A Filling, Yet Lo-Carb Meal

I was trying to think of something green to cook for St. Patrick's Day. I had a moment of inspiration and decided to cook artichokes and mashed potatoes. When I counted my carbs for the day I was pleasantly surprised to find them way below my 45 carbs per meal limit (I think it was 40 carbs if I remember right. That included the Miracle Whip that I like to dip them in.) And I was completely stuffed and stayed full for a long time. They were so yummy and my tummy was very happy!!!! emoticon

    Ooh! Love that!! Did you mix them all together or did you scoop up the potatoes with the artichoke leaves?

    My husband is a big fan of artichokes and he is diabetic, so being lo-carb makes it a good choice for him. And being a veggie it is not high in calories either.

So close and yet.............. so far away!!!

I'm less than a half a pound away from my weightloss goal!!!!! So very, very, very close!!!! But no matter what I do, I can't seem to reach my goal!! It's like hiking up a mountain and you can see the peak right in front of you. It looks like you could touch it - but when you go around the bend there's another mountain in front of it. When will I be on top of that mountain instead of just around the bend?????? emoticon

    Thanks spark friends!!! It's great to have such a emoticon fabulous support group!!! I won't give up. I eventually want to be in the middle of my BMI. So after I lose this 1/2 a pound. I have 5 more to go and then I'll be at my ideal weight!!!!

    I remember climbing a mountain in Guatemala near the village of San Mateo. I was the one who kept holding everybody up because I couldn't breathe. Sometimes the air is thin near the top of the mountain. You gasp for breath, but there just isn't enough oxygen in it to do what you need. I made our party miss the sunrise, but the view was still well worth the journey when we got there. Just don't give up ok? You'll get this if you just keep at it.

AHHHHHHHHH...vacado!!!!!!

Saw this recipe in a magazine in the dentist office. I tried it and it IS yummy!!!!

Cut an avacado in half, remove skin & seed
Scoop tuna fish onto avacado half
Top with sliced radishes and scallions, shredded cheese and bacon bits
Drizzle with you favorite salad dressing (I used raspberry vinegiarette
(I think I also added sunflower seeds)

YUM!!!!!

AFTERBURN>>>>>>>>>>>losing weight while you sleep

Did you know that you keep burning calories even after you are done exercising? It's called AFTERBURN. I saw a BBC documentary that showed a man breath into a machine that showed how many calories he was burning while he walked on a treadmill. He was disappointed to see that he had only burned 19 calories after walking on the treadmill for 20 minutes. But the next morning they had him breath in the machine again and found he had lost an additional 49 calories while he was sleeping. They said that AFTERBURN continues for 24 hours after you exercise. The exercise is the kickstart that triggers the BURN. The more you exercise, the more you BURN - so that's why when you snooze, you lose!!!!!!! emoticon
