Rainy Afternoon and Recipe for Baked Butternut Squash Fries

We are finally getting some much needed rain. It has been a good steady rain all afternoon. Had to force myself to get up from my nap.It was so nice listening to the rain and no sunshine shining thru window. This is kind of rain that will soak into our dry sand.
The butternut fries turned out good. I was afraid they would be sweet like sweet potato fries which I am not crazy about. My new cutter should be here in a couple of days.It is a handy tool.I had to laugh when I saw I had the little one but no idea what it was for until I saw the show.I must have decided it would come in handy one day. I did learn one mistake I was making when baking any fries. I haven't been drying then real well before putting on pan.It does seem to make a difference.
I did good with eating yesterday and today so far.As I said I have gone back to eating a bigger breakfast and I think it does help overall. I also did more exercises today.So I am doing better. No big dramas lately so that does help.Hope I don't regret saying that.
Ok here is the recipe for Baked Butternut squash Fries by Hungry Girl

BAKE-TASTIC BUTTERNUT SQUASH FRIES
Ingredients
1 butternut squash (large enough to yield 1 pound once peeled and sliced)
1/8 teaspoon coarse salt, plus more, optional
Ketchup, as dip, optional
Directions
Preheat the oven to 425 degrees F. ( I was in hurry and I used 500 deg)
Peel squash with a vegetable peeler. Slice the ends off the squash, and then cut it in half width-wise. Cut the round bottom piece in half lengthwise and scoop out the seeds.
Using a crinkle cutter or a knife, carefully cut squash into spears or French-fry shapes. Thoroughly blot moisture away with paper towels, and sprinkle evenly with salt. ( i also used some spices on mine) ( I sprayed fries with pam first)
Spray a broiler pan, a baking rack placed over a baking sheet, or a baking sheet with nonstick spray, and then place spears flat on it.
Bake in the oven 20 minutes, and then carefully flip spears. Continue to bake until tender on the inside and crispy on the outside, about 20 minutes longer.
Serve with ketchup for dipping, if using. Enjoy! I did not use ketchup
PER SERVING (entire recipe): 204 calories, less than1g fat, 258mg sodium, 53g carbs, 9g fiber, 10g sugars, 4g protein
I didn't use this calorie count. I weighed my fries and got calories.

Ok i have to get my supper ready to go in oven. I do cook a lot in the oven.

    Thanks for the recipe. I'll try it, and think it will be great because the BW loves butternlut squash. I baked rolls, and have more dough, but it came to me that this isn't the best time of year to bake things. Oh well - the world will probably outlast me.

We got just a short hard rain down here...we really need it but when it rains we have to close the back door of the gallery and it gets stuffy in no time. The big commercial fans help some but it seems only when both doors are open (showroom and warehouse section) for the cross current. I really HATE the summers here when you are trying to run a business that depends on the weather being good...DH is starting a few pool decks this week and concrete and rain surely DON'T mix. emoticon

    I have never heard of butternut squash fries. I'll have to try that recipe. Wish we could have sent some of our rain to you--we've had much more than we needed. Although I'm sure in another month or so it will be so dry and rain-less that everything will shrivel up!!

Starting Over Again Today

I have been taking it easy as much as I could today. Bill being home 5 days wore me out. I love spending time with him but I tend to do more than usual.
I have found a new kitchen gadget.Actually it isn't new.I have had it but didn't know what to use it for. i don't even remember how I got it. But I accidentally found the Hungry Girl show on Food network. She was showing how to make crinkle cut butternut squash oven fries. I saw the tool and thought to myself.MMM I may have one. Sure enough.I did but it is a small one. I am going to make the butternut squash fries in oven tonight to test them out. 7 cal per oz is a lot better than 22 cal an oz for potatoes. This cutter is only 3 inches across. I just ordered a bigger one on Amazon that is 7 inches across. This little one is only 3 1/2 high and new one will be 5 1/2.

