. Yes on Sunday I drank zero glasses of water. I had guests and we hung out and I was just bad and didn't do what I was supposed to do. I drank sodas all day long like a mad woman. Well not that many- I guess it just felt like it because I am not used to drinking them so much. I drank three or four. Ok, yes that is a lot. CRAP!!!!!!!!!!!

  


A Day of Firsts

Well today is my son's first day of kindergarten. I am sort of freaking out and want to burst into tears, so I have decided the best thing for me to do is stay very, very busy. So far today SparkPeople has saved me. Hopefully, I will keep it up every single day. I hope to drive him to school and then do exactly what I did today. Get busy and do my exercises, fill out my info., blog, etc, etc. I have been putting this off.... I want to lose some weight but lack the motivation to do it. Hopefully today will the a day of firsts for me too.... the first day that I GET OVER IT ALREADY and do something about it.
I was thin all my life and truly never understood how difficult it was for people to lose weight. I never had to worry about what I ate or whether I exercised or not. I just thought, well, if you need to lose weight, don't eat so much. LOL!!! Boy was I dumb. Now that I am struggling with lifestyle changes and body changes after my son came along, I realize there is soooo much more to it than that. I was very naive. Becoming a stay-at-home mom and leaving the work force I think had some impact on my weight, NOT that I lay around all day watching soap operas as so many like to think stay at home moms do. I work harder now than I did when I worked outside of my home. I think it is more of not having so much of a schedule. Anyways, I am rambling. I say all this to say, sparkpeople helped me keep my sanity today so far and I am grateful. Thanks Crystal for turning me on to this. Hopefully I will keep it up and get results...... Good luck everyone and btw, John Mayer is super hot. hehehe If we all want concert shirts, we have to lose a few pounds cuz his girly shirts only come in small and mediums. LOL!!! emoticon
