A Quick Addendum To My Last Blog

I forgot to mention as I told you about Chef Meg's luscious offerings the almost most important part!!! Since I wrote that first blog about the recipes I've tried, I've lost 1 pound. As long as I get some exercise each day and eat only (or mostly) only these dishes.......the weight drops! If you have "The Spark Solution" it pretty well says that right out! And it works! I strongly recommend getting, reading and trying out this book!! Take 'er out for a spin! Kick the tires!! It works if you work it!! Promise!!

    I'm so glad to hear that you are dong so well with the Spark Solution Jayne!!! WooHoo!!! I followed the first couple of weeks and lost 4 lbs. It really does work! I haven't kept up with the recipes, but I am incorporating some of Chef Meg's recipes into my meal plans!!!

    I agree! I lost 20lbs on Spark Solution & now it's time for me to get back at it. I took a break because life got hectic, but I need to go back & hit it again. Those recipes are good!

So, most of you know I've been trying out some of Chef Meg's recipes and have asked about which ones I've tried and if they were good....well, here goes.
I have tried more that serve 4 or 6 or more so my DH & DS can get some benefit, too. So, recipes I've tried and love ( from the Spark Solution book):
Dijon-Herb Pork Tenderloin---yummy and easy, too!
Inside-Out Burgers ----I think I could have done better with finding some way of making them juicier and more moist with the los-fat meat.
Alfredo Pasta with Broccoli - Yummy and easy peasy!!
Baked Macaroni and Cheese - East and yummy!! DS was raised on mac & cheese ( I know, I was a hurry up mom) and he liked it fine!
Meg's Pan-Fried Chicken - Yup! Good, too!
One Dish Dinner: Chicken and Vegetables - Very good and easy!
One Dish Dinner: Southwestern Chicken and Rice - My all-time fav!! Makes more than you'd think! I ate a 1 cup serving and DS did, too. I still froze 8- 1 cup servings!
Great for go-to lunch or suppers!
Panko-Breaded Fish with Tomato Salad - If you like fish, you'll like this! I didn't care for the tomato salad, but the fish was dee-lish!
Quick Chicken Enchiladas - Very good, but it took me a long time to prep! But I am not skilled in the kitchen, so it took me awhile. I bought a rotisserie chicken and weighed out my amount and shredded it for this recipe. Sooo yummy!!
My fav. lunch of hers is the Curried Tuna. She suggests eating it like a sandwich or a wrap, but I just eat it right out of the bowl I put it together in! Love it!!
Not in the Spark Solution book, I did the ......(forget the name she gave it).....like little baked hand held Apple Pies or dumplings! Instead of using phyllo as she has, I bought canned croissants and made half the filling and rolled it up in the croissants! Had enough to do all 8!! I'm going to do this much more frequently!! No sugar added or needed!!

So here it is! I've had to type this 3 times now as it keeps disappearing! So I'll close now in fear of it going away prematurely!! Hope you try some of these!! Chef Meg is trying to teach me how to cook!!!

    mmmmmm you are making me HUNGRY! Those sound like some great dishes! I'll have to check some of them out! I'm glad that you are finding recipes that you love which are designed to be healthier!

For the burgers, we use extra lean meat and then I always add a bit of extra virgin olive oil to add in a bit more moisture. It works great and while the olive oil is calorific, the fat that comes from olive oil is healthier and it is still waaay lower calories to add a bit of olive oil to the meat than to get a higher fat meat.

    That's awesome. I rarely use recipes; I make stuff up as I go, but then it's hard to measure when I'm tracking. You've just inspired me to take the time and follow a recipe. Maybe I'll get the cook book you referenced.

A Great Weekend!

