I woke up this morning with a nice, warm, snuggly cat beside me on one side and a nice, warm snuggly husband on the other. What a great way to start the day. I had already decided that I would elliptical in the afternoon so I wasn't trying to get up to exercise.
I had a lot to do at work in the morning. Prepping samples for the HPLC. Once it was going I had more time to get paperwork done and do a little Sparking.
My knees decided to be a little sore today, kind of on and off. Really no rhyme or reason as to why they're feeling like that. I can't attribute it to anything but I decided perhaps a day off the elliptical was what I needed.
When I got home, I started a load of laundry and ended up putting on some music and dancing around the living room while the machine was going. So I got a little exercise in, just not as intense a workout. Maybe I shouldn't have done that though, they're a little tight now. After I finish this blog, I'll go down and put some ice on them...can't hurt.
Nothing exciting for dinner tonight. I ended up having leftover chicken enchilada chili...that's the last of it. Still quite tasty.
It's been a long week. I'm looking forward to Friday.

    Hi Nat! have you tried Glucosamine/Chondroitin/MSM for your knees? my doc started me on it several years ago. it really does work. takes about 30ish days to really start feeling the benefit, but i can tell the difference.

    That IS a wonderful start to a day! Our cat is a little bugger. He wants to be fed about 4 a.m. and instead of snuggling he just walks all around the bed to wake us up.

    Simba usually comes in around 3 am or or so so I almost always have a big snuggly cat next to me . . . he didn't sleep with us on a regular basis til we moved. Strange! Of course, there's usually a snuggly dog on the other side of me, another one by my feet or knees, and poor DH almost falling off the bed.

My husband said, "Next time you make it, add some cayenne pepper." I guess I'll be making it again. He is happily taking the leftovers for lunch tomorrow and Friday.

    Do you make couscous from scratch or do you use the instant ww version? I love being able to make it in 5 min. stir-fry up some zucc. to add to it, or for a cold salad- cuc. tom and craisins :D

No Baking Wednesday

I woke up to exercise this morning but was feeling kind of dizzy. Sometimes when my sinuses get out of wack, it throws off my equilibrium. I figured it was best to go back to bed. When I woke up later, I was fine. I will do my elliptical this afternoon.
I had a meeting this morning with one of our former fellows and I gave him his cookies and also the cookies for the other fellow since they both work over at the same hospital. We were able to figure out the information I needed. I like a successful meeting.
I emailed my doctor to find out if I need to see a specialist or if she had any recommendations for me.
"Hi Natalie,
Take it easy for couple more weeks ,then start running again but gradually increase the intensity.
For couple more weeks try walking ,biking or swimming.
Dr.Joshi"
I emailed her back to let her know I'd be continuing the elliptical and walking and would start the C25K program mid February as long as the knees were feeling good. Also no jumping until then.
Apparently the mild osteo was nothing to worry about and my Vitamin D level was fine. Who knows what the problem is/was.
Tonight I'm trying out a Spark recipe for Keema. Kind of ground beef curry.

It should be very tasty. I'll make some whole wheat couscous and some stir fried veggies.
I'm super glad it's Wednesday. This week seems to be dragging. Oh well, I'll be busy with samples tomorrow.

    I bet you are thrilled that you are able to get back to running. I miss it when I don't do it. How was the Keema? The recipe looked intriguing. You might not have baked yesterday, but I did. I made oatmeal raisin cookies and soft spicy ginger cookies, too. They are my personal favourite. Of course, I ate too many, but it's just one day.

    Well I hope your knees are good to you and get back into the swing of things soon. My hubby had issues with his sinues so bad that he had to have surgery. He helped him a lot, now he can smell anything a mile away. He had headaches when his would go all wacky, but no more. Dinner sounds good, although curry can be a little too strong for me sometimes, but I had an old boss that made it just right and she would always tease me that it was made just for me! Have a great rest of your Wednesday. This week is dragging sooooo slowly.

Triple Chocolate Cookies Tuesday

I slept very well last night. I was able to get up and do 50 minutes on the elliptical. I also ended up doing some dancing around the house this afternoon. Lots of fitness minutes today.
Not too busy at work. Tomorrow I'll have to get the chemical waste together for Thursday and on Thursday I'll have the blood samples to run from the people who are starting our study this week.
I baked some triple chocolate cookies today. They will be belated Christmas presents for some of my former coworkers. A couple of doctors who were fellows in our lab and are now in practice.

The recipe came for the cookie calendar. It was actually the first one for the year. My husband said they were really, really good. I think it's because I used some better quality white chocolate chips. I got some Sunspire chips. They are much better than the Nestle.
We had some Trader Joe's chicken sausages with some of the leftover chili from last night. Sort of sausage chili dogs. Very tasty. A little broccoli on the side for green vegetable goodness. Sorry, no picture.
I'm hoping to get up early again tomorrow to workout. Elliptical again. I think I'll wait and do weights on Friday 'cos I'm still pretty sore from Monday.

I was busy making 2 batches of rice krispie treats for my dd's birthday treat for school tomorrow. Then I made a smaller pan but thick treats for us at home. Then I frosted her cake & decorated the best I could.

Chicken Enchilada Chili Monday

I had intended to get up this morning and do some elliptical and then was going to do some strength training in the afternoon. I slept really crappy last night. Lots of nightmares. I woke up at about 2 with a pounding heading and a really sore throat and decided that I should try to sleep a little more instead of getting up in a half hour to exercise. I was thinking I might even call in sick but I knew I had too much to do at work.
When I got up at 3:30, I felt a million times better. I don't know what the deal was but boy it wasn't good.
There was quite a bit of stuff for me to do at work today. I had to get binders and fiber packets ready for our new study subjects. My boss emailed me a grant proposal to proofread...twice. I had the radio streaming on the computer and got up and danced around a little while I was reading.
I did actually do some strength training when I got home. Kathy Smith Lift Weights to Lose Weight disc 1. I may try disc 2 on Friday.
As you can tell from the title, we had chicken enchilada chili for dinner tonight thanks to my friend, KISSO4BAM.

I did make a coupld of substitutions. I used black beans instead of pinto beans and I used Trader Joe's Salsa Verde instead of green enchilada sauce.
It was excellent!!! I served it with orzo because I couldn't decided if I wanted rice or pasta...have rice shaped pasta.
It turned out to be a pretty good day.

    I'm glad that you slept in - always good to get the proper sleep amounts. Sounds like you got some exercise in - dancing sounds like a fun activity while reading! Additionally, your dinner looks yummy! Such a good idea to use pasta!

    Dinner looks fabulous! When are you cooking for me? Last night we had spaghetti with my husband's homemade tomato sauce. That was so yummy and perfect for a day where the temperature never went above absolute zero!

Today's dinner is chicken and noodles with a spicy peanut sauce. I just love Thai food and could eat it every day. Hubby likes spicy food, too maybe once a week.

Mammogram this morning, my first one. I am a bit nervous, but I know it will be over quickly and it's a good thing to be doing.
