We are finally getting some much needed rain. It has been a good steady rain all afternoon. Had to force myself to get up from my nap.It was so nice listening to the rain and no sunshine shining thru window. This is kind of rain that will soak into our dry sand.
The butternut fries turned out good. I was afraid they would be sweet like sweet potato fries which I am not crazy about. My new cutter should be here in a couple of days.It is a handy tool.I had to laugh when I saw I had the little one but no idea what it was for until I saw the show.I must have decided it would come in handy one day. I did learn one mistake I was making when baking any fries. I haven't been drying then real well before putting on pan.It does seem to make a difference.
I did good with eating yesterday and today so far.As I said I have gone back to eating a bigger breakfast and I think it does help overall. I also did more exercises today.So I am doing better. No big dramas lately so that does help.Hope I don't regret saying that.
Ok here is the recipe for Baked Butternut squash Fries by Hungry Girl
BAKE-TASTIC BUTTERNUT SQUASH FRIES
1 butternut squash (large enough to yield 1 pound once peeled and sliced)
1/8 teaspoon coarse salt, plus more, optional
• Ketchup, as dip, optional
Preheat the oven to 425 degrees F. ( I was in hurry and I used 500 deg)
Peel squash with a vegetable peeler. Slice the ends off the squash, and then cut it in half width-wise. Cut the round bottom piece in half lengthwise and scoop out the seeds.
Using a crinkle cutter or a knife, carefully cut squash into spears or French-fry shapes. Thoroughly blot moisture away with paper towels, and sprinkle evenly with salt. ( i also used some spices on mine) ( I sprayed fries with pam first)
Spray a broiler pan, a baking rack placed over a baking sheet, or a baking sheet with nonstick spray, and then place spears flat on it.
Bake in the oven 20 minutes, and then carefully flip spears. Continue to bake until tender on the inside and crispy on the outside, about 20 minutes longer.
Serve with ketchup for dipping, if using. Enjoy! I did not use ketchup

I didn't use this calorie count. I weighed my fries and got calories.
Ok i have to get my supper ready to go in oven. I do cook a lot in the oven.
