In August after some alarming results from my blood work, I was told my cholesterol was high again (it yo yos) and that my blood sugar was high that I might have a little bit diabetes going on. That D word scared me extremely. Thatís when "Eat to Live' found me at just the perfect time. I clicked on the icon that showed up on Facebook and learned about ETL. I ordered the book for my kindle and was reading it in seconds. It made so much sense to me that I began the 6 week challenge the middle of August as of October 1, I had lost 21 lbs. moved down into a new set of numbers and a lower BMI category! This is the biggest accomplishment in 20 years!! I was so happy; however I began to slack and put 3 lbs back on and the stuck there for 2 weeks. So I want to recommit and add increased accountability to help me stay focused and on track.

    Wow, Thanks for your encouragement . I have gotten those 3 lbs. off and I am working on losing the next 4 to make to loss 25lbs. by next week. I walked most days this week and will continue. I'm having a love affair with greens and beans!!!! Thanks again for your support. emoticon

    Great job in losing and in catching it after the 3 lb gain. Glad that you are recommitting and not giving up!!!!!!!!!!! Somehow we all get this mental thing that we can stop our healthy eating and go back to our old ways, but that's what got us in bad shape to start with, have to hit that mental switch so it says in the healthy position!

    I really liked it. Kale is a new discovery to me. I watched a video on how to make this salad using a ulu knife to massage the dressing into the leaves as you chop. I had never used the ulu my sister sent me when she was in Alaska some years ago. So I discovered something else new. The Dijon Date dressing or dip is very good too for veggies. emoticon

I love this weather, I love the color of the sky, I love the full moon and bright stars. I love fall colors orange, gold, russet, muted browns. I love fall foods, pumpkins, butternut squash, acorn squash, okra, onions, mushrooms, garlic, apples, spice tea. I love soups, stews, roasted veggies, baked banana oat bars. I love walking through leaves, hiking, bike riding, marveling at the changes of the season. I Love getting out in nature. This October is really nice, especially after a summer of record 100+ days. What a beautiful and abundant planet it is where we live, and breath and have our being.

Getting back on track.

I began the 6 week challenge the middle of August as of October 1, I had lost 21 lbs. moved down into a new decade of numbers and a new BMI category! This is the biggest accomplishment in 20 years!! I was so happy; however I began to slack and put 3 lbs back on and have been stuck there for 2 weeks. So I want to recommit and add increased accountability that will help me stay focused and on track. I have joined the "Eat to Live" group and committed to eat 4 fruits daily.

Ok, today I had leftover speedy "fried rice", and some steamed veggies from last nights' dinner. I made spinach egg cups to go in red silicone baking cups. I made asian slaw. Then I tried dressing it up by making a dragon fly, and a veggie man with limited supplies, carrots, squash black olives and red pepper. So viola - my second attempt at a nutritious, tempting bento lunch.
