Black Bean Breakfast YUMMY!

This is great to batch cook ahead of time. The recipe is just made up of things I like (black beands) and things I need to eat (eggs) but don't like...

Scramble 6 eggs with some Pam spray
then seperate equally into three bowls
sprinkle some cheese on top of each (whatever kind you use, however much you want)
pour a can of black beans into the same pan you scrambled your eggs in and bring them to a boil, the liquid will thicken a bit.
stir ALOT or they will stick/burn to the pan
seperate the cooked beans on top of the three bowls equally.
Add a LARGE tablespoon or as much as you like of Salsa on top of each bowl.
I buy the all natural no added sugar or salt just veggies in it Salsa. You have to read the labels... The one I use is a local brand called "Old San Antonio" or something like that "San Antonio Riverwalk" I don't remember the name... but it's at our Walmarts...
I put lids on the two extra bowls or Saran Wrap and then just rewarm them for 2 minutes on high. they do rewarm well, the eggs are fine and everything. I don't usually stir them around til I'm about to eat it and then it does look kinda yucky... but TASTES SO GOOD!!

This is three days of breakfasts and I promise you it is VERY VERY filling!! I drink some V8 with it and Walla, well rounded.
Try it. I HATE HATE scrambled eggs, yuck! But I can eat this!

I just realized today...

I will never eat the same as I did in the past.
I WILL eat the bad foods on occassion, and sometimes irresponsibly, but I have no problem refocusing now like I did before.
I just realized today that it's because I love who I am becoming more than I ever even liked who I was.
I love feeling better in my own skin.
I love feeling my flat belly and hip bones as I lay in bed.
I love that I have a little bit of a waist now.
I love that I can wear jeans, I have not been able to wear since before my 4yr old was born... I need new jeans (-;
I love that I can still have fun, drink margaritas and eat fried catfish and chips and cheese and feel like crap the next morning... It reminds me that my body, does not like those things... (who listens though?)

What more motivation do I need?

If I screw up a meal or a snack or a day, who cares? I still have the next meal, the next snack or the next day to make better choices.

I did not lose any weight this week, but I KNOW I'm thinner, because I pulled those jeans on easily this week and could not even button them last week! Weird, but I'm sure it will just take a few weeks for my exercising to work with me on the numbers.

This is working for me!! It may not be ideal or "right" but it's all I can do and it seems to work!!

    Hey there. Just wanted to check in and see how you are doing. I broke down this past weekend and drank too much beer while camping at Flaming Gorge---- oh well, it was fun!!! Need to get back on track now-- working toward losing at least 15 pounds before I go to San Diego in August to see my parents. Let me know what is new in Texas.

    YYYYAAAAYYYY!!!! Don't you love that when your laying there and it seems like somethings missing, and it is the extra weight!! Gone!! It is so exciting!!! I am back up and exercising again!!! I did really bad the other day eating, but same as you said, I have not been nearly as hard on myself!!! This is FUN!!!!

Blog Smog...

I don't really like to blog, but I thought I would write a little today about my "so far ness..."
I am currently trying harder than ever. I am working out on my elliptical and my little home gym system, along with "playing" with the Wii Fit. I feel the difference, but I need to eat a little better to weigh a little less I guess. I need more fruits and veggies. I just can't seem to get them in?? I like the V8, but know it's not good to drink your veggies!
Any comments or tips would be welcomed!

    I am horrible with the fruits and veggies, I have been buying a variety at the store, plums, peaches, strawberries, oranges all of em....and I make myself do know when you have as many kids as we do, none of it ever goes to waste!!!!!

    I'm with you that it's hard to get 4.5 cups of veg in every day. I made mock mashed potatoes which is pureed cauliflower that I can spoon up to get them all in. I also drink V8 now and then. I made a veg frittata yesterday which is kind of like an omelet, but cooked in the oven. Very tasty and it lasted for 2 meals. Just whatever is in your fridge could be put in an omelet or frittata. I eat drive-through salads when on the road. I'm home a lot now and it's harder to get motivated to compose a salad. Hmmm

    Do you like to cook? There are several cookbooks out there right now about ways of sneaking your veggies in. I'm planning to buy one of them this week, I've been looking at it for a while.

V8 is better than no fruits or veggies, to be sure; I think it's high in sodium, but not sure.

Do you like smoothies? Simple to make, good way to get in your calcium & fruit -- even veggies. Believe it or not, adding greens to it won't change the taste. I put spinach or kale in my smoothies sometimes -- and even DH drinks it, & he is decidedly not a greens person! I just use soymilk, 1 c strawberries, 1 banana (I freeze the fruit, which makes it thicker). Add a tablespoon of peanut butter, and you've got yourself a breakfast in a glass. Fast & easy! They say it's better to eat your fruit than drink it, but it's better than not eating any fruit!

How about fruit salad? I did one the other day where you mix about 1/4 c yogurt with a couple of tablespoons of coconut, then just mix that with pineapple, kiwi, & banana (or whatever you enjoy).

What sorts of veggies do you like?

160 here I come

Okey as much as I love living and eating great Mexican food. I am really going to try to avoid it til I hit 160.
I have a challenge and I am going to take it seriously. I want that trophy!
The just live life and have fun me can return after I hit 160 and stick around for awhile until I set another little goal...
I'm not saying I won't eat "bad food."
But I promise I will try harder not to til I hit 160!!!

    emoticon WE can do this. Thanks so much for the boost on my blog, by the way. I feel your pain when it comes to mex food. Yesterday it took all I had to turn down my friends when they headed out for mex food. I headed out and got a salad. I am excited to watch each day as you get closer to your next goal. 160 pounds is within your reach.

    I understand how hard the mexican food (and margaritas) can be to a diet. I think the only things I have found I can do is a taco salad with chicken (skipping the shell) and fajitas (again skipping the shell). Which all of that can be frustrating! Hang in there!

While you're abstaining from Mexican food, maybe it's also time to research which options at a Mexican restaurant are better choices, so you're all prepared when you go again.

I know how you feel . . . I've been wanting to go to Serranos, but that can be dangerous!

I'd like to get to 159, just to say I'm out of the 160s, but it will probably take a while. I bet you hit 160 before I do -- that younger metabolism, after all. emoticon

    I LOVE the cake! So today is the big day for the wii fit! I may have to wait til next week though, got a lot of bills and my oldest bday is the 26! she will be 12. I know I can not wait to get it!
