Dinner tonight was simple but good. Inspired by Carolyn, I went through my fridge and threw everything that was left into the pressure cooker:
celery, jalepeno peppers, onion, green peppers, yellow peppers, zucchini, yellow squash, carrots, tomatoes and parsnips. I added a can of no salt added corn, four frozen boneless skinless chicken breasts and 8 oz of whole wheat penne. 20 minutes later dinner was ready...all in one pot and the chicken was fork tender.
I guess I should have taken the pic after it cooled off because it's hard to see with all the steam:
Then I made a salad-baby artisan lettuce, spinach, carrots, hard boiled egg, avocado, tomatoes, yellow peppers, cucumbers and pine nuts. It was really good!
I had a quick and healthy dinner with loads of veggies and plenty left for tomorrow.