Sat., DH and I drove to Mt. Pleasant, S.C. (near Charleston), to visit my sis, and her DD & family. My niece & her husband have a beautiful, big home there where they live with their 6 yr old DD and 2 really old Veshla's (probably misspelled--sorry). They had a "mother-in-law apartment" in the downstairs for my sis and she got to have some input as to how it was done. It's sooo nice! So Sat. was mostly driving. No exercise, but there are lots of going up and down steps at their house and of course, I got to bring all the bags in and up the stairs myself. (and back down when time to leave). If I didn't search for things to do to get some exercise, I'd have been upset about it! hehe
My sis & niece are great cooks. Had some ham, some really good baked beans and homemade potato salad for supper. Visited a lot! (Haven't been there for almost 4 years!)
Sunday, they had fresh fruit and a Danish for bkfst. I only are fruit! Yay me! Lunch was the same as the day before and we went out for seafood for supper. I know this blog is sounding just like a meal plan, but honestly, we did very little but eat and talk. Just letting you know that I didn't do too bad.........until we went to a Baskin/Robbins for ice cream! Hadn't been to an ice cream shop in forever, so I went totally overboard and had 3 scoops of peanutbutter/chocolate in a waffle cone! UGH! Should have given at least 1 scoop to somebody else, I know, but that was hindsight! Always 20/20!
Monday, my niece was doing some weeding and mulching, so I picked up a bunch of sticks from a small area of her huge yard! I could have done that the whole weekend and barely made a dent in the picking up of sticks! Did a little weeding as well. Also, we ALL took a walk of about a mile! (my great-niece rode her bike, so guess we didn't ALL walk! hehe)
Monday's bkfst was a heavy one. My sis made sausage gravy and biscuits, had more fruit and hashbrowns with onions & greenpeppers ! Yum! Bkfst was late-ish, so skipped lunch for an early supper. Memorial day cookout. There were burgers & dogs, left over beans and potato salad, corn on the cob and fruit. The reason we did our meals like this was b/c we had reserve tickets to see Steve Martin and The Steep Canyon Rangers with Edie Brickell. It was a great show!!! If you like bluegrass, you'd love these guys!!! Even if you don't, you might! They are 5 extremely talented fellows!! as well, of course, as Steve and Edie! Steve was funny as usual and can he ever play a banjo!!! A great time was had by all!!
Tuesday, we had a small slice of berry Danish and coffee with my niece's DH and with my sis till John had to leave and we left about 15 minutes later. But, I thoroughly enjoyed the time with my family. They are just about all that's left! My sis is on the down side of 70 years young and I am 56 til mid July. Our parents and our brother are gone as well as all of our Aunts and Uncles. We have only each other and our own kids & their families!
I have always sort of hero-worshipped my big sissie, and now that she's living 400 miles away, we really miss each other terribly! We communicate by phone or by e-mail or even snail mail, but being together is always best. This is why I had such a great weekend!!! Spent it with loved ones I don't get to see much!
Hope everybody had as great a time, no matter who you were with or what you did!
Happy to be home and my DGD and my Bruno doggie met me at the door yesterday when we arrived!! What a fabulous welcome!
Back to normal today, with DGD. She's being especially good today and patient while I try to catch up with SPark! Oh, yeah, that's another thing I wanted to mention.... we took our laptop, but nobody could remember their password to use the network! So, it was for not. Trying to hit all the bases today. I need to figure at least an estimate of my fiber for those days for my 5% challenge and remember my fitness minutes. I know, I should have written them down, but I was mindful about all of it!

    Wow...what a nice Memorial Day...sooo wonderful you got to spend it with loved ones! We've been to Charleston several times and I totally LOVE it there! You didn't do horribly on your eating and now that you are back home you can get back in the swing of things! I'm sooo happy you shared your travels with us! We love hearing about each others comings and goings!

