I've been busy at work and keeping up with my running. I even did a 60 day runner challenge from April to June. I didn't follow the running plan because the beginner was too easy but the intermediate was 5 days/week and I wasn't up for that. The food plan was mostly vegan. I won't stick with the vegan but I have been eating more fruits and veggies so that's a good thing. Recently, I've been enjoying the PiYo DVD set to complement my running.

Going back to December, I baked some ginger cookies for a friend's Christmas present:

We went out for New Year's Eve with some friends and I got a little dressed up:
I baked some pumpkin chocolate chip oatmeal cookies for my hairdresser for Christmas. He does such a great job and totally deserves them:
One day we were out and stopped in at Grocery Outlet. I couldn't resist taking a picture of these. I do wonder what crunchy flavor tastes like, but didn't feel the need to actually purchase them:
One of my friends had a birthday and I baked him some lemon pudding cookies with white chocolate chips and dried blueberries. They were a big hit:
For Valentine's Day, my husband made me this cute card representing all the kitties that we feed. The tabby and calico are Malika and Callie. The black ones are all feral (well…semi feral because they're kind of used to us) and the grey/white one is also a feral-ish cat that hangs out in our front yard.
On 2/15 we helped my brother move from his apartment into his fiancé's house and I brought some gf red velvet brownies as sustenance:
On the work front, we are testing out if adding fiber to the diet of dialysis patients will reduce toxins that build up in their blood. We thought that maybe making a cracker would be an easy way to eat it. These are a couple of attempts I made at home.
On the running front, I've been doing some running. Foot/ankle is still weird but kind of moved to my arch…hoping it all balances out soon….getting frustrating.
On a happy note, my birthday was on Wednesday. I deferred the part/cake baking to Saturday (yesterday). This is the cake for this year, gluten free chocolate cake with cherry glaze:
We went to Las Vegas for Thanksgiving. My in-laws moved there over the summer and wanted us to come for the holiday. We packed up the car and drove there on Wednesday before. Did some running and walking while we were there and drove back on Saturday.
On our Friday run, we went from their condo to the Pawn Stars shop and then back.
It was my brother in law's birthday on Friday as well and I baked what he requested and brought it down…..he wanted gluten free brownies with nuts. I made gluten free kitchen sink brownies and they were a big hit.

I baked regular chocolate chip cookies and chocolate chocolate chip cookies for the "Country Store" at the VA Palo Alto. The money raised from the sale if these and other things is used by the volunteer services to throw parties and stuff for the veterans.
I've been doing only a little running recently. The Morton's neuroma isn't bothering me but the top/outer ankle is doing so again….just like it did after I twisted my ankle but I haven't done that. I'm thinking it is probably really in my calf/shin and I've been working on those muscles. I have a sports massage coming up on Tuesday….I hope it gets rid if it for good so I can get back to some more running…..the exercise bike just doesn't cut it but at least it's activity.
Wow…it's been a while since I've blogged. A bit of baking, a bit of running and a trip to Colorado have occurred since I last checked in.
First, the baking.
Coconut Butter Balls
Sorry, I couldn't find the recipe online but they are pretty much a shortbread dough wrapped around a pecan half and then rolled in coconut and baked.
Brazilian Coffee Cookies…why Brazilian? I have absolutely no idea.
Non-Betty Crocker baking
Cook's Illustrated asked me to test their Gluten-Fee Birthday Cupcakes. There were no birthdays to celebrate but I baked cupcakes anyway…can't give you the recipe until it's published but here they are. Vanilla cupcakes with vanilla icing..pretty tasty but I think I'd use chocolate icing in the future for a little variety.
Kitchen Sink Brownies….I baked both standard and gluten free versions for a couple of occasions….very tasty and very decadent. Gluten free just used King Arthur Flour Gluten Free Flour and some xanthan gum to replace the AP flour and Trader Joe's gluten free Jojo's to replace Oreos.
For my niece's birthday, she requested oatmeal cookies as a gift and yellow cupcakes with coconut icing for her cake. She really likes 7-minute icing. I used the Fluffy Cherry Frosting recipe that she likes and used water in place of the cherry juice and added coconut flavor instead of cherry.
We went for a trip to Colorado for the IPMS (International Plastic Model Society) National Contest. My husband builds models and entered a few.
This won a 2nd place in hypothetical aircraft.
Sadly neither the motorcycle or the cool drug smuggling sub won anything.
We did visit Rocky Mountain National Park:
I met up with my Sparkfriend, Speedydog, for a trail run and yummy dinner but I didn't get any pics.
I did not do the San Jose RnR half marathon as planned. Exactly 2 weeks before while I was out on my 14 mile long run (and had just hit 14 miles), I managed to roll my ankle and it was not up for racing.
I'm back to running again and my ankle and foot seem pretty happy. I am not going to register for another RnR anytime soon…..they just don't seem to work out well for me.
I did get a new pair of shoes, though.
No, I don't wear them for running but they are pretty cute.

On a happy note, I signed up for the San Jose RnR HM on 10/6 and have my long run mileage up to 11 miles. On a unhappy note, I tweaked my back a few days ago....hoping it's happy so I can get back to running soon. Foam rolling my back and butt has been helping...maybe I can even run on Monday or Tuesday....if so...11 miles it will be if possible but I reserve the right to cut it short if I feel it is warranted.
