I have always been partial to Saturdays. Yesterday it was fun to wake up to Elizabeth, right in my face, wondering what we were going to do with our day. It was 6:30 AM and I didn't even care. I could wake up to that face every day of the year!

    Hi Eleni, like the pictures. i hope you have a better day tomorrow (sunday) friday it was cold -5 but today it snow and now it,s 2 so it is better but it suppose to be cold again and snow again.oh well i,m taking it easy tomorrow. today glen decided we were going shopping today just incase tomorrow was nasty. so went grocery shopping and than we all had some fried fish and a salad. it ewas very good. haddock and i had haddock and a cod cod was 3 small pieces so i gave one to glen and dad too. so tomorrow i,ll get my crock pot out and chicken and veggies onions celery and throw it all in.what ever i can find.aeh! take care and have a super day! hugs emoticon emoticon emoticon

10 Easy Ways to Lighten Up Any Recipe
Boost Nutrition and Cut Calories in the Kitchen

Choosing healthy foods is an important part of eating right, but cooking them in a healthful way is another huge part. For example, zucchini can take on two completely different forms when it's quickly sautéed in olive oil versus battered and deep fried. What we add to foods makes all the difference when it comes to home cooking.

The first step to healthier cooking is to take recipes as suggestions. Before you start chopping and mixing, scan the recipe to see if there are any unnecessary calories. Look for excess cheese, butter and oils, as well as sugars.

Here are some tasty, healthy ideas to help you become a professional recipe overhauler!
1. Sauté—the skinny way! A couple of tablespoons of low-sodium vegetable broth can be used instead of oil or butter in your stir fry or as the basis for a sauce. This method will add a nice flavor to your dish as well as a little moisture—and you'll save calories to use elsewhere. To get a dose of unsaturated fats, serve your broth-sautéed veggies with a side salad, and pour an olive oil-based dressing over the top.
2. Say no to skin. Three ounces of chicken breast meat with skin has almost 150 calories; three ounces of chicken without the skin has 50 fewer calories. Tasty as it might be, the skin contains mostly heart-unhealthy saturated fat. You can cook with the skin on to retain moisture (add fresh herbs or citrus zest underneath it to really bake in some flavor), but be sure to remove the skin before you enjoy your meal to save on calories and saturated fat.
3. Squeeze on the citrus. To add a powerful flavor punch with minimal added calories, use citrus on steamed veggies instead of butter or over a salad instead of a dressing. It’s even great on fruit salad in place of sugar and adds some zip when squeezed onto a pasta salad. Don’t forget to use the flavorful zest of citrus fruits as well! Wash a lemon, orange or lime, then use a zester or grater to add the zest to dishes such as baked seafood.
4. Be choosy about cheese. When using a mildly flavored cheese, such as Monterey Jack, you need more cheese to taste it. But when you choose a cheese with intense flavor, you can use less and still get the desired effect. Try a reduced-sodium feta, sharp Cheddar or aged Parmesan next time. Light cheese wedges such as The Laughing Cow brand are useful when you're watching fat and calories, too. Try mixing one of these soft cheeses into your scrambled eggs or noodle dishes instead of loading on the shredded mozzarella.
5. Go Greek. Tangy, fat-free Greek yogurt is a healthful replacement for sour cream. Try this switch in herbed and spiced dips, tacos, nachos, enchiladas, or throw it in a cooked dish as a thickening agent. You’ll save 45 calories for each 2-tablespoon serving.
6. Puree your produce. Add body to soups and sauces with pureed vegetables instead of heavy cream, evaporated milk, butter or cheese. This move will also add fiber and nutrients to your dish for very few calories. A puree of carrots will add texture to meatless spaghetti sauce, and mixing a blend of beans into a chili or soup will add flavor and thicken it—all with very few added calories. In this recipe, Chef Meg thickens a taco soup with chickpeas!
7. Get cozy with cottage cheese. When a recipe calls for a significant amount of a crumbled cheese, such as feta or ricotta, substitute half the amount with reduced-fat cottage cheese. This will retain taste, texture, protein, and calcium while ditching some of the fat and calories. This works well for stuffed peppers and most baked pasta dishes.
8. Pump up the veggies! You can easily reach the recommended five servings of fruits and veggies when you’re cooking at home. Veggies can compliment any dish on your menu, adding nutrient-packed bulk to the meal for few calories. Add chopped asparagus and
mushrooms to your next omelet, red peppers (or a frozen stir fry mix) to baked casseroles, or any kind of beans to a pasta salad. Include fresh or frozen spinach in pasta sauces and soups, and broccoli in your casseroles. The opportunities for adding veggies are endless for almost any dish!
9. Cut the cream. When making cream-based soups, sub fat-free half-and-half for any heavy cream. The switch gives the soups a creamy taste and velvety texture without all the saturated fat of heavy cream. This works great in pasta sauces as well.
10. Make your own marinade. Marinate lean meats in vinegar and citrus combos (with a bit of oil added) rather than a pre-made oil-based dressing. You can also try a fruit juice or wine. These agents will still tenderize and flavor the meat, and a mix of herbs and spices will bring out the flavor! (You'll also save sodium by not using the store-bought varieties!) Try cutting the meat in strips before dousing it to really let the marinade take effect.
As you can see, there are endless ways you can boost the nutrition and reduce the calories of almost any recipe. Get creative and experiment in the kitchen. You may just find that you like these new ways of cooking just as much—or even better!

We had Elizabeth overnight last night and about 10, I said, "Don't you think it's time to think about going to sleep?" She said, "No, Gramma, I'm not tired." I went out to the kitchen to get her some milk, came right back (less than a minute) and she was sound asleep. She just hates to give up for fear she may miss something.

