Off to Lutsen MN

Heading to Lutsen, Minnesota tomorrow up by the north shore (of Lake Superior, that is). We'll be spending time with family but mostly cross country skiing out in the woods while the bears are sleeping! I can't wait.


Time to Get Serious

Well the holidays are just about over and my mind is already turning toward March which is the beginning of cycling season for me. I do cross-training during the cold months (xc skiing and indoor training) and then get more cycling specific in Feb really but more seriously in March.

I have big plans for this year:
1. I plan to do a double-century (200 miles in one day) on the last Saturday of June at an average speed of 17.0 or more.
2. I plan to shatter my personal speed and average-speed records.
3. I plan to complete my annual 300 mile trek across Minnesota at an average speed of 19-20 mph, and to add an extra 100 miles to the ride while I'm at it.

These things are easier to write than to accomplish. I will have to lose another 20 lbs and I'll have to substantially increase my strength and endurance. I have a plan that's a bit too detailed to share here, but the bottom line of it is that I'm going to take it one day at a time and do the right thing each day. Making small daily progress will, I hope lead to bigger event-oriented progress.


Tons of Snow = Great Skiing!

Well, the latest report this morning is that we got about 10-12" of snow over the last couple of days and it's still coming down at a pretty good clip. This excites me very much because I love cross-country skiing and there hasn't been enough snow in the backwoods to ski much. Now, there'll be plenty of snow all winter long and I'm HAPPY!

Taco Bell Fresco Menu

Last night on our weekly date, my daughter asked if we could go to Taco Bell and I reluctantly said yes, figuring that I could just piecemeal something decent together. I was pleasantly surprised, however, to find that they have a new "fresco" menu that's more health friendly. Not that I would go there on a regular basis, but it's just nice to know that "junk food" restaurants are getting the message and providing healthier alternatives.

    I went Christmas shopping today and stopped by Taco Bell. The fresco menu was great--only 160 calories! I had the combo--2 frescoes and diet coke.

    I love Taco Bell in terms of healthy fast food. It's definitely possible to find something healthy and filling. Even if you want a taco, you can get one with plenty of salsa, tomatos and lettuce and minus the cheese and sour cream and have a super healthy meal.

  Yeah, I wasn't a fan of Taco Bell before but their new Fresco menu is tasty without being that unhealthy.

Even though they are lower fat they do still have a lot of calories in a serving so you still have to exercise portion control.

Something I discovered traveling is that even if you don't see a Fresco menu they probably have it; just ask.

    Taco Bell really isn't that bad. Even some of their regular menu items aren't horrible for you as long as you steer away from the things with TONS of cheese or those thicker Gordita shells. I like that they have all their nutritional info online and their little tool even lets you see what the nutritional info will be if you add/subtract toppings.

    I really get annoyed now at places that don't have alternatives since I'm eating more healthly. Honestly, Taco Bell is one of the better places to eat 'fast food' wise. Even taco aren't that bad if they aren't piled with condiments. I always look up the nutritional information and save it for future referece!

There is a restaurant down here (Florida) called Urban Flats- and they have the ambience of a 'healthier' restaurant.. yet nutritional information can be found NO WHERE! This irks me, and I don't go there anymore :) I also wrote them an e-mail!

Friendly Weight Loss Challenge

Every year my wife and I ride our bikes in The Ride Across Minnesota, or TRAM for short. It's a 5-day, 300-mile ride that raises money for MS research (my wife has MS). Well, our Team Captain recently asked if I would join in a weight loss challenge with him. It's very simple: he's gunning for 170, I'm gunning for 190-195. If he reaches his goal and I do not by the TRAM (July 2010), I have to buy him coffee each day of the ride, and vice versa. If we both reach our goals we'll go dutch and celebrate the victory together!

It's simple, and perhaps silly, but it's given me the motivation I need to find someway to break through this plateau I've been on for the longest time. Hopefully it will work!
