Here are the Wunder-Bar..not sure why they have that name. They are shortbread with nuts…I used pecans.

I'm not sure what these are but I baked them and took a picture.

Ginger molasses cookies

Brownies with mint chips for they model club contest

I actually won an award :-)

Matzo brittle (or matzo crack as it has been called) for Passover

Chocolate chip cookies

Gluten free lemon cake for my BFFs birthday

Gluten free chocolate cake with mint glaze for my brother's birthday

Peanut butter cookies

Anzac Biscuits for a friend's birthday…he's Australian

And lastly…..yellow cake with mocha icing for a friend's birthday yesterday :-)

I've been busy at work and keeping up with my running. I even did a 60 day runner challenge from April to June. I didn't follow the running plan because the beginner was too easy but the intermediate was 5 days/week and I wasn't up for that. The food plan was mostly vegan. I won't stick with the vegan but I have been eating more fruits and veggies so that's a good thing. Recently, I've been enjoying the PiYo DVD set to complement my running.

    I love looking at your baked goods! I would want to try the Wunder-Bars, the lemon cake, and the peanut butter cookies the most. Congrats on the 60 day running challenge, that's awesome! I feel like I've been hearing about PiYo a lot lately. They offered a few classes of it about a year ago at my gym and I really enjoyed it.     I got so excited when I saw wunder bar cookies, because ... I just came back from a trip to Canada where I got a candy bar by that name that you can only buy there (or online), but yours look scrumptious too. I wanted to get a Nanaimo bar but didn't get around to it, we had a busy sightseeing schedule.

As always, your baking looks so yummy! How do you get the gf baked goods to fluff up? All the gf I have made is flat and dense. Almost like rubber! Where did you find the Matzo Crack recipe? I'm looking for something like that for my Aunt. I think she'd link it.

Boy you sure have been busy. Glad to see you are still enjoying the running. You are doing the new Chalene Piyo? It didn't really seem user friendly to me, especially for those of us with physical limitations. I love doing pilates on the machines in the studio I go to.

It's Been a While Since I've Shown You What I've Baked and Done

When I last blogged it was the middle of December 2013. Happy New Year everybody!!
Going back to December, I baked some ginger cookies for a friend's Christmas present:

I attended my brother's fiancé's birthday and was asked to bake the cake….gluten free red velvet:

We went out for New Year's Eve with some friends and I got a little dressed up:

I baked some pumpkin chocolate chip oatmeal cookies for my hairdresser for Christmas. He does such a great job and totally deserves them:

One day we were out and stopped in at Grocery Outlet. I couldn't resist taking a picture of these. I do wonder what crunchy flavor tastes like, but didn't feel the need to actually purchase them:

One of my friends had a birthday and I baked him some lemon pudding cookies with white chocolate chips and dried blueberries. They were a big hit:

For Valentine's Day, my husband made me this cute card representing all the kitties that we feed. The tabby and calico are Malika and Callie. The black ones are all feral (well…semi feral because they're kind of used to us) and the grey/white one is also a feral-ish cat that hangs out in our front yard.

On 2/15 we helped my brother move from his apartment into his fiancé's house and I brought some gf red velvet brownies as sustenance:

On the work front, we are testing out if adding fiber to the diet of dialysis patients will reduce toxins that build up in their blood. We thought that maybe making a cracker would be an easy way to eat it. These are a couple of attempts I made at home.

On the running front, I've been doing some running. Foot/ankle is still weird but kind of moved to my arch…hoping it all balances out soon….getting frustrating.
On a happy note, my birthday was on Wednesday. I deferred the part/cake baking to Saturday (yesterday). This is the cake for this year, gluten free chocolate cake with cherry glaze:

I think that extended love recognition (with the cats) was really sweet!
I hope your foot/ankle/arch thing does get better. I think of you doing your first race sometimes when I realize that I'm really doing it and I'm past all the "I can'ts"

What's been happening since last month…..