I have started anew on my weight loss again. I have done good so far.Started eating a bigger breakfast to see if that will make a difference. I was going to get some oatmeal packact but got instant grits instead. The southern way to eat grits is to put a over easy egg on top of grits and mix it up. This is the least amount of calories as cheese grits are to die for but can't do that.
I was planning to only have my soup and a small salad but Bill being nice messed me up some.He called to see if I wanted a sub for lunch and I said no. After he gets in house he realized he had got mine afterall.Just habit. So I had the sandwich and small bowl of my soup.
Tonight is all veggies in oven so I should be able to eat a lot for few calories. I will let you know how the butternut squash turns out. I rarely like the substitute stuff. Like the mock mashed potatoes from cauliflower.They taste like cauliflower to me.
Ok I need to start getting everything in oven.I have Bill a small salad already done.I cut up some tomato slices,cucumber slices and pepper slices for me.
I even exercised for 15 minutes
Oh The two rats,mice have gone to rat heaven thanks to Bill and a good mouse trap.

    I love your report of all veggies in the oven. We are also going to commit to 1- 2 meatless nights a week starting now.

Rat and mice heaven sounds like a lovely place. Perhaps moles and cicadas would be welcome there as well.

I'm only seeing 2 eagles today. I saw three this morning and the one practicing his fly jumping. Have they begun flying? I don't want to miss the first attempts. I'm relieved to know they keep coming back to the nest for a while once they leave though.

I have a utensil very similar to yours that belonged to my grandmother and I remember her using it to cut up potatoes and sweet potatoes and even squash. She was always big on veggies and roasted them often.

Happy Memorial Day

Hope you are all enjoying the day. Poor Bill wanted to do something nice so he grilled steaks for lunch. Somehow he used too much seasoning and burnt mine on bottom.Usually his steaks are to die for. I ate it anyway. He eats my bad meals.
I got the rest of groceries and meats taken care of this morning. Now I will work on my meds. Bill puts the card table up and that makes it much better.
I am so far behind in sparking. Tried a few times today and computer was slow.Did scan and defrag and rebooted and it is a little better.
Well it is a quiet day. Bill did help me repott the flowers we got so that is all done.

    Sorry about the burned steak. I got four rib-eyes, two porterhouse, and three sirloins for the BW when she complained. We shared one 14 ounce steak and it was both good and enough, so the rest went into freezer bags and are in storage. One steak lasts a long time for us, but Sweetbay was having a sale.

    Sorry about the way your steaks turned out...you made me laugh when you said that Bill eats your bad meals. I keep my flour in big ziplocks...I also keep my powdered sugar in them, too. I once made chicken fried steak with powdered sugar. Instead of throwing them out..I served them without saying anything. He took a big bite and said, "Hummm, this is different but good!" He ate two pieces before I started to laugh and had to tell him. He laughed for days!! Jon cooked ours to perfection which was luck. We didn't know how and googled temp' and times. He marinated his, I just had salt and pepper. We grilled portobellos and pineapple slices and included baked potatoes. I came back with a maintain and I'm happy. I stayed food sober...36 days!

    so sorry about the steaks it would have been just right for me. oh i thought when Bill got the card table up i thought you both were going to play a game. glad you got your plnts done. well we finally got our nice weather it,s very hot and suppose to hotter tomorrow. i got another tomato plant from canadian tire it is a pink lady tomato plant.it,s about 5 inches tall.so i,ll plant it tomorrow.i also got some fertizer in a box for veggies and flowers.fertizer just put it on top off ground and water it.hope it works better than liquid one or sheep s--t.time will tell.have a great day tomorrow. hugs emoticon emoticon emoticon emoticon

    Happy Memorial Day to you sweet friend! We went to the movie "Hangover II" it was pretty gross and I'm no prude by far...also there was this LOUD mouth woman, her husband and kid that were laughing SOOO loud I just wanted to SMASH her up aside the head with a ball bat! I mean it's one thing to laugh...but when you laugh/scream and NEVER shut up...it's a BAD deal!

At this rate...I'm getting more and more prone to just wait for the movies to come out on NetFlix rent and enjoy it in the privacy of our own comfy home! After all, DH is the popcorn king...he makes the BEST popcorn the old fashioned firefighter way from scratch!

And....it might just save me from getting arrested...this no class pig was sitting only 2 seats away from me with her loud mouth husband beside me...honestly...I just wanted SO much to stand up and scream at them...I can see where people can go ballastic in a New York minute...and usually I'm a pretty peaceful person...DISGUSTING..they ruined the whole movie for us! emoticon

Why do people tolerate such piggy manners from others..we shouldn't!