    What a wonderful weekend! Being with family is the best...and that "down home cookin' can't be beat! (it can be dangerous to the hips though!) It sounds like you had pretty good control over the food situation (the Baskin/Robbins gave me pause, but, what the heck it was only once....right?) Reading your weekend report made me smile, I could see the "smile" in your words. I'm glad you had such a great time. emoticon emoticon

    That's great you got to see you Sister and Niece. I have never been to SC, but I hear it is pretty. My DD has been there. Thank goodness we have the computers. It's so much easier to keep in touch with our loved ones. Terrific you had the chance to see Steve Martin. I met him when I was about 17 or 18. He was crazy as ever, and played his banjo back then. He has played for bands on a few CD's in the past few years. It's good too see he is making his own music. I'm going to check that out! I can just see Bruno's face, when he saw you. Nothing like love!!

    Sounds like a typical time when you get together with sis and other relatives you haven't seen for awhile. That's exactly how far it was for me to drive when I lived in Las Vegas and my sis lived in Santa Maria, California. But I went to see her at least once a month even though it took a bit over 6 hours each way! That's what I call true dedication! But both my sister and my mom lived there and I adored them both. I am sorry to say they have both passed on and I do not regret one minute of all the time I spent driving back and forth. They couldn't understand why I didn't do it every single week-end! Ha! I had a full-time job and a house and yard to take care of. Had dogs also, but they always went with me.

Anyway I can relate to the food and the talking -- although you did manage to throw in a little exercise. You've got some very nice memories to look back on. So don't bother to feel guilty for a minute or for a bite of it.

    I'm so glad that you had such a great time! It sounded wonderful!!! Not sure, but I think the dog you are referencing is a Vizsla which is a Hungarian Pointer dog - Vizsla translates into pointer in Hungarian. I would say that your weekend translates to me into a perfect weekend! I wouldn't worry about the Baskin Robbins trip. Like you said, it has been forever. We can't look at any food as "forbidden" or else it becomes an obsession.

Hope the rest of your week is filled with a lot of love and memories from the weekend, not to mention the new good ones with your DGD and rest of the family!

Update on me

Went to the doc this morning and got my tetanus shot and he gave me a script for an antibiotic and said to keep dressing it with antibiotic ointment till healed. I have a good bit of swelling and it's real touchy, but I can use it. Just have to remember to put on rubber gloves to wash dishes or play in the dirt (gardening)!
Haven't taken Bruno to the vet, but he really seems quite fine! We'll see. I watch him like a hawk!
Oh, the neighbor who was with me ( who owned the dog that was attacked a couple of yrs ago), called Animal Control and they came right out. The owner of the biting dog has to have her quarantined (either at his vet or at the county vacility ) for 10 days. Wouldn't you know it, his vet is also mine!! Animal control is in communication with the vet so they can be sure he actually takes her in for the 10 days! In fact, he'd already talked to him when he came back to let us know he talked to the guy yesterday. Do you know, that guy had the nerve to tell the A.C. officer that my Bruno bit him!! Poor Bruno was kind of catatonic and I never saw any teeth but from the dog doing all the biting! (Her name is Sadie and is really a pretty girl! Shame she has issues!)
So there's our update! Gotta get my antibiotics filled and get started on them!

    In Texas, dog owners are held responsible to damages if their dogs bite someone. The police will shoot a dangerous dog on sight. Can't believe the other owner said Bruno bit him and then, couldn't show anyone a bite mark! Hope you are all recovered by now! emoticon

    Yikes...I really hate to hear about this. I remember when I was a little girl and a big grey german shepherd came into our yard and attacked my little terrier who was outside alone defenseless on it's leash. That big monster shook her to death and when I found her just minutes later seeing the last of the ugly incident I couldn't sleep for weeks.

I was terribly traumatized over that act...so I can imagine how you and Bruno feel.

Shame on that dog and it's owner...shame, shame, shame! emoticon

    Glad your both ok. Is this dog considered dangerous then? Since it isn't the first time it has attacked a dog. That's to bad. The man sounds irresponsible to me. Hugs for both of you!! emoticon

    You got more of an injury than you let on.....I'm glad you saw the doc....The fact that Sadie bit you(a human) is a big strike against her... in our area, the dog is put down after the second bite.....bad pet parents put their animals in danger with their irresponsibility. The dog in our neighborhood is not a danger to humans, just other animals, but one of his "sisters" was human aggressive and went after a police officer responding to a complaint. Animal control came to pick her up a few hours after the incident. When will these people ever learn! I'm really glad you & Bruno are doing ok.

