Sounds delicious..

I haven't followed that blogger; however, I saw it on THIS blog because my curiosity was piqued ( I wanted to know what to eat with my spinach salads) I just happen to love chickpeas.

Tina took those Salt & Vinegar Roasted chickpeas and added them to a spinach salad with tomatoes, cucumbers, crumbled gorgonzola, and balsamic vinegar.
The photos alone are worth a trip to her blog!!


Here's a Poppy Seed Dressing recipe. I tried looking it up on dole.com to easily share with you guys but no such luck so here it is copied right from the back of the Dole Spinach bag!

1 Cup plain low-fat yogurt
2 Tablespoons honey
1 Tablespoon fresh lemon juice
2 teaspoons poppy seed

Whisk together all ingredients until blended. Toss with dole Spinach .
Makes about 1 cup.

What else do you guys mix with your spinach salads??

    Ooooh, garbanzo beans. I love them!! Not so much the gorgonzola.
I would make a balsamic, olive oil and garlic vinaigrette for my salad.

Hmmm... I thought that the list would be longer!

I have not started my online Excel "course" for today. NAUGHTY.

My last meal was New England Clam Chowder and a salad of spinach leaves, feta cheese and spray Italian dressing. Didn't really like the spray Italian. What do you put on your Spinach or Spinach/feta combo? I never know. The Dole Spinach bag has a recipe for Poppy Seed Dressing that sounds easy.

    Doing laundry is always a great accomplishment! So is a workout at the Y.
Well, you're going to have to do a lot of work on your Excel course tomorrow.
I don't usually put dressing on my salads, but if I did I would make a balsamic, olive oil and garlic vinaigrette. Never had chia seeds so I have no idea what they taste like.

Weekend Plans

Here goes
Well, first, yesterday for the first time since? high school? I did NOT get up super early to After-Thanksgiving shop. What's happened to me. I hit my first store at 9am and really didn't get much. My surprise buy was a Cookware set that was originally ? $120ish, advertised as $19.88 after mail-in rebate during the doorbuster time however, at the checkout, two different rebates printed and it will cost me $2.95 ( plus two stamps) when the rebates are processed.. WhoopWhoop! I really just needed a new fry pan.
I do wish that I had made it to Wal-Mart for the Rubbermaid Easy Find food storage sets, and the Sandisk flash disk thingys but oh well.

I made it to the YMCA for a little workout, spent a wonderful day with my bff, and then a few of us went to hear a friend who is the lead singer in a cover band.

Saturday plans:
* Online Excel course
* ?Jillian Michael's DVD? provided I can hook up my DVD player
* YMCA

Today, I made myself eat breakfast even though I wasn't hungry. I never know if that's smart to do or not since I am rarely hungry in the morning.. esp when I eat a bag of popcorn at 4am as a "snack" when coming home from the bar. ( Better than wasting calories on bar food or drinks.. though I did have an unnecessary Diet Coke). I had a piece of marble rye toast with Skippy's crunchy peanut butter, two eggs scrambled with salt/pepper, and a 'smoothie' which was just over a cup of Crystal Light plus a small frozen pear, plus a scoop of pink-lemonade flavored powered fiber. I'll throw other ingredients in smoothies at different times ( vanilla soy protein powder, calcium chews, various other fruits, etc) but usually use the crystal light base.


Sunday plans:
* YMCA
* Return the Interview suits that were vetoed

    Sounds like good weekend plans. I hope you can get your DVD player hooked up. It shouldn't be too hard.
I'll keep my fingers crossed that you get your rebates...they don't always come (according to some people, I've never had a problem). That's excellent for the cookware.
I don't make smoothies but the Crystal Light sounds like a good base. Rye toast and peanut butter always sounds good. Did you use your new cookware for the eggs?
Have fun this weekend and don't work too hard on the Excel.

    Very good to get the YMCA info out there for people!
Good job on the workout! I have never had a White Castle burger. My Dad used to tell stories about them, though. I know they sell them in the grocery store but I'm betting they're much better fresh from the place.

The interview

I was 35+ min late from the weather/traffic/accidents this morning.. If it was up to me, I would have never scheduled myself at 8:30am but what can you do!

I met with 2 directors and the Executive admin. 1 director was very by-the-books.. all those awful "where do you see yourself in 3 years" how does your experience relate to this position.. cruddy questions. The other dude was AWESOME. He liked me immediately and was very excited to bring me on board. The executive admin liked me sooooooooooo on to my two interviews tomorrow.. I'll meet with a "regular" guy ( he's currently running some of the scheduling that I would take over) as well as a VP ( would be my bosses' boss). Very promising.. The "cool dude" told me that they didn't bring anyone else in for interviews so ??!?!?!?! And the target start date is still 11/29 ? I don't think my references have been checked and I haven't given any samples for drug testing so ?

I need to prep for tomorrow.
