FREEZER CUCUMBERS

2 quarts fresh cucumbers, sliced (unpeeled)
1 large onion, thinly sliced
2 tbsp. canning salt or kosher salt (heaping)
1 1/2 cups sugar
1/2 cup vinegar


Combine cucumbers, onion and salt. Mix and allow to sit at room temperature for 2-3 hours. Do not rinse.
Stir together sugar and vinegar until dissolved. Add to cucumbers. Transfer to airtight freezer containers and freeze for up to 3 months.

this time I got gold not gray and they were both in the same time of year just 3 years apart this time i am sewing it to my body cant wait to wear it i got more wedding coming up hopefully will lose more wait

GREEK CUCUMBER DIP  
2 c. thick yogurt
1 c. cucumber, chopped finely
1 clove garlic, crushed
2 tsp. olive oil
1 tbsp. fresh dill
1 tbsp. lemon juice
To thicken yogurt, line a sieve with cheese cloth. Place the sieve over a bigger bowl. Pour yogurt in sieve and drain the yogurt (about two hours). Sprinkle salt over cucumber. Let stand 15 minutes and press dry. Combine all the ingredients in a bowl. Chill. Makes 3 cups. You can serve this with cut vegetables.

Any veggie you like can be dipped.

DEVIL DIP:

3 hard cooked eggs mashed
2 tbsp. salad dressing
2 tsp. mustard
1 c. plain yogurt
1 c. cottage cheese
1/4 c. Parmesan cheese

Blend together.
