Thankful to Jesus Christ

A little over 23 years ago now I came to know Jesus Christ. I believed that I was a sinner, that God was angry about my sin, that I could not pay the price for what I had done, but that Jesus had paid that price for me and if I would only believe in him and submit my life to him I would have eternal life. "For God so loved the world that he sent his only begotten Son so that whosoever would believe in him would not perish but have everlasting life" (John 3:16).

I'm living proof that that is a real and true promise, and I'm so thankful to God for it.

And then three years after I came to know and follow Jesus, I met my wife to be, Kimberly, who loves him as much as I do. We dated for a year (long-distance), were engaged for a year (because of the distance), and were then married on Nov 29, 1991. This Sunday we celebrate our 18th anniversary and I'm so grateful to Jesus for her as well! We've been seeking and serving him together all these years and I don't know what I'd do without her.

There's so much more that I'm thankful for but I'll leave it at this for now. May the name of Jesus Christ be glorified this day!

  


Ah Yes, Another Home-Made Pizza

I'm off to make my second home-made pizza and I can't wait to munch it! The last one I made was so fresh and tasty that it ruined my abiblity/desire to enjoy store bought pizza!

Discovering Kale

I read an article on SP the other day that sung the praises of kale because it is the veggie with the highest percentage of antioxidants--by a long shot. So I gook the time to identify it at the store and incorporated it into a salad today. It was good and I will continue to eat it that way and I'll probably also mix it into smoothies as it would be essentially tasteless in that case and yet would deliver the goods!

So thanks to SP for introducing me to another wonderfully healthy food.

    Wow1 Great to know you can use it in a salad. I have been using it cooked in olive oil and as part of my veggie chicken soup(excellent) but I haven't used it in a salad yet thinking it might be too strong a flavor. Will give it a try! thanks, Pat

On a Five-Month Plateau but Feeling Great!

I don't know what it is. I've been on a plateau since June and I just can't get off of it. I've tried just about everything I can't think of to start losing again, except drastically reducing my cals (which I may try), but nothing has worked.

But you know what? It's really not that big of a deal to me. I know I do have more to lose, and I know I will go much faster on my bike if I do, but at the end of the day my passion is to love God more by caring for this body he's given me well. And that's happening. I'm eating a good variety of foods, I'm exercising 4-6 days per week, I'm sleeping well, serving others, and seeking God. So really, what's a little more weight loss compared to all of these things? It would be nice but it's not essential.

I do hope to break through this plateau at some point, if nothing else just to have conquered this barrier. But honestly, if I'm never able to do that I'm a happy camper!
