I'm not all that inspired this week. I created a dessert recipe based on another one yesterday and plan to just throw together veggies and beans to make a basic chili in the crockpot today. Target did the hard part for Sunday's dinner as there were some close coded items on their prepared food rack. They are always so expensive so we only buy them when they have coupons stuck on them emoticon That is actually how we buy most of our meat there, close coded or on super sale.

March Goals

Last week sometime I saw that Spark was going to be hosting a 30 day Vegan Challenge. Now it looks like it is going to be changed to a Meatless challenge. But not sure if it is going to be an official challenge as last I checked it wasn't posted in Challenge Central.

I just finished reading Eat To Live by Dr Joel Fuhrman.While I do think that he has several good points, I don't know that I buy into completely how bad he believes dairy and animal protein are for our bodies. There are several nteresting recipes in the book that I want to try out.

On my own, before I read this book and blog, I have already
been working to cut down on dairy, grains, and animal protein. I am lactose intolerant so I really should be dairy free, however, I just can't seem to give up cheese and sour cream. I don't eat much yogurt as I tend to get heartburn if I eat it several days in a row. Cheese doesn't seem to bother me as much as other foods, however, I am starting to wonder if part of my congestion after meals may be related to dairy and grains.

For March I think that I am going to work on adding more raw meals into my plan as well as reducing our meat intake.

Goals for March:

emoticonContinue with at least 1 seafood meal per week for dinner
emoticonContinue with 1 new recipe per week goal
emoticonEat at least 4 totally raw meals per week
emoticonEat beans as part of a meal or as the main dish at least 4 times per week
emoticonLimit dairy consumption to 3 times per week (not quite sure how to track this... check if avoid dairy, check if eat dairy?)

Poached Salmon with Citrus Salad review

I have never been a fan of salmon but this was tolerable. I did only eat about half of my 4oz serving. I halved the recipe since I only was cooking for 2 and DH bought the wrong kind of spinach, raw but whole spinach instead of baby spinach. DH said I could make it again but he would prefer the spinach, even if it is baby, wilted with the dish instead of raw. The fish did come out nice and flaky. Since DH doesn't eat oranges all that often it was a nice treat for him. (He is lazy and won't peel them himself for some odd reason) I think I added too much oil for half the recipe to the dressing but it was still okay. I would say make sure that the oranges you are using for the juice part are well... juicy emoticon

    Actually I like sashimi too and some sushi rolls with salmon as long as it is not a huge chunk. If the raw chunk is too big I can't deal with it. I'm weird :)

Wednesday Whine....

and yes I will have some Gouda with my Whine. Weigh in shows me up 4lbs. I did change my ticker. That is 6lbs in 2 weeks and I have actually tracked more in those 2 weeks than I have in the last several months. I am hoping it is because of the strength training I have been doing and not my suspicions of a new ovarian cyst.

I did have a bad pain flare on Saturday and that was when I weighed in just to check things and saw I was up 4.5 lbs. I have been pushing water averaging 14-16 glasses a day so I don't believe it is fluid retention. I'm just going to keep on and I am back to tracking today to see how it goes. I have a new recipe planned for tonight but I have to get to the store to finish getting the ingredients as we never even when grocery shopping this past weekend. I had stopped at the store on Friday night and picked up just enough items to make it through but I didn't want to buy the greens for tonights dinner at that time.

Didn't make it to the book discussion last night as I had hoped due to work. I suddenly had 5 reports that needed to be done by the end of today. It is now down to 2 but I haven't started either of them and they will probably be problem children. Guess I better stop procrastinating.

Today is a beautiful but windy day. I hope to get out and walk around the block at least once. I did an ab workout this morning but now I must sit in front of the computer for at least a few hours.

Lentil Stew review

This came out pretty good but I ended up making modifications to the basic recipe.

The first one was that I forgot to even add the can of tomatoes as I had looked at the recipe and then pulled out everything from the cabinet but forgot the tomatoes.

The second modification I made was I used mostly unsalted chicken broth (1 quart) plus 1 cup of my own veggie broth and then 1 cup of water. I did add the salt in the recipe but I think the missing tomatoes would have added a bit more. We didn't need to add salt at the table low but we don't usually. I used the broth because in previous recipes when just cooking the lentils in water I wasn't pleased.

I used fresh veggies instead of frozen so I used 2 onions and 1/2 of a bell pepper. I added 3 small red potatoes instead of the medium potato. I also added 3 to 4 stalks of celery (including the leaves if they were okay) and about 1 to 1.5 cups of chopped carrots.

I used the cumin, salt, and bay leaf in the recipe. I also added a dash of garlic powder, some black pepper, and a sprinkle of smoked paprika.

While I am sure the original recipe would be good for some, I know our tastebuds require a bit more oophm. This was still a pretty simple meal that we ate with some bread but it would be good with rice or quinoa. I will make it again and DH requested that I add the tomatoes just to see what it would do to the flavor.

    Thats what recipes are made for----to do changes that made it more appealing for you. I like to take a basic recipe and give it my adds and minuses to it.

    Sounds delish! We usually make a bunch of lentils - with either home made broth or bullion - 1 tablespoon for 2 cups of water, some jalapeno, red pepper flakes and simmer till the consistency is pourage (sp). Amazingly easy and actually pretty tasty - hubby makes it for his lunches now - which - is really an amazing thing! Glad you found something you like!

    Sounds delish to me! LOL the lentils are pretty high in potassium, though, and so are the carrots, which for most is no problem--but I take a medication that binds potassium, plus I have CKD so I have to be careful. This, because it does not have the tomatoes (another great source of potassium, as are the carrots) includes LOTS of onions, one of my favorites, and less sodium, so it sounds like a better bet for me. Next time I am in the mood for lentils... I'm going to use your ideas to come up with my own version!
