After we went to grocery store I was tired so I took a nap and never got my blog done or checked teams or friends.
I wanted to get a fennel and try it but they had none.Hubby is going to look tomorrow somewhere else. But I did get 2 new veggies to try. One is a white eggplant and one is a small squash thing I have never fixed.delicata squash from Ohio
Tonight is every man for himself and I made something for me that hubby won't eat. It is a creation I just came up with. I made a seafood gumbo type thing. i threw in cabbage ,onion, fresh okra cut in good size pieces,shrimp,small piece of fish cut up.some crab claw meat and can of tomatos I blended in food chopper.Added thyme,origano and chilli powder. Plus 1 cup of home made chicken broth.Let it simmer and I am going to eat it shortly.It made a huge pan and the calorie count is only 558 but I will boost it up to 600 incase I forgot anything.It smells great and I tasted broth which was good.
I also got chicken thighs on sale 2 for one and deboned and skined them all. Wrapped and weighted each one before putting in freezer.Threw the skins and bones in a pot of water with some celery and onions and cooked some broth while I messed with my seafood dish. The bones had some meat on them and broth looks good.Using skin makes it fatter but I will let it cool and skim off fat.
So that is my day.Again nothing exciting. Well my seafood stew soup gumbo or whatever is waiting.
