Baked Coconut Doughnuts---Now with picture

This morning I started C25K week 4. The first few minutes of running seemed hard but the rest of the intervals were much easier. I guess I need to warm up a little more before running.
I did the 28 day challenge day 10 which was upper body. I also did 25 pushups for the JM team challenge. I guess I'll have to do 25 jumping jacks later today as that was just added to the challenge.
This morning I will be baking some coconut doughnuts. My husband loves coconut (and I like it a lot, too) and it's a King Arthur Flour recipe so it should be good.
I'l post a picture after they're done.


I guess I could use a little help in the glazing department. They were tasty. Especially with bacon. Maybe not my best food day but I'll make up for later today and the rest of the week.

Yikes! Indian Buffet for Lunch---Update with picture

In order to prepare for all that tasty food, I hike an hour on the incline trainer and did my 28 day challenge lower body video.
I will do my best to only take a little of my favorites: channa masala, palak panner, aloo gobi.
Boy, do I love Indian food. I really have a hard time resisting it. I just will have to remind myself that this is not the last Indian food I will eat, so just eat a little and enjoy.

The palak paneer was very skimpy on the spinach (upper left) so I only ate the cheese (paneer) and left the creamy sauce.

    I don't know you, but I at least know you are short and adore Indian cuisine, like me. The meal sounds wonderful. I took a 6 week Indian Cooking class from a gal in the area (from India) back in May and it was a blast - took a lot of the unknown out of trying recipes and knowing what to buy at the Indian store. She was great - a no nonsense woman who kept instilling in us the following fear-busting notions:

* Improvise! (She never follows her recipes exactly to the letter).
* Substitute! (If you don't have an ingredient, just substitute. It will be fine).

So, I have collected about 40 recipes for condiments, main dishes, soups, sides, breads, desserts, etc. from that class and worked my way through making about 2/3 of them at home since the class ended. Now, I have to count carbs so I should enter my faves into the recipe calculator and find out which will remain o.k. If you really love Indian food, see if you can find a class in your area! You'll have fun.

    I'm going out for Indian food tonight for dinner, but I'm not going to do a buffet. I worked out in anticipation of dinner, but not as much as you-that's great!!! Enjoy your dinner!!

    I'm not a fan of Indian food but if that was a Chinese buffet, I'd be in trouble! Lol! Anyways, I'm sure you'll do fine! Especially since now you know we'll be expecting you to come back here and update us on how it went ;)

28 Day Challenge Day 8

It's very much like Day 1. In fact you're supposed to do day 1, so I did. Then I added on some more cardio because 10 minutes just isn't very long and the day 1 video doesn't really get my heart rate up too much. I did manage to burn the bootcamp videos to DVD which is convenient because I don't have a laptop so it's difficult to watching streaming videos and exercise when you're computer is in another room.
So, I did a total of 40 minutes which according to my heart rate monitor burns a whopping 175 calories. Kind of sucks. Maybe I burned off a slice of toast. Sometimes I hate being short.

  


C25K Week 3 Day 3 and 28 Day Challenge Day 7

I finished the third week of C25K (and added an extra minute of running at the end for 10 minutes total) then did the 7th day of the challenge (core work). Decided to do the core after running because my back is a little iffy and I didn't want to tire it out before running.
I feel fabulous and I'm looking forward to the next week of running.
First a shower emoticon and then some dinner emoticon . After that a little cookie baking. emoticon

28 Day Challenge Day 6

I finished the 6th day which was upper body. For more fun I also did the upper body portion of Jackie Warner's Circuit Training. Then I did 50 minutes of step aerobics while watching the Thintervention I recorded this week.

    Congrats! I started day 1 today although I am on day 6 on another team. So I did 3 of the videos and felt so much energy I ran after. Isn't it a wonderful feeling.