We went to Las Vegas for Thanksgiving. My in-laws moved there over the summer and wanted us to come for the holiday. We packed up the car and drove there on Wednesday before. Did some running and walking while we were there and drove back on Saturday.
On our Friday run, we went from their condo to the Pawn Stars shop and then back.

It was my brother in law's birthday on Friday as well and I baked what he requested and brought it down…..he wanted gluten free brownies with nuts. I made gluten free kitchen sink brownies and they were a big hit.

This is a photo archived from my computer….I forgot to get a shot of the actual brownies.

I used King Arthur Flour gluten free all purpose flour instead of regular to make these treats.
For a friend's birthday, I made lemon squares.

I'm not sure if this link will work….you may have to be signed in. The recipe is from the America's Test Kitchen Family Cookbook.
I baked regular chocolate chip cookies and chocolate chocolate chip cookies for the "Country Store" at the VA Palo Alto. The money raised from the sale if these and other things is used by the volunteer services to throw parties and stuff for the veterans.

Yesterday I baked up some red velvet brownies…I thought they'd make nice holiday gifts.

This morning I baked up some super chocolate chocolate chip cookies….same recipe as the regular ones but used chocolate pudding…for these I also added 1/4C black cocoa in place of 1/4C flour……wow!!

I've been doing only a little running recently. The Morton's neuroma isn't bothering me but the top/outer ankle is doing so again….just like it did after I twisted my ankle but I haven't done that. I'm thinking it is probably really in my calf/shin and I've been working on those muscles. I have a sports massage coming up on Tuesday….I hope it gets rid if it for good so I can get back to some more running…..the exercise bike just doesn't cut it but at least it's activity.

Cooky Recipe Number 29: Coconut Butter Balls and Number 30: Brazilian Coffee Cookies

Wow…it's been a while since I've blogged. A bit of baking, a bit of running and a trip to Colorado have occurred since I last checked in.
First, the baking.
Coconut Butter Balls

Sorry, I couldn't find the recipe online but they are pretty much a shortbread dough wrapped around a pecan half and then rolled in coconut and baked.
Brazilian Coffee Cookies…why Brazilian? I have absolutely no idea.

Non-Betty Crocker baking
Cook's Illustrated asked me to test their Gluten-Fee Birthday Cupcakes. There were no birthdays to celebrate but I baked cupcakes anyway…can't give you the recipe until it's published but here they are. Vanilla cupcakes with vanilla icing..pretty tasty but I think I'd use chocolate icing in the future for a little variety.

Kitchen Sink Brownies….I baked both standard and gluten free versions for a couple of occasions….very tasty and very decadent. Gluten free just used King Arthur Flour Gluten Free Flour and some xanthan gum to replace the AP flour and Trader Joe's gluten free Jojo's to replace Oreos.

For my niece's birthday, she requested oatmeal cookies as a gift and yellow cupcakes with coconut icing for her cake. She really likes 7-minute icing. I used the Fluffy Cherry Frosting recipe that she likes and used water in place of the cherry juice and added coconut flavor instead of cherry.

She likes hers unadulterated so there was no cinnamon or cloves added.

We went for a trip to Colorado for the IPMS (International Plastic Model Society) National Contest. My husband builds models and entered a few.

This won a 2nd place in hypothetical aircraft.

Sadly neither the motorcycle or the cool drug smuggling sub won anything.
We did visit Rocky Mountain National Park:

I met up with my Sparkfriend, Speedydog, for a trail run and yummy dinner but I didn't get any pics.
I did not do the San Jose RnR half marathon as planned. Exactly 2 weeks before while I was out on my 14 mile long run (and had just hit 14 miles), I managed to roll my ankle and it was not up for racing.
I'm back to running again and my ankle and foot seem pretty happy. I am not going to register for another RnR anytime soon…..they just don't seem to work out well for me.

I did get a new pair of shoes, though.

No, I don't wear them for running but they are pretty cute.

I had a great time with you and Greg. I still think he got robbed! However, the 2nd place in Hypothetical Aircraft is impressive. After all, he was competing with the best fine scale modelers in the country. The quality of all entries was staggering! Having been a show judge at the regional level, I know that personal preference is part of judging.

