I made a "free" dinner

and boy was it GOOD!!!!!!!!!!!!!!!!!!!!!

My hubby and DD loves chinese food but it is too much of a risk for me to eat anymore even though I love some of it. I really like peanut chicken and the rice noodles with cabbage and eggs in it. So I tried my gluten free home version and I have to say it was AWESOME. We won't talk about the fat and calories in it. It called for a whole can of coconut milk which is basically all fat. I did put a whole bunch of veggies in and not alot of rice noodles.

I have read over and over and over that it is good once in a while to eat more calories and basically have a free day and today was that day. I was not hungry much of the day so I am not totally freeking out about the meal but I probably have not had this many calories in a meal since I had gourmet gluten free mac and cheese after a 40 mile bike ride this summer. I even topped it off with one of the cheesecakes I made yesterday in my ramekins. Good thing I ran 6.5 miles yesterday and burned about 1200 calories during the workout.

Not looking forward to next week. I am offically moved to our new facility and there is so much stuff that is going to go on next week. I am already looking forward to next weekend.

    Good for you!! It is important to not count calories once in a while and truly ENJOY what you are eating!

    I gave myself a free weekend. I got on the scale this morning and OUCH! Back to normal now.

You have to do that once in a while. It's part of enjoying life and the fact that you don't do it all the time makes it extra special.

    Coconut milk is not as bad as people think! Coconut anything can be a very healthy addition to your diet. Just as long as your overall calories for the week are good you should have no issue. Good luck this week!

I am trying to make a deal with hubby

I have been trying to get the hubby to join me in my basement gym for the longest time. He always respectfully declines. When we first started dating we used to watch movies all the time snuggled up on the couch. I do not seem to have the patience or attention span to watch movies anymore but he still loves to watch movies.

Well, last night he actually joined me for a little bit and walked on the treadmill while I was on the elliptical and doing strength. Then I had an idea.

I made a proposal to him. If he would come downstairs with me 2 days a week, we could watch a movie down there while working out. A win, win for both of us. I will be watching a movie with him and he will be working out with me plus we will be spending time with each other. My goal is to get him to start some strength training too. He has great muscles and they are screaming to be worked (haha). It would have to be spread out over 2 days though. Some of the movies are 2 hours long and i usually cannot get started until 6 pm after I get home.

I am going to throw in a little more incentive. If we do this for the month of February, I will go to a movie at the movie theater with him, his choice.

We will see if he takes me up on it.
