Cooky Recipe Number 11: Teen-Time Chocolate Nut Bars

Pretty tasty and very cakey...just the way they like cookies in the early 60's I guess.


I've been busy at work but still getting my workouts in. My sister was up in the area (Santa Cruz) with her youngest to secure housing for the fall when he starts college. They were flying out of San Jose airport which is just a few miles away from my house so I took a few hours off work and had lunch with them. It was very nice. They hadn't seen our not-so-new house.
I've got my first 10K race tomorrow so I'll be heading over to pick up my packet this afternoon. My husband is running with me and my brother is doing the 2 mile walk. The packet pick up is at Road Runner Sports so we might do a little shopping and then have lunch.

Brownies look good, but yes, cakey as we've discussed. My husband would hate these. His brownies have to be super gooey to be "good."

    What first got you into cookie baking?

Back in the late 80's, I had a work assignment with programmers in Mountain View. I flew into San Jose a lot. Back then, it was a tiny airport. You had to actually go outside onto the tarmac to get into the plane -- going up outside steps just like the old timey pictures. In the course of my travels over the next couple of years, they started expanding and modernizing it (because of Silicon Valley, I assume.) I few Air West (out of business now) because they went through Phoenix. Since Arizona doesn't switch to Daylight Savings time, in the summer, they were on the same time as Central time (i.e. Texas) and that allowed you to actually make connections for a one day turn around. I actually did that a few times -- flew in the morning for a meeting in Mountain View and made it back home to Texas that evening. I was much much younger then.

4th of July Food Including Cooky Recipe Number 10: Date Bars

We had my brother and some friends over for the holiday. I made some chili. Browned the meat and onions on the stove and then threw everything in the slow cooker to cook the rest of the way....rave reviews :-)

We also had some garlic hummus with cucumbers, pita chips, falafel chips and some pringles. Some options healthier than others but you have to have some variety:

The guys had some Trader Joe's jalapeno chicken sausages but the chili was enough for me.
And for dessert, the cookies :-)

We spent most of the afternoon watching a Wheeler Dealers marathon on the Velocity channel. A nice day, but weird to have one off in the middle of the week. Messed with my head. Thursday was hard to get back to work.

    Glad you had a nice day with family and friends. The food all looks yummy, although I don't think I would have tried the falafel chips, chickpeas are too hard on my tummy, one tsp of hummus is all I can bare.
The cookies look like oat and raisin with the dates...?
At least it broke up the week. then it was the weekend- YAY!

    It all looks and sounds fantastic. I haven't had falafel chips before. I bet I'd love them. Have you had Sunshine Falafel Patties? I found them in the frozen section of the co-op. I usually don't bother with frozen versions of stuff can easily get fresh for lunch, but they're really good, even in salads.

    Sounds yummy (but doesn't look like Texas chili -- when you visit, don't tell 'em about all the veggies. LOL!) I'm partial myself to vegetarian chili -- black beans, tomatoes and lots of fresh hot chilis (like serrano) and smoked chile powder (from chipotle peppers). It ends up being pretty hot.

Cookie Cake with Bacon and Indian Buffet

A friend who had moved back east came for a visit so we met for brunch. Since I hadn't baked a cake for my BFF's birthday in May, I made it and brought along today so there would be more people to eat it.
She wanted the cookie cake...pans from Williams Sonoma. I used their recipe but made it gluten free. I put some frosting and bacon between the layers.

Here is the finished cake.

I did will at the buffet. Just one plate.

    Yeah, I know that cake.....I absolutely love those pans. Thanks for heading me in that direction. I still need to get that bundt pan I'm lusting after. What did you use for frosting? I always cheat and buy buttercream from our local bakery. I made the cake for church a couple weeks ago and garnished with mini oreos. It was a huge hit with the kids. I got this recipe from one of my close spark friends, ISLANDSHARON.
When I mentioned to her that we were going out for mediterranean food for father's day, she said that she would love some baklava and then asked if I'd ever made these cookies. These are easier to make than baklava but are very reminiscent of the flavor. They have pistachios and rosewater encased in a nice buttery cookie.

    These look like the best cookies....when are you going to find a commercial kitchen and start your side business! I love baklava! I remember being in Greece and walking down the street and peering into a shopfront/stall and the man beckoned me to come into the "back" and he had tables of fresh baklava. It was the absolute best!!!!

    These look tasty. They are made with dates here, possibly rosewater. No powdered sugar. I don't think I've ever had any with pistachios. Not really my favorite - give me baklava or similar any day. But I'm not making it! LOL

Cooky Recipe Number 9: Butterscotch Brownies and I ran a 5K Race

I just pulled these out of the oven...the recipe says to slice when warm, so I did. They smell fabulous.
I ran my second 5K this morning, the 18th Annual Run and Walk for Lupus. I did this one last year and it was my first race ever. Despite the fact that it was at least 10 degrees warmer today, I manage to take almost 2 minutes off last year's time. I saw 36:10 as I ran by the finish..official results have not been posted yet...it'll take at least a week based on last year.
I was near some kids who kind of snickered at me for stopping to walk (I did 90 seconds run and 30 seconds walk) but I passed them after the first mile and didn't see them again. Snicker all you want kids, the Galloway method does work. I may not be a speed demon but I think I did pretty well. The course was "rolling hills" and it was somewhere in the 80's.
My husband ran as well and my brother and BFF walked. Afterward we headed over to the Country Inn for brunch....all in all a nice morning.

    WOW, awesome job Nat! I can't believe anyone would snicker...that is very uncool. I ran a 10k almost a year and a half ago and there was one woman who power walked the whole thing--a bunch of us cheered for her as she crossed the finish line. Keep working the galloway method!!
