Cooky Recipe Number 5: Pineapple Cookies

We had a potluck today and this is what I brought. The recipe calls for nuts so I went with the tropical theme and added macadamia nuts. Thumbs up :-)

    OMGoodness.

I have never heard anyone have these outside of my family. My grandma used to be quite the baker and she made these a lot. Good recipe & a moist cookie.

Gluten Free Bread

As a little bit of a birthday present for my BFF (her birthday was Saturday), I baked some gluten free bread. It smelled fabulous and was pretty darn easy. I used the King Arthur Flour Gluten Free Bread Mix.
I took the day off so I could take her out to buy her some running shoes as her present and then we will be hitting up Johnny Garlics for lunch. I need to check their menu to see what looks relatively healthy.
In other news, I did a 4.5 mile run yesterday. I thought I should cut back every other week to make sure my foot/ankle/calves/peroneals were recovering nicely. They feel pretty good today so I think I'll up it to 6.5 or 7 next Sunday. Then keep alternated with 4-5 miles for a month or two. I have registered for a 5K on 6/10 and a 10K on 9/1. I'm hoping that I'll be good to do the Las Vegas RnR HM in December. I'm going to wait until later to register...I don't need another $150 shirt.
Now I'm off to do some elliptical and Slim in 6. Have a fab Monday!

    Such a nice friend you are! Funny how we always seem to do the same things. I've been working on a few different recipes lately for gluten free bread. Last night I tried Bob's Red Mill Millet Flour and Rice Flour - it was french breadsticks. I have to work on the recipe still though since the taste wasn't exactly artisan bread. I've seen the flour mixes, glad to see they work out. Homemade bread, new running shoes and Johnny Garlics (not sure what it is but if garlic is in the title I'm sold!)- I'm sure your friend had a wonderful time. emoticon

    great job on the bread! It came out very nice!!! I actually laced up this am and new that I might get wet! I didn't, but the fact that I did I had to laugh at how much I have changed! Need to start ramping up the mileage myself, I have a 5K on the 19th.

Cooky Recipe Number 4: Brown Sugar Drops Cookies

I added walnuts to these. Very tasty. They got thumbs up from my brother and husband.
Yes, I've been running. Got in 6.1 miles this morning plus a little warm up and cool down. Right calf/peroneals still get a little sore sometimes during the runs but it goes away after the first couple of miles...probably need to warm up my ankles better before heading out.
Going to be starting Slim in 6 since CLX doesn't seem to agree with my back.

Cooky Recipe Number 3: Chocolate Drop Cookies

They really go for cakey type cookies in this book. I made one of the variations and added some chocolate chips...actually I added some chocolate coffee chips. I had ordered them for Passover but they arrived on Friday and I never got a chance to use them so I decided I'd put them in my first non-Passover baking.

I spy your Cuisinart Griddler in the background. That is one of my favorite gadgets. It puts a perfect crust on a panini and makes a quick grilled chicken breast.

    I have a few more things to try this season. My California Kosher cookbook had a Passover Mousse Cake that was a hit at our seder (macaroons and like a super ganache over it, chill, no baking), and my lemon sponge cake was unsightly but delicious. The toffee recipe looks good! The trick for my family this year is portable meals/foods. I have it the easiest because I have microwave access for lunch.

I see that I've missed a few blogs! I hope to catch up with you soon!