    Hi Nat! glad to see that you are still baking! I have a friend who is gluten free, so I have started baking GF stuff. not from scratch though. ive been using bobs red mill mixes. I will have to test out your kitchen sink brownies though. I think she will love them!
sorry the RnRs aren't working out. and that you had to miss the one you signed up for. I hate it that you injured your ankle. is it healed now?

i just signed up for my first half marathon. its going to be fun because i have several local friends who have started running and they have signed up too.cute boots!!

Dangit, what a bummer about your ankle. I'm glad it's fixed now, but how frustrating that must have been not to race. Well, at least it's not still giving you trouble and you can wear cute boots.
I'm looking forward to gluten free recipes that will someday have ingredients I'm familiar with. Call me a picky and cynical purist, but really, I'd just like my food alternatives to actually be made with recognizable food products. That said, I bet Cook's Illustrated's recipe makes a delicious cupcake, even if they use tapioca starch and xanthum gum (whatever type of "food" those are). I used almond flour in some cookies a couple weeks ago. They were crumbly so I don't think anybody else would have liked them. We all pick our battles, I guess. I'll stop ranting on your excellent blog now. Everything looks super yummy!

    The baking looks outstanding!! You know, I've about gotten over my trigger foods and declared peace with all foods. But if I had all that sitting around, that would be a real test!! You must be VERY strong.

Colorado is one of my favourite places in the world, a hiker and climber's paradise.
Yay for your DH. Those competitions are interesting and wide-spread, makes for fun travel time. Cool you met up with a spark friend, all my spark friends still have virtual status. Except for my two friends who joined up spark because of me talking about it.

I am so glad you are up and running again. Races can be over rated, you can do virtual races on your own timeline.

Cooky Recipe Number 28: Russian Tea Cakes and more :-)

Saturday, August 10, 2013's been a month. I have done a little baking and a little running :-)
Russian Tea Cakes....yum

Watermelon flavored gluten free sugar cookies....same recipe as in the previous blog (still can't divulge since it's not publish yet) but added watermelon flavor. Big hit.

I baked a mango cake for my husband's birthday per his request. Very tasty.

Here is the recipe I used....yes, a mix.....shocking!!

And I got a new pair of kicks....Hoka One One Kailua Tarmac....very comfy :-)

On a happy note, I signed up for the San Jose RnR HM on 10/6 and have my long run mileage up to 11 miles. On a unhappy note, I tweaked my back a few days ago....hoping it's happy so I can get back to running soon. Foam rolling my back and butt has been helping...maybe I can even run on Monday or Tuesday....if so...11 miles it will be if possible but I reserve the right to cut it short if I feel it is warranted.

    How did the run go? Is your back and butt fixed?
Those shoes are so cool. They look like they have that bridge type piece like Brooks makes in their running shoes for over pronation. I've had to switch to New Balance 860 because they put less pressure on my toes. I'm so glad you don't have to worry with that.
Wow, I never would have thought of watermelon cookies. They look like a lot of fun, actually. Thanks for sharing the baking and kitty love. Those are a couple of very pretty kitties!

Russian Tea Cakes are one of my favorites. I think I gain weight just reading your blogs. You have a lovely cat.

I hope you can get your back under control. Your mileage is impressive. Good luck with your racing. I have a foam roller that helps with my aches and pains. I am glad the roller is helping.

I like your shoes. Is this a new type of shoe for you, or do you generally run on Hokas?

    I admire your distances. I have to train back up this fall and winter. My doctor wants me running only on the padded track, though, not even a treadmill, and I have to go to the shoe shop and talk to them about some foot problems I'm having.

Biking and swimming are SO much easier for me....

Never even heard of Hoka!

Give the back the rest it needs. Everything felt so much better this week with no pulled anything!

My longest run to date was yesterday's - 9 miles - and our HMs are the same weekend. We won't even go up to 10 mikes for a couple of weeks! So no need to push it. You already know you can do it. I suspect running my long runs too fast - even tho they felt fine - is what caused my knee problems.

So easy to overtrain & not even realize you're doing it.
