Early start yesterday. We took Mom to her new home today for her to have her 1st night stay. We moved all of her clothes and remaining things from our house. Lots of moving boxes and running back and forth. I unpacked her boxes from our house and Hubby hung things on her walls. We went to get her perishables at store and put those away. Came home, Hubby fixed dinner, I soaked in the whirlpool, watched a recorded soap, read about 10 minutes, called Mom to check on her, and went to bed. Up at 3:30 this a.m. (too early). I have already washed 2 loads of clothes and have one more. Waiting for daylight so I can hang them out. Stripped Mom's bed so have quite a few things to wash. Didn't spring clean that room because she had just moved in here end of February. Doing that this week, so all will be done. This morning we are going to Mom's early (cable man coming). then have to run a couple of errands for her. Say a prayer that she likes her new place and can stay there; she is 86 years old but doesn't want to live with anyone.

    My goodness, you had a busy weekend! I was wondering why you were up so early (saw your response on my blog-thanks). I did say a prayer for your mom and your family. I work with a lot of patients in your mom's age range and they get real independent and stubborn. I hope the staff looks out for her especially since she is a new resident (high risk of falls). I pray the Lord replenish your storehouse and that you will be renewed. emoticon

Today's Ruby Pound-A-Thon challenge is to be mindful of what you eat today. I sure could eat some "NOT" mindful something about now. I won't even write any of those that I could eat........I am going to get off this computer, go get a nectarine and go for a little walk.     I beat the whole hungry thing this evening. I fell asleep on the love seat. The puppies got hungry and tried waking me up. They finally had to bark at me to get me up. It's been a long week and I must have needed it! So glad you found your answer too!

Creamy Butternut Squash Soup

I found this recipe on SP this morning: Creamy Butternut Soup. I picked a large butternut squash on Wednesday from our garden. I have a busy weekend, but I am going to try to make it Saturday or Sunday.

INGREDIENTS
1 small onion
1 large butternut squash
2 small (or 1 large) apple - mine were Gala
2 carrots
4 cups vegetable broth
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp curry powder
1 bay leaf
1/2 cup almond milk

DIRECTIONS
Makes 4 generous (2 cup) servings.

Start by dicing the onion and sautéing in a tiny bit of olive oil. This is best done in a dutch oven or other large soup pot. Next, cube up all the veggies - butternut squash, apples, and carrots - and combine them in a large bowl.

Once the onions are softened and starting to brown, add the rest of the vegetables to the pot, and top with 4 cups of vegetable broth.

Add in the spices, stir, and bring to a boil. Once the soup comes to a boil, turn it down to a simmer and cover for about 15 minutes, until vegetables are very soft. If vegetables are soft and starting to break down, it's time to BLEND!

Use an immersion blender to puree the soup to a creamy, thick consistency. If you don't have an immersion blender, you can also use a regular blender (in several batches), but make sure you take the plastic knob off the top before you blend. This is key in order to release steam - otherwise you will hav e soup everywhere. Don't say I didn't warn you!

Finish the soup with a half cup of almond milk, or other milk if you prefer. I use almond milk because I love the creamy texture and consistency, and the fact that it is much lower calorie than typical dairy milk.

Stir in the milk, bring back up to a slight simmer to heat through, and serve!!

Earthquake Update

Yesterday was a zoo. Earthquake. We felt the rumble here. I was on the deck and the deck shook. I came inside and Hubby said the whole house shook and the wall hangings rattled. That seems to be the extent of our situation. My daughter PINKNFITCARLA was in more of a situation than we were. She was going to write a blog about what happened where she was. After it hit, I was on the phone and computer trying to find out if everyone was okay. I called Carla first to check on her and my phone call was the only one she had been able to get because of phone/internet signals. I was trying to reach grandkids for her and for me. Wasn't able to reach anyone for a few hours. So worried.....BUT thankfully no injuries reported for us or anyone that we actually knew. Everything was such a panic, not knowing. TODAY will be better.

    Thankfully all was well! They are finding more and more damage at places though and the aftershocks don't help! The one last night was 4.5 and had my heart racing agaim! I'm getting sleepy, but waiting for the next one. The last 2 nights we had them: 12:45 am and 1:07 am.

    My family didn't feel anything - I noticed something like a "wave" beneath my chair for a few seconds - no other shaking whatsoever ...... actually wasn't a big deal for me.....

That situation with the Washington Monument does concern me, though.....

Glad to hear that nobody close to you was injured!

    I learned something in the midst of all of that yesterday. Well a couple of things. One, we're on a plate in the East so when the earth shakes, we feel it further away than they do in the West. They have multiple plates that bump up against each other so it's more localized.

But the biggest thing that I learned that will help in the future is that it's better to send a text message. Phone calls overwhelm the network because they take up so much more bandwidth. A text message is just a little blip on the network and goes away. Although we want to chat with loved ones in a time like this, it's most important to know that they are OK and text messages would be better than none.

I'm so glad your family and mine are well. Mine are up and down the East coast. We always think of that as being safe. We've dodged one this time. I pray there won't be any more any time soon!

EARTHQUAKE

We were very near the center. Our house shook pretty bad. Our son and lots of people that we know have had things fall off the wall, drywall cracked, bricks moved on my cousin's house. WE ARE OK.

    Nancy, I'm so glad you are OK! (((Hugs))) I've been on the phone a lot this afternoon with my Dad. Mom is in pain today, hurting to much to be on the phone. They are OK, but Dad said he doesn't want to ever go through that again! I'm so glad to get online and find that you are safe too.

    I'm glad you are okay, Nancy! You are much closer to the center of it than we are here in Southern Maryland. But I did feel it and it was so scary. I live in a mobile home and I thought it was going to fall down! But thank God there was no damage around here. It was just very scary and I hope to not have to go through that again anytime soon...or ever!
