We have a Fall fitness challenge starting at work on 9/9. I am probably going to jump on doing Medifast. The frequent 100-calorie packets of food don't leave me hungry and they seemed to be a better balance of nutrition than say a 100 calorie snack pack of chips/cookies/ etc.

I would like to buy a jumprope. I like the ones that have plactic lengths down the string... not just a string one. There are inexpensive ones on Amazon.com that I will need to check out.

General Mills Peanut Butter Toast Crunch

Not a fan of this new cereal. There's no zing to it, like original cinnamon toast crunch would have. For some reason, I thought it would have the zippy burst of cinnamon, in addition to the penaut butter, but it didn't.

    Cinnamon *IS* very good for you in smaller amounts (don't want to inhale the stuff!!), but come on - some of these manufacturers are slapping the word "Cinnamon" on their products as if to toot their hand and insinuate how wonderful their product is for your health....and then you can't hardly smell it, or it's the last ingredient in the list, where they essentially just threw in a couple dozen molecules of cinnamon, but not enough that one could actually notice it!!

So I find myself adding another teaspoon of cinnamon in whatever food I have, or adding it to my coffee or hot chocolate or whatever other foods I want to have the cinnamon taste (or the benefit of it - it's good for a lot of anti-inflammatory benefits as well as antibacterial I think ? or anti-microbal? some sort of anti-COOTIES!.).

Aldi's butternut squash pasta sauce

Yum yum yum. If you get a chance, pick this sauce up at Aldi's. Very smooth- tastes amazing.
Had it over garden pasta tonight.. well for lunch and them dinner leftovers! Soooo good. Its a limited time only sauce at Aldi's.. worth the trip put.

Cabbage Casserole- eeeeeeeeeeeeeeeeeeeasy

I love this recipe- It's not a diet recipe but its not bad for you!

Cabbage Casserole

2lbs. Ground beef
1 medium head cabbage, chopped
1 onion, diced
1/2 C rice ( not instant)
2 Cans tomato soup
1 Can water
salt and pepper to taste
* optional cheese slices


Brown beef and onion. Drain. In a greased casserole dish, layer chopped cabbage, beef, rice and end with layer of cabbage. In a small bowl, combine soup, water and seasoing. Pour soup mixture over all ingredients. Cover and bake at 350degrees for 1.5 hours. Optional: Uncover last few minutes and add layer of cheese slices.

    One of my faves...I use pasta sauce instead of tomato soup and no cheese, though. It also works really well in the slow cooker.

    I absolutely love this recipe. Hmmmm....perhaps I will make some tonight and use Boca burger (vegetarian). It would be almost NO calories and lots of fiber. Thanks for the reminder of this delicious dinner.
