Today I Got My Back X-Ray'd and A New Haircut

Last night we had some chicken and Sockarooni. Open a jar of Newman's Own Sockarooni sauce and poor about 1/3 in the bottom of a slow cooker. Add 1 chopped onion and 2 boneless, skinless chicken breasts. Top with the remaining sauce. Set slow cooker on low and cook all day. I put it over quinoa and we had some green beans on the side. Some sliced olives were very tasty on top.

This morning I made one of my favorite quick Passover breakfast's, matzo pizza.

My back had been feeling a little stingy/tingly and sore yesterday so I emailed my doctor. She replied that I should not exercise and to come in for an X-ray. I stopped at Kaiser this afternoon and did just that. We'll see what shows up. I'm pretty sure there won't be anything of interest but you never know. It's been less sore and not sting/tingly at all today. Hmmm.
Then I went to my hair appointment.

I always think I look a little dorky when I try to smile in pictures.
I made some matzo brei for dinner. Sort of like french toast except with matzo instead of bread. I made mine scrambled style. Apparently it can be made pancake style whatever that is. I've seen that option on the menu at delis but have never seen it.

oh my sis's very first love interest is a foodie. so for the last 2 wks it's been about food! I found I am so lost in that dept! hahaha interesting though, my sis is a foodie (hence my pots, not mine... she cook and loves food and size 2) lol

    Hope something comes out of the X-ray! Have you ever considered a chiropractor? Not that I've ever been to one, mind you, even if my BIL is one, but it seems to work well with a lot of people.

I use 2 1/2 matzo boards, 1 egg, & 3 egg whites - pat it out in the pan & let it sit for about 5 minutes (flipping it can be interesting) - that'll get you a pancake if you want it - altho I break it up after I flip it.

Went to a Sedar Last Night and Took Today Off to Recuperate

Last night was the first night of Passover. My brother came over here after work and we went to my Aunt and Uncle's house. It was a very nice seeing them. I forgot to get pictures but we had: matzo ball soup, gefilte fish, roasted carrots and parsnips, matzo kugel with raisins, lamb and beef roasted together, and the brownies that I made. Everything was very good except the lamb and beef. I don't like lamb but since it was cooked with the beef, the beef tasted like lamb. Oh well.
We got home after midnight last night. I am very glad that my husband and I took today off of work. We were super tired. My brother didn't take the day off but he did stay over at our house so he wouldn't have to drive home when we got back from the sedar.
I got up and had coffee with my brother while he had his breakfast (matzo with mozzarella and crushed red pepper). After he left for work, I Sparked for a little bit and then thought I would try walking on the treadmill. When I got up this morning my back was a little sore. Possibly because I was sitting for a long time yesterday between the drive (60 minutes each way) and the sedar (4 hours) and I didn't get up to stretch. Just after I got into my workout clothes and went into the exercise room, the power went out. Why??? I don't know. My husband got up then because the telephone was making annoying noises because the power was out. It's a weird phone. We decided that we would go out to breakfast because we couldn't really make anything at home...at least not coffee which is very important.
We headed out. First we thought we'd go to City Diner which is about a half mile away. As we approached we noticed they had no power. We continued down the street. The traffic signals were out for quite a bit. We passed Southern Kitchen...no power. We ended up at Jimmy's which is about 1.75 miles away. I didn't take a picture but I had scrambled egg whites with country sausage (it was a humungous patty..I didn't even finish half) , hash browns and rye toast. Yes, it's Passover and if was really observant I wouldn't be eating toast. I'm not really observant and it was always my mom's rule that if you weren't at home than you could eat whatever you wanted. After we walked back (3.5 miles total according to my FitBit), the power was on so I tried walking on the treadmill. My back was still a little sore. I went a mile. I could not get a speed that was comfortable.
I baked some "Niemann Marcus" cookies from a recipe in my cookie calendar. No, they are not kosher for Passover but I did not eat any dough. My husband just took them to his friend's house...model car guys meeting.

My husband very kindly made lunch/dinner. Tandoori salmon and green beans with Bissli falafel sticks. Tasty. The green beans were almost like a green bean casserole.

After dinner I rolled my butt (pirformis), hamstrings and back on the foam roller. Wow!! That feels much better. I should have done that this morning. I will try first thing tomorrow and see how my back feels through the day. Then walk on the treadmill in the afternoon.
It's almost Wednesday!!