Hot Sunny Day

It is so hot outside. Sun is blasting and air is heavy.I can't take much of it.
I am feeling better today.Told Bill he was getting me out of house to much. We just got back from grocery store.have part of it put up but veggies and meats have to be prepped or wrapped. Did get everything in fridge even tho some had to go in overflo fridge til I get it ready for freezer. Once I get this written I am going to go take a nap.
I did have a loss which I am happy about.I keep yo yoing but each time I get a little lower. Fluid is always a problem. If I could overcome that need to eat at night I would do great.
Turns out the white flower that I thought wasn't a coneflower is a coneflower.I never had white ones and it is in same pot with a pink one.

Ok I told you that you would get tired of my flower/butterfly pics.
Ok It is nap time for me. Hope you are all enjoying your long weekend.

    i never get tired of your pictures of flowers and butterflies. interesting with the white and pink coneflower. i like the red ones too.i put the tomato plants in big pots after i went and got some.i,m tired myself.take care and have a super day tomorrow. back to work tomorrow.up to hospital with dad tomorrow for cat scan that will be for a bit and than my other half of laundry when come back.dr. wants to know why he his iron is down and losing weight. but the dr. told him to lose weight so he did now he wants a cat scan.drs. drs.!he goes back to his dr. thursday to get results if he wants them if not bad!so keep our fingers crossed it,s ok. emoticon emoticon

Today we attended our Grand-daughter's 4th Birthday Party. It was a fun day even though we had to head inside during a brief thunderstorm.

    Hi Ms. Eleni,
Very beautiful flowers and butterflies. I have some flowers planted out front I hope make it. It's been pretty hot here too. We went to my brother Mike's house today since he had a cookout. It was fun seeing everyone and we had a nice time. My husband won't bring portable oxygen tank with him when he goes out so he needed to get back to home oxygen. I'm hoping maybe he'll adjust to taking it with him some day. Take care and talk to you soon,

Grand Daughter Brianna's Graduation Pics

I didn't get to blog yesterday during the day and when we got home from graduation i was wiped out. Amazing how tired you can get not doing anything.
The graduation was nice. I had promised to not say anything nasty to her boyfriend and that was no problem as I didn't speak to him. Poor Brianna's car broke down on her in the afternoon.Hopefully it isn't a big fix.
I was very disappointed in my good camera.It takes awesome pics of the stuff i post but it did not do good there.I was afraid of that so I took my back up point and shoot. As you will see we were all very proud of our girl.

They spelled her name wrong here


Now for the awful one. I wasn't going to post this but I hate it so bad I had too. But the important thing is that Brianna and her Mom my daughter Angel were not one bit embarrassed by how I looked. i was but they could care less.

Ok I am not feeling too good .Just did too much the last couple of days. I have the extra rotisserie chicken I froze last week heating up in oven.Thew a couple of sweet potatoes in there. Hope you are all enjoying your weekend.

    How proud you and Grandpa must be--it's easy to see in the photos! She's a beautiful young lady and I know how that Grandma Pride is!!

You look great, but I do understand your feelings, as I'm the same way. I HATE to have my picture taken, but will do it for the Grands.

Hope it didn't take too long to get rested up--I'm that way, too. A little activity can put you down for a few days. But I know it was well worth it!

    Awhhhh what a beauty Brianna is...and her mom is so pretty too! I'm SO proud of her for graduating...it's a BIG feat to accomplish for our kids today. In Josh's class about 15 students dropped out before they ever got their certificate...how sad to invest all of those years and then poop out the last semester before you grab the brass ring.

That's how hard it is for these kids today to focus and keep themselves motivated and away from trouble to complete the educational system. I'm sad to say most of Josh's teachers were just marking time...not really into motivating their kids to strive for higher things. But then their were a few exceptional ones that he absolutely adored and they were the one's that kept him going!

I think you are beautiful...of course you know that already. The dress was a gorgeous color on you and the style was VERY becoming!

I just want you to be healthy and I know you will be as long as you eat real food. The veggie soup is such a great way to stave off hunger and your exercises are so commendable! We love you girl...congrats to sweet Brianna, she's just a little cupcake! emoticon emoticon

I'm having a great time with my son and family. We had a cook-out last night and Jon and I are about ready to grill steaks for just us. The rest of the crew went to my DIL' s sister for a day of water fun. We're just having some mommy/son time...and it's QUIET! (we're babysitting the two dogs and cat)