    Ugh... glad you and Bruno are okay! Stupid irresponsible pet owners think they can get away with anything they want. I hope his dog is okay, but she probably needs to be with a better owner who can work with her to get her to behave! There's no excuse to allow a dog to be aggressive!

    It sounds like both you and Bruno will be alright and that is what is important. If it were me, I would submit a copy of all of your bills to the person who owns the dog and if he doesn't pay up then take him to small claims court and add an amount for pain and suffering.

    And are they making them pay for your doctor bills? You can take them to small claims court and get money for pain and suffering on top of medical bills---sometimes people like this need to learn that it cost them to not control their animals.

Wow! Didn't realize it had been so long since I blogged! Sheesh! So weather is nice and I'm getting back in the swing, but today........ I could have done without ! So, my neighbor & I were getting in our first mile walk of the day and took my dog. If you'll recall my blog of a couple of years ago, about my friend's dog getting attacked on a walk, this is the same dog that attacked her!!! The owner had his inside door open and when the dogs saw us, they got excited and jumped against the door, which then opened! Of course, they were out before you could blink! Yes, there were 2 dogs. The one is a young, white bull dog, and he actually listened and stayed away, but the other one.....grabbed Bruno by the neck! Fortunately, he has extra skin around his neck and she didn't get to anything important. In fact, she actually didn't even break his skin, Thank God!!! But when the owner pulled her away, she lunged back at Bruno and like a good (albeit crazy) mama, I stuck my hand out to protect him! I got a pretty good scratch at the base of my left index finger and some little tooth marks on my hand, too. Gonna get a tetanus shot for just in case. Bruno has no broken skin that I can find...no blood anywhere. (Will be getting him to the vet just for a look-over to be sure he's ok) If my minor injuries prevented any to Bruno, it was more than worth it!
So now, I'm pretty well back to normal. I have cleansed my booboos , taken some ibuprophen and the adrenelin has come back to normal. I'm just wore out! Had a terrible night's sleep and then this!!! Whatever. I supposed I burned a few calories in the process! (trying to see a bright side---hehe)
Well, sorry to have drama in my first blog for a long time. Will blog again soon with nice things to report!

    Blessings to you and Bruno too. Sooo sad that this had to happen and TWICE! The neighbor should realize his dogs are excitable and keep his door LOCKED!

I'd ask him to pay for your vet bill and YOUR doctoring up bill too. Hitting him in the pocketbook might make him more mindful. The next time could cost him his dog! emoticon Glad Bruno is okay...he has a fierce momma! emoticon

    Aggressive dogs are a real nightmare! We have one in our neighborhood that got a hold on Zoey and shook her so hard I was afraid she would get her neck broken. She had a doggie jacket on, which saved her from any injuries. A few weeks later, he went after another dog and ripped a hole in the poor dog's side...the dog survived, but only after surgery and a 3 day stay at the hospital.....Both dogs were on leashes being walked by their pet parents, the bad dog (and pet parent) ran through a yard gate that is continually left open. I actually check before I take Zoey out for a walk to make sure this dog is in the house, if he's not, I will wait! I'm glad you and Bruno are OK.....

    Hey crazy mom -- you did the right thing (at least in Bruno's eyes)! What we won't go through for our beloved pets, huh? It is a fine thing when a person cannot safely walk their pet down the street/road for fear of being attacked.

I hope the owner pets a firm talking to. If he's going to have dangerous dogs, his yard should definitely be fenced. I'm a dog lover, but I have no time for mean dogs.

So happy you weren't hurt too badly. Pamper yourself a little, put your feet up and indulge in a glass of wine! TeeHee!

    These dog owners need the Dog Whisper. We are firm believers in his methods. Dogs are social animals, but need guidance. Owners need training!