    Yeah I need to get one of those foam rollers. The french fries in my butt would feel a lot better :)
I'm glad you don't like lamb. Since you've been high on fat lately, that would only add fuel to the grease fire. If I eat lamb, I end up wanting carby salty things, probably to soak up all that fat.
I didn't know Nieman Marcus made such good looking cookies.

    I've really got to get me a roller . . .

My parents almost invited us down - but as DH doesn't take off & it's a 90 minute drive, we didn't go. My mom wasn't really that enthusiastic cause they just got back from CA where they winter & they're leaving on a European cruise soon. Yeah, my heart breaks.

We're not real observant but we do try to not eat bread, even when out (which is rare for us anyway) but we've decided sushi is ok.

Guess I'll never have you over for Passover cause I always make lamb!

Yikes!! I Just Registered for the San Jose Rock and Roll Half Marathon

The back was feeling very good this morning so I took it on the elliptical with me. I could feel a little pressure sometimes when I was holding on to the handlebars so then I stopped doing that. It's been very good all day. A few mild twinges...about the same as yesterday.
I promised pictures of the banana coconut muffins from yesterday:

I baked some Passover brownies for the sedar tomorrow:

We headed over to Aqui for lunch because we had two $10 certificates so lunch ended up being only about $8.
We even splurged and got the appetizer sampler: black bean dip, hummus with hot sauce, and guacamole along with tortilla chips

Yes, my husband had already started digging in :-)
I got Chicken Vera Cruz: Grilled natural chicken breast, ginger slaw, black beans, jasmine rice, sweet ancho-tomatillo sauce, papaya salsa and Serrano chile salsa.

A little too much papaya and the rice was a little crunchy but otherwise it was quite tasty.

Am I crazy? Probably but I think it'll be a lot of fun. I don't know. I've never run a race before. If there is a 5K sometime before, I think I'll do it.

Happy to hear your back is doing better. Doing is marathon is just an great experience. Just be prepared b/c when you cross that finish line you will have so many emotions at once.

That's awesome! Rock and Roll half marathon! Is there anything cool that goes with that marathon? Like there is a diva half marathon over in Long Island and like one of the things they have fire fighters greet you at the end of the run and you get a class of champaign or something like that lol.

    Ooooo! Congrats! Does that mean you'll also be doing 2 HMs in 2 months, or are you not gonna do the Las Vegas RnR? The one I'm doing in September is also RnR so if we do both, there's a special medal we'll get :)

The chicken vera cruz looks/sounds fabulous, as do the muffins!

I don't think I'm cooking anything special for Passover. I'll probably just make my matzoh/scrambled egg concoction ;)

Super Saturday

Saturday, April 16, 2011

We didn't get home until almost 12:30am so I didn't get to bed until about 1am. That is super late for me. I actually even stayed in bed until about 7 but I was awake about an hour earlier. It was just nice and cozy.
We ended up at a Mexican place last night for dinner. I got chile colorodo:

Today it was lots of laundry, groceries and vacuuming.
On our way over to Trader Joe's we stopped for some Vietnamese food. I got some BBQ pork over vermicelli. It was very tasty. I usually get the broken rice but I thought I'd change it up. This came in a bowl and had lots of lettuce, bean sprouts and basil under the noodles.

When dinner time rolled around, we walked over to City Diner. I got what they call a Denver omelet but I think it's a Western omelet because it has cheese. I forgot to take a picture when the plate came, so here are my leftovers.

I guess it's time to fold some laundry and bake some muffins (pictures tomorrow).

    That Vietnamese dish looks SO good. Pho is very popular around here, so other Vietnamese food gets neglected, but I wish it was the other way around. When I lived in Kansas City, there was a surprising amount of excellent Vietnamese food, I really miss that.
I'll just have to drool on your pictures.

    I had a great Saturday, Nat. My brother is in Canada on business and spent the weekend here with me. We went shopping yesterday for things to bring home to his two boys. We went out for lunch and I was fairly careful in my choices. Not salad, but no fries either. Had a great prime rib roast from the local butcher shop last night. My brother and husband watched hockey all afternoon and evening. My team, the Montreal Canadiens, played and won last night! Looking forward to the muffin pics. Take care and have a good day.

    I don't know how you can eat out like that, bake, and stay so slim! We had deli for lunch yesterday & while it didn't taste salty, I was soooooo thirsty all day long afterwards!

    MMM that's one of my favorite vietnamese dishes. I usually pull out half the vermicelli just to avoid too many carbs. :) you always have such yummy food pictures!