Abigail seems she likes fining new places to lay down. not that crazy with sad face either she always happy little girl.well yes i,m going to rest saturday. shopping on sunday and i want to cook that chicken in crock pot with lots of veggies.i,ll use chicken or veggie stock.one more day of this extra work is monday i hope if bosses son get home if they don,t keep him in mexico heehee.we had snow tonight around 6pm and when we left pickseed around 8.30 it was still snowing.i had a good week with no snow after rain chased it away.it had to come back i could give you some. emoticon emoticon emoticon well off to the big chair for tv and dr, oz than bed bye big hugs emoticon

Been a lazy day. But every day is a lazy day.
called doc about itching and he said it would get better. I hope so. It has been better this afternoon.
A childhood friend called me back today. I had left her a message as I hadn't heard from her in awhile. We were best friends as teens but lost track after I quit school and got married. It took 40 years for us to find each other.
Bill and Roxy were so funny on couch I had to take some pictures. She was bound and determined she was getting in his lap.She did not look comfortable until they started falling asleep. She tries to give him a kiss in one pic.Last pic they are both zonked.

Isn't it fun to touch base with old friends? If you were really close at one time, you can talk to each other as if no time had gone by..........you just pick up where you left off. I had a call this morning from a friend from Ohio. She and I met when we were in 7th grade and have kept in touch sporadically since High School graduation. She had knee replacement and I had talked her through my experience and she scheduled hers because I had had such good luck with mine. Hers was done on January 9 and now she is recuperating at a facility where she gets daily therapy. Her husband passed away suddenly last Christmas and she lives alone in a condo with many steps, so she could NOT go home right after the surgery.
Roxy is the luckiest dog in the world. What a wonderful home she found with you and Bill.

Soup Making Day

Today was day to make my soup for freezer. Took longer this time as I had to count all calories. I must have used less veggies as I was 6 cups short. But each bag with 2 cups is only 65 calories so I have plenty of room to add extra veggies when I eat it. Which I always do anyway. I always keep a few bags of frozen veggies in freezer. I also keep a small jar with tomato paste and add a touch of that when I heat my soup.
Bill has starting doing some actual cooking lately. Even plans for what he is going to cook. He is making meatloaf tonight. He is planning on making a big one so he can have some for sandwiches. Will make it hard for me to count calories. I will have to go to calorie king and figure out an average. I know it has a lot of calories but if he is cooking I will eat it. He eats anything I fix so I will too. I hope I don't have to pretend to like it.I offered a couple of tips and he is too stubborn to listen. So I just let him do his thing.
The back of my knees are still itchy but not as bad as yesterday.
Bill took the last Christmas tree down. Brianna usually does it but she has been sick for a long time.I think Angel and Brianna are just passing it back and forth.
Nothing much going on.
I did get Bill a new bowling ball for a combo Christmas and birthday present. he picks it up tomorrow. He is excited to try it out. emoticon

You and I were making soup on the same day. I wish it could have been in the same kitchen........it would have been a lot more fun!!!
Good for Bill.........he may end up liking to cook, like Ken. Ken loves to cook, but hates to clean up so we are working on that end of it. I loved your line about "hoping you didn't have to pretend to like it." That is so difficult because I DO NOT have a poker face.

    well there is some meat loaf left in fridge. so i won,t want any more for a long time. i think fish this weekend.and sunday a chicken stew. if i had someone here to cook for me i,d eat it too unless it looks awful. glad Bill likes cooking gives you a break.well today i,m more tired out from work so hopefully thursday and friday goes better.of to my big chair to watch a little tv and than bed ahhhh! emoticon emoticon emoticon emoticon

    I need new bowling shoes but I hate going shopping. I tried ordering some online and they were terrible. I always get myself a Christmas gift and this year I bought an Aero-garden and I am trying to grow cherry tomatoes in it. It is a hydroponic garden and I have it at work. It has been planted for 36 days and flowers are starting to appear. Hope I have some tomatoes soon. emoticon emoticon

Another Short Blog

Went to dermatologist today. Doc said the yeast infection is much better. Told me to add cortisone 10 and use both ointment. It started itching last night. Never did that and it is driving me nuts.Nothing like an itch you can't scratch.
Bill is gloating big time. The last time we went together i got 1 small zap and he got over 30. This time I got the same small zap and he got none. But doc told him he would probably get a bunch in 6 months.
I am sure we were a funny site when he checked the back of my legs. He had me leaned over exam table and Bill held up the back of my dress and doc was sitting on floor. What a sight that would have been if anyone walked in room. emoticon
I still haven't answered the comments from yesterday's blog.Will try to catch up tomorrow. Even tho I haven't responded I have read them all and thank you very much.

    glad the scales is moving slow for you better than not. got you something for the yeast infection i use yogurt for it. but you could have it from all of your pills? well i got day 2 done oh my goodness will we make it til next monday. i enjoy it when we cantake our time at work instead of a big rush.now if the weather stays cold and no snow will be happy til he gets back from holidays .that is after monday night than it can do what ever it wants to.normally i just sweep floors and vacume but when he not here the boss,s son i got to wash the floor too and desk and garbage and all.well i,m going to play a few games and than watch tv.hugs hope you have a good day tomorrow. emoticon emoticon emoticon

  Hi Eleni.........
Your description of you and Bill and the Dr. in the examining room reminded me of my Dad at the VA Hospital. He had on one of those wonderful hospital gowns and thought he had tied all of the ties so they wouldn't come loose. He was on a treadmill for a stress test and as he grew more tired, he bent over more and managed to moon everyone behind him (much to his extreme embarrassment, as he was a very private man and didn't want his privates on display!). We loved teasing him about it because for once, he was the one that was the "Butt" of the joke!!!
