Mint chocolate chip cookies

This is a WW recipe. I made it today and they were delicious!

2 tbsp light butter, softened (I used a light olive oil margarine)
- 2 tsp canola oil
- 1/2 cup packed brown sugar, dark-variety (I used the Splenda brown sugar)
- 1 tsp vanilla extract
- 1/8 tsp table salt
- 1 large egg white (I used egg beaters whites)
- 3/4 cup all-purpose flour
- 1/4 tsp baking soda
- 3 oz dark mint chocolate chips, about 1/2 cup

Preheat oven to 375F.
In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.
In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.
Drop rounded half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Makes 24 servings.

Serving size is 2 cookies (they are small-I used a teaspoon instead and counted each cookie as 1 point)
Each serving = 1 Weight Watchers Point (this was for the original recipe, slightly less with my substitutions)

First snow

Today we had our first snow. We ended up with about 5 inches. The whole area ranged from a trace to 8 inches. It was beautiful, especially happening on a Saturday and not having to drive in it. I did go out and the roads were pretty much just wet since it had been warm and they had pre treated everything. Most of the afternoon I just sat and watched it falling. Where I live we used to get several nice snowfalls a year but for the last few years we haven't had more than a couple really small storms. Last time we had over a foot was in 2003 and most winters we always had several 20+ inch storms. I miss them...but I'm a huge snow lover!

    Oh, how I miss snow!!! I live in FL now, but grew up in IL and spent summers and vacations in Northern Wisconsin, about 45 minutes from where Erin grew up. Have fun with your snow!!

    Erin-I know what you mean. The schools here close without an inch on the ground and the roads come to a standstill and everything gets chaotic. We don't get it enough for people to know how to drive in it and the traffic reports are 10 minutes longs talking about all the accidents and asking everyone who doesn't need to go out to stay home. We had a blizzard in 93 and 96 (the first in 30 years and none since). 93 was in March and we had 36+ inches of snow with the cold and winds. It was on a Saturday and business were closed Monday and Tuesday still and the schools for the entire week after. But, I still love snow. My friends get so tired of me talking about snow when it's forecast :-)

    I love seeing it fall & looking at it through the front window!!

    Will wonders never cease. I thought I was the only snow lover on here. I always get flack when I talk about the beautiful snows we used to get in Northern Wisconsin. Here, they coat the streets before anything even happens and if there is two inches of snow they close the schools and the whole city comes to a stand still. In 1997, we had an actual blizzard here. It hit on Oct. 26th and none of the trees had lost their leaves yet. There were over 50,000 trees lost on just city property. They had no idea how to handle it. Power lines were down everywhere and they don't have the equipment to handle it. Hospital personnel were given rides by squad cars to work and many of them were there for days. They finally called in the National Guard who cleaned it up in no time. And the only thing that really bothered the city was that they had to cancel Halloween.

Yikes! A gain even when good

I normally go to WW on Sunday's but we were out of town. I was still off today so I got up early and went to a meeting today. I was up 2.0 pounds. I know it's not the end of the world and we all have ups and downs, but my weight loss has been really much slower lately. My Mom and oldest daughter are lifetime WW members and we all planned a great Thanksgiving dinner with wonderful, low cal dishes. I ate balanced meals, got all my good health guidelines in (except I didn't make my normal water intake-still hit the minimum, just not what I normally drink). I even did an 8K Turkey Trot on Thanksgiving day! I was sure I'd have a loss or at least maintain. Funny how our bodies respond sometimes...

I will continue to track my food, get my activity points in and hopefully will see a loss next week!


Time to go home

I'm happy to have had the last 5 days with my kids at my Mom's. We had a nice and relaxing time. We shopped, got to play a lot of games and just spend time together. We go home today, but I still have tomorrow off of work to get things done at home.

I had a wonderful day with my Mom and kids. We started the day with an 8K Turkey Trot. We did most of the cooking yesterday so today we didn't have a lot to get done and were able to relax and enjoy being with each other.
