Having Company, What Should I Cook for Them?

I've really been enjoying cooking fresh foods lately. Tomorrow we have some friends coming over for dinner and so I told my wife I'd cook something up. But the question is, what shall I cook? Hmm... I think I'll spend some time on the recipe page and find something yummy!

Oh--Homemade Pizza!

Well, I ventured to make my first homemade pizza yesterday and it turned out awesome! Here's the vitals:

1. Pillsbury thin pizza crust
2. A mixture of tomato paste and diced tomatoes
3. Pepperoni
4. Sargento Mozzarella cheese with basil and something else!
5. Onions
6. Bell peppers

I had to pre-bake the dough for 5 minutes and then bake the pizza for another 10-12. It was easy and boy did it ever turn out tasty! It made enough for four servings of about 425 cals each. The only thing I'm going to look to change is the dough because more than half of those cals is contained there. If I can't find an alternative that's okay, though, as one serving is actually pretty filling.

  Try whole wheat crust it still has the calories, but is better for you and yummy!

    YUM!! Have you tried to substitute turkey pepperoni? It's just as good and so many fewer calories!!!! :) Love it!

    I love pizza! Publix has a great pizza crust that is almost as good as home made and a whole lot easier

Cooking my first Quiche

I don't know if it's technically a quiche or just an egg-bake, but I got an idea off SP recipes and then added to it--quite a lot. The idea was eggs, spinach, and cheese to which I added broccoli, ham, onions, bell peppers, and small tomatoes. It's baking now (30 minutes at 350) and I can't wait to see how it tastes!

And the best part is that this one egg-bake is enough for six meals!

Today is a new Day!

I've been struggling lately with my eating. I haven't completely fallen off the wagon but I've been slipping. But today is a new day and today I choose to eat well, to give my body the things it so needs to function at full capacity for the glory of God and the good of others and the joy of my own soul. I don't know why I fall into these traps again and again but one thing SP has taught me is to look forward and do the right thing today. One step back, two steps forward.
